Trixie's Salmon Patties With Creamed Peas image

This was my mom's recipe (Trixie was my dad's nickname for her; sure to get a reaction!). It's quick, easy, inexpensive, and true comfort food. Be sure to serve with homemade mashed potatoes to get the full effect.

1 (15 ounce) can salmon, drained, bones & skin removed
4 ounces saltine crackers (one tube)
2 -3 eggs, depending on size
1 small onions, finely diced or 1 small onion, pureed
1 teaspoon poultry seasoning
fresh black pepper, to taste (don't add salt unless your crackers are unsalted)
2 tablespoons butter (for frying)
2 tablespoons vegetable oil (for frying)
1 (10 ounce) bag frozen peas, thawed, drained, but not cooked
3 tablespoons butter
1 1/2 cups milk or 1 1/2 cups half-and-half
3 tablespoons flour
salt and pepper

Steps:

  • In a medium mixing bowl combine all salmon patty ingredients.
  • Using your hands, mix well and shape into 8 patties.
  • In a large fry pan, melt butter and oil over medium heat until hot.
  • Add patties and saute 2 minutes per side, or until crisp and well browned.
  • Hold in a warm oven while preparing creamed peas.
  • In a medium sauce pan over medium heat, melt butter.
  • Add flour and cook, stirring constantly, for one minute.
  • Gradually add milk or half& half while whisking to prevent lumps.
  • Cook until the sauce bubbles and thickens.
  • Add the thawed, drained peas and stir until peas are hot.
  • Serve two patties per serving, topped with the creamed peas.

Salmon Patty ingredients:
1 can (14 oz.) sockeye salmon
2 Tbsp butter
1 medium onion, chopped
2/3 cup cracker crumbs, divided
2 eggs, beaten
1/4 cup chopped parsley
1 clove garlic, minced
1/4 tsp celery flakes
1/4 tsp dill
2/3 cups milk
1 tsp Dijon mustard
3 Tbsp shortening
Sauce with Peas:
1 Tbsp butter
1 Tbsp flour
1/4 tsp salt
1/8 tsp pepper
1/2 cup milk
1 tsp sugar
10 oz frozen peas

Steps:

  • Drain and flake salmon. Set aside. Melt butter, add onion and cook till tender.
  • In medium bowl mix all ingredients for salmon patties with butter and onions (except shortening and 1/2 cup of cracker crumbs). Mix well, form into patties and coat with remaining cracker crumbs. Melt shortening in fry pan and brown patties.
  • Sauce:
  • Mix all sauce ingredients except peas together and bring to a boil; cook until thick. Add peas and cook on low until peas are heated.

This is our go to recipe for quick, easy salmon patties. Hubby loves the cream peas also. Sometimes I will put a can of whole potatoes in there as well and just eat them on the side. If you think you don't like salmon, this is a good starting place for you using canned red salmon. I hope you like this as much as we do! Enjoy!

1 can(s) 15.5 oz red salmon, drained, flaked,skin & bones removed.
1/4 c onion, diced
3/4 c plain bread crumbs more/less if needed
2 eggs, beaten
1/4 tsp garlic powder
1 Tbsp lemon juice, fresh
1/4 tsp freshly ground black pepper & salt
2 Tbsp butter for frying pan
1/4 c each-flour and panko breadcrumbs for coating patties
for pea sauce:
2 Tbsp butter
2 Tbsp flour
1/4 tsp salt and pepper
1 c low or fat free half and half/or milk, your choice
1 large can lesueur very young small sweet peas,drained

Steps:

  • 1. It is best to make the creamed peas first; so that it's ready to pour over the salmon patties when done-the patties take very little time to fry.
  • 2. For creamed peas: Melt the butter in a small pan and stir in the flour and seasonings. Gradually stir in the half and half, using a whisk to prevent lumps. Heat, whisking until sauce begins to thicken. Add drained baby peas and gently stir with a spoon. Stir often as it continues to heat and thicken. Remove from heat when it is finished.
  • 3. To Prepare Salmon Patties: Break up the salmon in a shallow bowl and mix with remaining salmon ingredients. Sprinkle a piece of waxed paper generously with flour/panko mixture. Shape salmon into 4-6 patties and carefully dredge both sides with flour/panko.
  • 4. Preheat skillet until hot-but not hot enough to burn the butter when added-and add butter to pan. As soon as it is melted place salmon patties into the hot,melted butter. Fry until golden on bottom then carefully flip and continue to fry until brown on bottom.
  • 5. Remove from pan and plate; pour creamed pea sauce over patties. Enjoy your dinner! I usually start with a mixed green salad and fresh fruit for dessert.

1/2 cup Bisquick Heart Smart® mix
1 tablespoon Dijon mustard
1/4 teaspoon pepper
8 medium green onions, finely chopped (1/2 cup)
2 eggs, slightly beaten
1 can (14 3/4 oz) red salmon, skin and bone removed, drained and flaked
2 tablespoons margarine or butter
4 whole wheat burger buns, split
Lettuce leaves
4 tablespoons dill dip or Ranch dip

Steps:

  • In medium bowl, mix all ingredients except margarine, buns, lettuce and dill dip. Shape mixture into 4 patties, using heaping 1/2 cupfuls for each patty.
  • In 10-inch nonstick skillet, melt margarine over medium heat. Cook patties in margarine over medium heat 10 to 12 minutes, turning once, until brown and cooked through.
  • Fill buns with lettuce, salmon patties and dill dip.

1 pkg sleeve about 4 oz saltine crackers crushed
2 medium eggs
1/2 c chopped green onion /green part to
1/4 tsp tones lemon pepper seasoning

1/2 stick butter
1/3 c flour

2 tablespoons butter
2 tablespoons all-purpose flour
1 1/4 cups milk
salt and pepper
14 3/4 ounces salmon, drained and picked free of bones and skin
1 cup canned peas
1 teaspoon lemon juice
1/4 teaspoon dried dill

Steps:

  • Melt butter in a large pan, add flour and cook over medium heat until light brown and pasty (1-2 minutes).
  • Slowly add milk and whisk until all flour bits are broken up. Continue to whisk while milk comes to a boil and thickens, and add salt and pepper to taste.
  • When cream sauce is slightly thickened, add salmon and peas and continue to cook until sauce is thickened up and the salmon and peas are heated through. Stir in lemon juice and dill.
  • Serve over hot white rice, toasted bread, a hot biscuit or puff pastry.

CREAMED SALMON ON TOAST

A quick and easy snack or lite dinner of creamed salmon and peas. The sauce may be made as thin or thick as you like.

3 tablespoons butter
3 tablespoons all-purpose flour
1 cup cold milk
1 (10 ounce) can canned green peas, drained, liquid reserved
1 (14.75 ounce) can salmon
salt and pepper to taste

Steps:

  • In a saucepan or skillet, melt butter over medium heat. Whisk in flour, stirring constantly, until a smooth paste is formed. Gradually add milk and reserved liquid from peas, stirring constantly, until a smooth thick gravy is formed.
  • Flake salmon into a bowl, breaking apart any large pieces. Stir salmon and peas into the sauce carefully with a wooden spoon to avoid mashing the peas. Cook until heated through. Adjust seasoning with salt and pepper.
  • Toast bread in toaster oven or broiler pan. Butter, if desired, and top with salmon mixture.
