4 (5 ounce) salmon fillets
5 tablespoons fresh lemon juice, divided
3/4 teaspoon lemon pepper
1 teaspoon parsley
1 teaspoon dried thyme
10 tablespoons butter, divided
1 shallot, minced
1 tablespoon white wine vinegar
5 tablespoons white wine, divided
1 cup half-and-half cream
salt
white pepper

Steps:

  • Place salmon in a shallow dish, and rub with 3 tablespoons lemon juice. Season the non-skin side with lemon pepper, parsley, thyme. Set aside.
  • In a sauce pan heat 2 tablespoons butter over medium heat, and saute shallot for 2 minutes until tender. Mix in remaining 2 Tbsp lemon juice, vinegar, and 1/4 cup wine. Simmer until reduced by at least 1/2. Stir in half & half. Season sauce with salt, and white pepper to taste. Cook and stir until thickened. Whisk in 4 Tbsp butter. Set aside and keep warm.
  • Heat remaining 4 Tbsp butter in a skillet over medium heat. Place salmon in the skillet herb side down, and cook 1 to 2 minutes, until seared. Remove salmon and set aside herb side up. Deglaze the skillet with remaining 1 tablespoon wine, then mix in the cream sauce. Return salmon to the skillet herb side up, and cook 8 minutes in the sauce, or until easily flaked with a fork.
  • Serve salmon on plate with sauce, paired with steamed asparagus spears and mashed red potatoes.

3 tablespoons dry bread crumbs
5 tablespoons grated Parmesan cheese, divided
1/2 cup chopped onion
1/2 cup chopped green pepper
3 tablespoons butter
4 packages (three 8 ounces, one 3 ounces) cream cheese, softened
1/2 cup heavy whipping cream
1/4 teaspoon pepper
4 eggs
5 ounces smoked salmon, diced
1/2 cup shredded Swiss cheese
Assorted crackers

Steps:

  • Grease the bottom and sides of a 9-in. springform pan. Combine the bread crumbs and 2 tablespoons Parmesan cheese; sprinkle into pan, coating bottom and sides. Set aside., In a skillet, saute onion and green pepper in butter until tender; set aside. In a bowl, beat cream cheese until fluffy. Beat in the cream, pepper and remaining Parmesan cheese. add eggs; beat on low speed just until combined. Fold in the onion mixture, salmon and Swiss cheese., Wrap a double thickness of heavy-duty foil around bottom of prepared pan. Pour salmon mixture into pan. Place in a large baking pan. Fill larger pan with hot water to a depth of 1-1/2 in. Bake at 325° for 35-40 minutes or until center is almost set. Cool on a wire rack for 1 hour. Refrigerate overnight., Remove foil and sides of pan. Serve with crackers.

3 tablespoons butter or margarine, melted
2 packages (8 oz each) cream cheese, softened
1/4 cup whipping (heavy) cream

Steps:

  • Heat oven to 375°F. In small bowl, stir crust ingredients until well mixed. Press evenly in bottom of 9-inch springform pan. Bake about 8 minutes or until golden brown.
  • Reduce oven temperature to 325°F. In large bowl, beat cream cheese with electric mixer on medium speed until smooth. Add whipping cream, eggs and salt; beat until smooth. Stir in Gouda cheese, green onions and salmon until well mixed. Spoon evenly over crust in pan.
  • Bake 45 to 50 minutes or until center is set. Run knife around edge of cheesecake to loosen. Cool completely at room temperature, about 1 hour. Cover and refrigerate at least 2 hours but no longer than 48 hours.
  • Remove side of pan. Place cheesecake on serving platter. Top with 2 tablespoons green onions and the caviar. Cut into wedges. Serve with crackers.

