8 stalks asparagus, woody bottoms removed, chopped into 1-inch pieces
salt and black pepper
8 eggs
2 tablespoons nonfat milk (can also use soy milk)
1/4 cup feta cheese
4 ounces smoked salmon, chopped

Steps:

  • Heat the butter in a large nonstick skillet or saute pan over medium heat. When the butter begins to foam, add the asparagus and cook until just tender ("crisp-tender" in kitchen parlance). Season with salt and pepper.
  • Crack the eggs into a large bowl and whisk with the milk. Season with a few pinches of salt and pepper and add to the pan with the asparagus. Turn the heat down to low and use a wooden spoon to constantly stir and scrape the eggs until they begin to form soft curds.

This potato cake makes a delicious cushion for ribbons of smoked salmon and lightly scrambled eggs. Simpley finish with a sprinkling of capers, diced red onion, chives and dill. This dish is fit for a king's breakfast!

2 large idaho potatoes
salt & freshly ground black pepper
1/2 cup clarified butter
12 eggs
3 tablespoons creme fraiche
salt & freshly ground black pepper
12 slices smoked salmon
2 tablespoons creme fraiche
2 teaspoons capers
2 teaspoons finely diced red onions
2 teaspoons finely chopped chives
2 teaspoons chopped fresh dill

Steps:

  • To make the rosti potatoes, peel the potatoes and steam for 15 minutes, let cool.
  • Using the large hole of a box grater, shred the potatoes.
  • Season the shredded potatoes with salt and pepper and form them into 6 cakes.
  • In a large skillet; heat half the butter over medium heat.
  • Carefully place 3 of the cakes in the skillet and brown them on both sides for about 5 to 7 minutes per side, until golden brown.
  • Remove and drain on paper towels, and repeat with the remaining butter and cakes (the potatoes can be made up to 1 hour in advance, then rewarmed before serving).
  • To make the scrambled eggs, in the top of a double boiler on in a stainless steel bowl that will rest securely on top of a pot of simmering water, whisk together the eggs, creme fraiche, salt and pepper.
  • Place the mixture over a pot of simmering water and stir, folding the eggs with a rubber spatula until they are very lightly scrambled.
  • To serve and garnish; place one warm rosti potato in the center of each warmed plate.
  • Form two slices od salmon into circular ribbons on top of each rosti.
  • Place a spoonfull of scrambled eggs on top of the smoked salmon and garnish with a dollop of creme fraiche.
  • Sprinkle with capers, red onion, chives and dill and serve to 6 very lucky people.

6 ounces Pizza Dough, recipe follows
Chili Garlic Oil, recipe follows
4 large eggs
1/4 cup milk
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
1 tablespoon unsalted butter
1/4 cup grated mozzarella
1/4 cup grated Fontina
2 ounces smoked salmon, cut into very thin slices
Chopped chives, for garnish
2 tablespoons salmon roe, optional
1 package active dry or fresh yeast
1 teaspoon honey
1 cup warm water, 105 to 115 degrees F
3 cups all-purpose flour
1 teaspoon kosher salt
1 whole head garlic (about 2 1/2 ounces, cloves separated and peeled)
2 cups extra-virgin olive oil
1 tablespoon red pepper flakes

Steps:

  • Place a pizza stone on the middle rack of the oven and preheat oven to 500 degrees F.
  • On a lightly floured surface, stretch or roll out the dough to an 8-inch round. Place the dough on a pizza peel that has been dusted with flour or semolina (you can also place on a cookie sheet). Lightly brush the surface of the dough with the chili oil. Place on the pizza stone and bake until the bottom begins to turn golden brown, but the pizza is not cooked through, about 6 to 8 minutes. Remove from the oven and set aside.
  • In a medium bowl, whisk together the eggs, milk, salt, and pepper. Place a nonstick 10-inch skillet over medium-high heat. When the pan is hot add the olive oil and butter and cook until the butter is melted. Add the egg mixture and cook, stirring constantly, until the eggs are scrambled but still fairly wet, about 4 minutes. The eggs will cook further in the oven so it is important not to overcook them. Remove from the heat and remove from the pan to stop the cooking.
  • Spread the eggs on the Pizza Dough, leaving a 1/2-inch border around the edges. Scatter the mozzarella cheese and Fontina cheese evenly over the eggs. Return to the oven and cook just until the cheese melts and is bubbly, about 5 minutes.
  • Remove the pizza from the oven and transfer to a firm surface. Arrange the smoked salmon slices over the surface of the pizza, covering the whole thing. Garnish with the chopped chives and salmon eggs.
  • 1 tablespoon extra-virgin olive oil, plus additional for brushing
  • In a small bowl, dissolve the yeast and honey in 1/4 cup warm water.
  • In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).
  • Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).
  • Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 1 hour. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.
  • In a small saucepan, combine the garlic cloves and olive oil and bring to a simmer. Reduce the heat and simmer until the garlic begins to turn brown, 10 to 15 minutes. (Do not let the garlic get too brown or the oil will have a bitter taste.)
  • Remove from the heat and cool to room temperature. Add the red pepper flakes and infuse for at least 2 hours to allow the flavors to blend. Refrigerate in a covered container for up to 2 weeks.

