CREAMY SALMON AND SNOW PEA PASTA SALAD
Love the classic combo of salmon, lemon and peppery arugula. Take to work or a picnic. You could use flakes of hot-smoked salmon or trout instead or add a sprinkling of dill.

Steps:
- Boil the pasta adding the snow peas to the water two mins before end of cooking time. Cool under running water then drain.
- Steam salmon for 7 minutes or microwave on high for 2-3 minutes until the flesh flakes easily.
- Peel away any skin, break into large flakes and allow to cool.
- Mix the lemon zest, juice and creme fraiche together and season to taste. If you need to, loosen the mixture with a little water to make it the consistency of heavy cream.
- Toss the pasta, peas and arugula into the dressing, flake in the salmon, then gently turn in the bowl a few times.
- Serve.

FETTUCCINE WITH SALMON AND SNAP PEAS

- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs, adding the snap peas during the last 2 minutes of cooking. Reserve 1 cup of the cooking water, then drain.
- Meanwhile, heat 2 tablespoons butter in a large skillet over medium-high heat. Add the shallot and cook, stirring, until slightly softened, about 2 minutes. Add the salmon; season with 3/4 teaspoon salt and a few grinds of pepper. Cook, turning once, until the salmon is just cooked through, about 3 minutes. Transfer to a plate.
- Add the pasta and snap peas to the skillet along with 1/2 cup of the reserved pasta cooking water, the remaining 2 tablespoons butter, the herbs and lemon juice. Cook, tossing and adding more of the reserved cooking water if necessary, until the pasta is coated, about 1 more minute. Season with salt and pepper. Top with the salmon.

STUFFED SNOW PEAS
These hors d'oeuvres are so elegant for bridal or baby showers. I always make them ahead. You can season the cream cheese with anything you like. I sometimes make them with plain cream cheese. They are time consuming- but worth it because the presentation is beautiful. Did I mention they taste great too? From the wonderful book 'Showers' by Beverly Clark.

- In salted, boiling water, blanch (boil rapidly in lots of water) snow peas for 30 seconds.
- Cool in cold water, drain, and set aside.
- Blend the rest of the ingredients until smooth.
- With a sharp pairing knife, split the snow peas along the curved side.
- Fill each snow pea with filling, using a small spatula or pastry bag with tip.
- I have used a ziplock bag with a hole cut in the corner.
- Can be made the day before, refrigerate, and serve chilled.
SALMON AND SNOW PEA STIR FRY
You wouldn't expect to find salmon in a stir-fry. But when you're tired of the same old chicken or shrimp, try this high-protein, heart-healthy entree from Oxygen Magazine. The salmon really soaks up a nice orange flavor; pineapple or another juice might be tasty too!

- Cut salmon into 1 1/2 inch cubes and place in a resealable plastic bag.
- In a small bowl, combine soy sauce, juice, garlic and sesame oil; pour half the marinade into the plastic bag with salmon.
- Marinate the fish for 30 minutes in the fridge.
- Coat a nonstick frying pan or wok with nonstick spray.
- Remove salmon from bag; discard leftover marinade.
- Stir-fry salmon over medium-high heat, about five minutes. Turn salmon over gently so that all sides cook evenly. Be very careful with the salmon pieces so they stay intact - this was the hardest part for me; I didn't realize I'm quite the aggressive mad-woman stir-fryer!
- Remove salmon from wok and add sliced onion. Stir-fry onion until brown, about five minutes. Add snow peas and stir-fry until they turn bright green, about three minutes.
- Return salmon to pan and pour reserved marinade over fish and vegetables. Cook for 2-3 minutes or until sauce has thickened.
- Serve with 1/2 cup of brown rice for each plate, if desired.
SMOKED SALMON STUFFED PEA PODS
If snow peas aren't available sugar snap peas could also be used.

- 1. Split each pea pod down one seam, removing peas.
- 2. Thoroughly mix cream cheese, salmon, garlic salt and pepper.
- 3. Place cream cheese mixture into a pastry bag fitted with a star tip. Alternatively a zip-lock baggie with one corner snipped off can be used.
- 4. Pipe cream cheese into each pea pod, replace a few peas on top of the cream cheese, dust with small amount of dill weed.
STEAMED SALMON WITH SNOW PEAS
Healthy and delicious. If you think you'll want more sauce, double the amounts of the first 4 ingredients. I use "lite" (lower sodium) soy sauce. In step 5, you may need to lift the steamer basket and replenish the water in the saucepan.

- Make sauce: Combine lime juice through scallion in a small bowl and whisk in oil with a tiny whisk or a fork. Set aside.
- Rub ginger and garlic on the salmon.
- Arrange salmon in a steamer basket coated with spray.
- Run 2 inches of water into a saucepan and bring to a boil. Place steamer basket in saucepan, cover and steam 8 minutes.
- Add snow peas to fish, cover again, and steam about 4-5 more minutes until peas are tender crisp.
- Lay out a bed of snow peas on each of 2 dinner plates, top with fish and drizzle sauce over the top.