2 tablespoons grated Parmesan cheese
2 tablespoons fine dry bread crumbs
3 tablespoons butter
1 cup chopped onion
1 cup chopped green bell pepper
28 ounces cream cheese, softened
4 egg
⅓ cup heavy cream
½ pound smoked salmon, chopped
½ cup shredded Swiss cheese
3 tablespoons grated Parmesan cheese
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lightly butter an 8 inch springform pan. Mix 2 tablespoons Parmesan cheese with the breadcrumbs. Sprinkle this mixture into the pan; turn and tap pan to coat inside of pan. Wrap a large piece of foil underneath and up the sides of the pan. Be careful not to tear any holes in the foil.
  • In a medium skillet or frying pan, melt butter over medium heat. Add onions and green peppers and saute until tender, about 5 minutes. Remove from heat and let cool slightly.
  • In a large bowl, beat together cream cheese, eggs and cream until well blended. Fold in onions, peppers, salmon, Swiss cheese, 3 tablespoons Parmesan cheese, salt and pepper. Pour into prepared pan.
  • Place the wrapped springform pan inside a large roasting pan. Place the pans in the oven and pour enough boiling water into the outside pan to come 2 inches up the side of the springform pan.
  • Bake until firm to the touch, about 1 hour and 40 minutes. Carefully remove both pans from the oven and turn off the heat. Lift springform pan out of the water and return it to the oven. Let stand in the cooling oven for 1 hour. Transfer to a wire rack and let cool completely.

1-ounce horseradish juice

  • Preheat oven to 350 degrees F. In a standing electric mixer fitted with a paddle, cream the cream cheese, cornstarch, horseradish juice and salt. Add egg and heavy cream. spice essence

1 cup finely chopped onion
1/2 cup brunoise red pepper
1/2 cup brunoise yellow pepper
2 teaspoons minced garlic
2 lbs cream cheese, at room temperature
4 large eggs
1/2 cup heavy cream
2 teaspoons salt
1 teaspoon fresh black pepper
1 cup grated smoked gouda cheese
1 lb smoked salmon
1/4 cup finely chopped fresh parsley leaves
1 cup creme fraiche
1 lemon, juice of
2 tablespoons chopped chives
1/4 cup brunoise red onion
1/4 cup capers
1 hard-boiled egg, white and yolk separated and finely chopped
1 (7 ounce) can black caviar

Steps:

  • Preheat the oven to 350 degrees F.
  • In a 10-inch springform pan, combine the Parmesan cheese, bread crumbs and melted butter together.
  • Blend thoroughly and season the mixture with Essence.
  • Firmly press the mixture into the bottom of the pan.
  • In a saute pan, over medium heat, heat the olive oil.
  • When the olive is hot, add the onions and peppers.
  • Season the mixture with Essence.

2 (8 ounce) packages cream cheese, softened
4 eggs
1 cup monterey jack cheese, shredded
1/2 cup sour cream, low fat is fine
4 ounces smoked salmon, chopped
1/4 cup purple onion, minced
1/4 cup red bell pepper, finely chopped
1/4 cup capers, well-drained, finely chopped
1 teaspoon dried dill
1/4 teaspoon cayenne pepper, to taste

Steps:

  • Sprinkle the cracker crumbs in the bottom of a lightly greased 9-inch springform pan and set aside.
  • Beat the cream cheese with an electric mixer at medium speed until the mixture is fluffy.
  • Add the eggs, one at a time, beating well after each egg is added.
  • Add the remaining ingredients and mix until all the ingredients are well-combined.
  • Pour the mixture into the prepared springform pan, and bake at 325ºF for 45 to 50 minutes.

3 T. unsalted butter
1 cup chopped onion
28 ounces cream cheese, room temperature
4 large eggs
1/3 cup whipping cream
1/2 lb. Lox (Nova or belly, to your taste)
1/2 cup freshly grated Gruyere cheese
1 cup fresh dill
Salt & pepper, to taste
Crackers or bagel crisps
Green olives, pimento and additional cream cheese for garnish

Steps:

  •  Butter a 9" springform pan with 2 1/2" sides.  Mix 2 T. Parmesan with bread crumbs and coat pan with mixture.  Wrap foil around bottom and 2" up outside pan.  Melt butter in skillet. Add onion and sauté until tender. Cool.  Using an electric mixer beat cream cheese, eggs and cream in large bowl until blended.  Fold in onion mixture, salmon, Gruyere, dill and remaining Parmesan cheese. Season with salt and pepper.  Pour mixture into prepared pan.  Place pan into bain marie until water reaches 2" up sides of cheesecake pan.  Bake 300 degrees until firm, about 1 hour and 40 minutes.  Remove cheesecake from water bath.  Turn oven off. Return cheesecake to oven and let stand for 1 hour.  Remove cheesecake from springform pan and transfer it to cooling rack for at least 2 hours. You can decorate cheesecake with olives, sliced pimentos and additional cream cheese icing. Serve with crackers or bagel crisps.

