APPLE CLAFOUTI image

Yield 6-8 servings

3 eggs
1 cup milk or heavy cream
10 tbsp. butter, divided
1 tsp. vanilla extract
2/3 cup flour
1 cup plus 2 tsp. sugar, divided
1/2 tsp. salt
4 tart apples, peeled, cored, and sliced
2-3 tbsp. brandy

Steps:

  • Preheat oven to 400 F. Melt 6 tablespoons butter. Put eggs, milk or cream, melted butter, vanilla, flour, 1/2 cup sugar, and salt in a food processor until smooth. Set aside. Generously butter a 10-inch pie plate, then set in oven to heat. Melt remaining 4 tablespoons butter in a large skillet over medium-high heat. Add apples 1/2 cup sugar, and brandy; cook until apples are glazed and heated through about 5 minutes. Remove pie plate from oven and immediately pour in half the batter. Arrange warm apple slices over batter, reserving juices. Pour remaining batter over apples. Sprinkle remaining 2 teaspoons sugar and a little ground cinnamon over batter and bake until golden and set in the middle 25-30 minutes. Drizzle with warmed reserved apple juices.
