SALMON CLUB SANDWICH

Yield Makes 4 servings

Number Of Ingredients 11

6 tablespoons mayonnaise
5 tablespoons minced fresh basil
1 teaspoon grated lemon peel
3 tablespoons olive oil
1 tablespoon fresh lemon juice
4 5- to 6-ounce skinless salmon fillets (each about 3/4 inch thick)
8 bacon slices
1 small red onion, sliced
8 1/2-inch-thick sourdough or country-style white bread slices (each about 5x3 inches)
8 tomato slices
8 lettuce leaves

Steps:

  • Mix mayonnaise, 2 tablespoons basil and lemon peel in small bowl to blend. (Can be made 1 day ahead. Cover and chill.)
  • Mix remaining 3 tablespoons basil, olive oil and lemon juice in large glass baking dish. Add salmon to oil mixture; turn to coat. Cover; chill 1 to 4 hours.
  • Cook bacon in heavy large skillet over medium-high heat until crisp. Using tongs, transfer bacon to paper towels to drain. Add onion to drippings in skillet. Sauté until onion is tender and beginning to brown, about 5 minutes.
  • Prepare barbecue (medium-high heat). Grill fish until just opaque in center, about 3 minutes per side. Grill bread just until golden, about 2 minutes per side. Spread mayonnaise mixture over 1 side of bread slices. Top each of 4 bread slices with 2 bacon slices, 2 tomato slices, 1/4 of onion, 1 salmon fillet and 2 lettuce leaves. Cover with remaining bread slices.

There is nothing ordinary about this sandwich. The salmon is lightly seasoned and cooked perfectly. A cool and tangy caper dill aioli is smeared onto a toasted bun. Then, tomato, lettuce, and bacon top off this amazingly delicious sandwich. With layers of fresh flavors, this is an impressive club sandwich that's easy to prepare.

2 8 oz. salmon filets
4 slice bacon, crispy
2 pretzel or ciabatta buns
1 c dill caper aioli
1 tomato, sliced thick
2 leaves romaine lettuce
1/2 small red onion, sliced thin
DILL CAPER AIOLI
3/4 c real mayonaise
1/4 c sour cream
1 Tbsp lemon juice
1 tsp fresh basil, minced
2 tsp fresh dill weed
2 Tbsp capers with brine

Steps:

  • 1. Season salmon with salt, pepper, onion powder and garlic powder.
  • 2. Melt 1 tablespoon butter in a skillet with 1 tablespoon of olive oil.
  • 3. Sauté salmon flesh side first about 4-5 min. Turn over and sauté skin side approx 3-4 min. Drain on paper towels.
  • 4. To make aioli, mix all ingredients together and season to taste with salt & pepper. Set aside. You can make this ahead and store in the fridge.
  • 5. To assemble: Toast buns and spread each side with aioli. Stack lettuce, tomato, onion, and bacon. Place a salmon filet on each stack. Top with remaining bun. Cut in half and enjoy.

16 slices grain bread
16 slices bacon, halved crosswise (turkey bacon is fine)
2 red onions, cut into small dice
2 medium tomatoes, cut into 1/4 dice
6 sprigs cilantro, roughly chopped
2 garlic cloves, minced
16 mint leaves
2 jalapeno peppers, cut into small dice or
1/2 green bell pepper, cut into small dice
4 avocados, cut into 1/2-inch cubes
4 limes, juice of, preferably limes not lemons
8 slices smoked salmon (thin slices)
2 slices smoked salmon (cut into 16 strips crosswise and rolled into rosettes, garnish)
salt, to taste
freshly ground coarse black pepper, to taste

Steps:

  • Preheat oven to 250°F.
  • Toast the bread slices and let cool.
  • Roast the bacon in oven until crisp.
  • Chop red onion, tomato, cilantro, garlic, mint leaves and jalapeno peppers (if using)or green bell peppers - finely chopped.
  • Put it all into a bowl.
  • Add the avocado and pour in lime juice.
  • Toss the avocado mixture and season well with salt and pepper.
  • Place 1 Tablespoon avocado mixture on each slice of smoked salmon.
  • Fold the smoked salmon into a square, so that the avocado is wrapped in the center.
  • Place the smoked salmon and bacon between two slices of bread.
  • Cut the sandwich diagonally.
  • Place a rosette on top of each half and place 2 pieces of bacon on top of the rosette.

1/4 cup mayonnaise
3 tablespoons bacon bits
2 teaspoons chopped fresh basil
1/4 cup diced seeded tomatoes
2 large tomatoes, slices
2 large lettuce leaves
3 slices whole wheat bread

Steps:

  • In bowl, combine Salmon with next 4 ingredients; blend well. Evenly spread salmon mixture on 2 slices of bread. Top each with a lettuce leaf and a slice of tomato. Stack on top of each other face up, then top with third slice of bread. Secure with toothpicks and cut into triangles. Makes one club sandwich.

4 4-6oz salmon pieces-marinated in lemon juice, shoyu,roasted garlic, S.P. and olive oil
8 strips crispy bacon
8-12 slices tomato
baby spinach t.t.
thinly sliced red onion t.t.
capers t.t.
veganaise
foccacia or soft rolls

Steps:

  • After marinating salmon for 5 minutes, grill until preferred doneness. Slice a 4" by 4" square of foccacia into three layers. Lightly toast. Between the bottom and middle layer spread bread with veganaise, add spinach, sliced red onion, tomato and bacon slices. Between middle and top layer, spread bread with veganaise, sprinkle with capers and add grilled salmon. Top with final layer of bread.

1 ½ tbsp light mayonnaise
zest ½ lemon , plus a squeeze of juice
3 slices wholemeal bread
½ avocado , sliced
2 radishes , thinly sliced
1 hot-smoked salmon fillet, flaked into large chunks
small handful rocket

Steps:

  • In a small bowl, mix together the mayonnaise, lemon zest and juice, and some seasoning. Toast the bread, then spread 2 slices with the lemon mayo. Top the first slice with the radishes and avocado, then top with the second slice, followed by the salmon and a bit of rocket. Top with the remaining slice of toast and secure with cocktail sticks, if you like. Halve the sandwich and serve with the remaining rocket on the side.