1 1/2 c. finely crushed crispy rye or sesame crackers
6 T. butter, melted
2 T. grated Parmesan
8 oz. cream cheese, softened
2 eggs
1/2 of 8 oz. tub of cream cheese w/ salmon
1 T. white vinegar or lemon juice
8 oz. sour cream
4 oz. dry-smoked salmon, flaked
1 T. snipped fresh dill
Dill sprigs
Salmon caviar

Steps:

  • For crust, combine crushed crackers, melted butter and Parmesan in mixing bowl. Press evenly on bottom and 1" up sides of a 9" springform pan. For filling, beat softened cream cheese in large mixing bowl until smooth. Add eggs. Beat on low speed until combined. Add tub cream cheese and vinegar or lemon juice, beating on low speed until just combined. Stir in sour cream, smoked salmon and snipped dill. Pour into pan. Place pan on shallow baking pan. Bake at 350 °F for 30-35 minutes or until center appears nearly set when shaken. Remove from baking pan; cool 15 minutes. Loosen crust & remove springform pan. Cool & chill. Garnish with dill sprigs and caviar.

2 tbls. minced fresh shallots
1 clove minced fresh garlic
1 tea. dill
1/2 tea. salt
1/2 tea. white pepper
4 oz. smoked salmon
1 cup sour cream
2 eggs at room temperature

Steps:

  • Preheat oven to 325 degrees. Combine the Wheat Thins and butter. Press into the bottom of a 9-inch springform pan. Combine sour cream, salmon, salt, pepper, dill, shallots, garlic, and cream cheese. Mix on medium speed until smooth. (about 2 minutes). Add the eggs, one at a time. Mixing for about 30 seconds after each egg. Be careful not to over mix! Spoon cream cheese mixture over the Wheat Thin crust. Bake in a water bath for approximately 45-50 minutes, or until middle of cake is set. Turn oven off, crack oven door open, and let cake stand in oven until oven is cool. Refrigerate for at least one hour before serving. Serve with Wheat Thins crackers.

Years ago I found a recipe in Home and Garden for Salmon Cheesecake. It was a prize winner in their contest. But I changed alot of it and created a new recipe. Please when you make this only use Wild Red Sockey Salmon. The farmed is neither healthy and it has a horrible taste.

1 refrigerated pie crust
or you can use 8 sheets of phylo dough, lightly butted between each sheet
or you can make a crust from the following
2 c fresh soft italian bread crumbs
2 Tbsp melted, orangic raw butter
FILLING
3 exlarge organic eggs
15 oz whole milk organic ricotta cheese
6 oz organic baby swiss cheese
1/2 c organic raw cream
4 oz wild scottish smoked salmon. or russian loxs, finely flaked
1 1/4 tsp finely chopped fresh baby dill
1/8 tsp sea salt
1/8 tsp freshly ground white pepper
sour cream
sprigs of baby dill

Steps:

  • 1. Press your the pie dough into a pie pan. Or use the Phylo in a quiche pan. You can also do this in a muffin tin. If you are using Phylo dough, make sure you brush each layer with a LITTLE *unsalted* melted butter. To make the crust using the bread crumnbs. Buy a loaf of french bread. Gut the french bread, by taking the middle of the bread out. Place in processor and pulse till you have fine crumbs. Mix them with the butter and press heavly into pie pan evenly and up the sides. Place your choice of crusts in the refrig for 20 minutes. Or place in freezer while you prepare filling.
  • 2. Prepare filling. Beat eggs with a whisk or fork, but don't go crazy beating. Stir in the Ricotta Cheese and Swiss Cheese. Stir in the cream, salt, pepper and dill. Gently stir the salmon in.
  • 3. Pour into crust or Phylo. Bake 350* 35 to 40 minutes or until set. To test if it's done..stick a knife in the middle. If it comes out with liquid on it, it will need to bake a little longer.
  • 4. Serve warm with a dab of sour cream and a sprig of dill.
  • 5. Notes: I shop at the Italian store to get my Ricotta cheese only. I buy Baby Swiss at a European Deli. If I am really brave I will drive to the Farmers Market in Los Angeles to buy all the cheeses. But I am coward and don't do it often unless I am having an early breakfast on the weekend with friends. Reheats well in a microwave or on low setting oven. You can make this low fat by omitting the yolks. Use non-fat or low fat Ricotta cheese, non fat milk and low fat swiss cheese. Personally, I have only made it low fat once for my brother and I wasn't thrilled with it, but he was.
  • 6. I have made these as horerves, by using mini muffin pans and pie dough or Phyllo dough.

Posting for Zaar's salmon celebration. Just so happens I catered a wedding reception this past weekend that was heavy on seafood. This recipe is modified from an Emeril Lagasse recipe and it went over really well. Hope you like it.

1 cup grated parmigiano-reggiano cheese
1 cup fine dry breadcrumb
1/2 cup melted unsalted butter
1 medium red onion, finely chopped
1 medium red bell pepper, finely chopped
1 medium yellow bell pepper, finely chopped
2 tablespoons minced garlic (or to taste)
2 lbs cream cheese, at room temperature
4 large eggs
3 dashes Worcestershire sauce
Tabasco sauce, to taste (or favorite hot sauce)
2 teaspoons salt
1 teaspoon fresh black pepper
1 cup grated smoked gouda cheese (smoked a must- do not substitute)
1 1/2 cups salmon
sour cream, for garnishing

Steps:

  • Heat oven to 350°F.
  • Spray 10" springform pan with non-stick spray.
  • Cut strips of parchment or wax paper to line edges of pan (this will make removal of any cheesecake easier).
  • Mix Parmesan and bread crumbs with just enough butter to hold together when squeezed in your hand (you shouldn't need the whole 1/2 cup).
  • Press into the bottom of springform.
  • Pulse onion and peppers in food processor till finely chopped.
  • Spray frying pan with non-stick spray and sauté onion and peppers with garlic till tender, but not brown. Let cool.
  • Pulse cream cheese in food processor till smooth. Add eggs one at a time (stopping occasionally to scrape down sides of bowl) and process till smooth.
  • Add Worcestershire, Tabasco, and salt and pepper and process till throughly mixed.
  • Add cooked pepper, onion, garlic mixture and pulse until incorporated.
  • FOLD in cheese and salmon and pour over crust smoothing top with the back of a spoon.
  • Bake for 35-45 minutes (times vary depending on oven).
  • Allow cake to cool to room temp then refrigerate (best after a day or two in the frig). Top with sour cream and garnish with capers or chives if so desired.
  • Serve by itself or with slices of bread and crackers for spreading.

1/2 cup pumpernickel bread crumbs
4 packages (8 ounces each) cream cheese, softened
1/2 cup heavy whipping cream
1/8 teaspoon pepper
4 eggs, lightly beaten
8 ounces smoked salmon or lox, chopped
1/3 cup chopped green onions
Assorted crackers

Steps:

  • Grease the bottom and sides of a 9-in. springform pan. Sprinkle bread crumbs into pan, coating bottom and sides; set aside. In a large bowl, beat cream cheese until fluffy. Beat in cream and pepper until blended. Add eggs; beat on low speed just until combined. Fold in salmon and onions., Place pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan. Place pan in a large baking pan; add 1 in. of hot water to larger pan. , Bake at 325° for 45-55 minutes or until center is just set. Remove springform pan from water bath. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer (cheesecake may crack while cooling). , Refrigerate overnight. Remove sides of pan. Refrigerate leftovers Serve cheesecake with crackers. ,