Once the eggs begin to set, stirring slowly will create large, cloudlike curds. This process takes about 10 minutes. 2 cups liquid egg substitute, well-shaken
2 tablespoons fresh dill, finely chopped

1/3 cup smoked salmon, chopped

  • Preheat broiler. Slice the top off of each tomato. Hollow out each tomato, leaving a firm shell; reserve. (Discard the caps and pulp or reserve for another purpose).
  • Whisk the liquid eggs with the dill, onion, salt and pepper until well combined. Melt the margarine in a large, non-stick skillet and set over MEDIUM HEAT. Pour the egg mixture into the skillet. 3 tablespoons soft cream cheese with chives
4 jumbo eggs

2 tablespoons heavy cream
3 tablespoons chopped red onions

1/2 cup milk
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon white pepper
1 1/2 cups smoked salmon, pieces

Steps:

  • In a medium frying pan add oil and heat. Then add green pepper. Saute until slightly soft.
  • In mixing bowl, add eggs,milk,baking powder,salt, pepper. Mix well.
  • Add mixture to sauted green peppers, turn heat on medium heat to low,
  • Stir to turn over and break apart, add smoked salmon and gently mix.
  • Do not overcook, you want the scrambled eggs to be soft and fluffy, not hard. The amount of green pepper pieces and smoked salmon pieces can be adjusted.
  • Note: Sometimes I add a bay leaf to the oil while the oil is heating up. Then remove to use for another dish.

5 Large eggs
1 Cup heavy (double) cream or half-and-half
Fine sea salt
1 Tablespoon unsalted butter
2 oz (60 g) thinly sliced smoked salmon
1/2 ripe avocado, sliced
Thai sriracha or other hot-pepper sauce

Steps:

  • In a bowl, whisk together the eggs, cream, and 1/2 teaspoon salt until very smooth. place a large nonstick frying pan over high heat. Add the butter. When the butter has foamed and the foam begins to subside, tilt the pan to distribute the butter evenly. Pour all of the egg mixture into the pan and let the eggs cook undisturbed for 30 seconds. Stir gently with a wooden spoon, bringing the partially cooked edges in toward the center. Let cook undisturbed for 30 seconds longer, then stir again. Remove the an from the heat and let stand for 1 minute longer, then stir again gently. Divide the smoked salmon evenly between 2 individual plates, arranging it in an even layer. Spoon half of the scrambled eggs onto the center of each plate, and arrange the avocado slices alongside the eggs. Sprinkle the eggs with a few drops of hot sauce and serve at once.

Steps:

  • In a large bowl, beat eggs, cream, dill, and salt. Melt butter in a large skillet over medium heat. Add green onions; cook 8 minutes, until softened. Pour in egg mixture; cook 3-4 minutes, stirring occasionally, until almost set. Mix in salmon, cook 1 minute more or until eggs reach desired doneness. Transfer to warmed plates.

5 organic eggs
1/2 cup heavy cream
knob of butter
pinch of sea salt and cracked black pepper
200 grams smoked salmon
2 tbsp. chopped chives
1 avocado, smashed
1 bagel, halved and toasted

Steps:

  • The most important part of this process is the scrambled eggs. Lightly whisk the eggs, cream and a pinch of salt together until they are just combined. Heat a small non-stick pan over medium-high heat. Add the butter and let it begin to melt. Pour the egg mixture in and allow the eggs to start to set on the bottom of the pan without stirring. Turn the heat down to medium-low and gently fold the eggs into the centre of the pan. Fold the cooked eggs to the outside and the uncooked eggs to the bottom of the pan in the middle. Repeat until the eggs are soft and slightly soft and runny, then remove from heat and let them finish cooking off-heat. The entire process should take between a minute and two. Once finished, fold in the chopped chives. While the eggs are cooking or before you start to cook them, add some salt and pepper to the avocado and smash with the back of your fork until it smooth but with some clumps remaining. Toast your bagel and set up on the plate. Spread some smashed avocado on the bagel. Add the scrambled egg mixture over top and fold two smoked salmon slices over top. Serve immediately. Serves 2.

1/2 cup cream (125ml thin cream)
salt (to taste)
cracked black pepper (to taste)
40 g butter
2 tablespoons herbs (parsley, chives and dill leaves)
4 bagels (split)
100 g smoked salmon (flaked into pieces)

Steps:

  • Whisk eggs, cream and salt and pepper in a bowl.
  • Melt butter in a non-stick frying pan over medium high heat until foaming.
  • Add egg mixture, sprinkle with herbs and cook for 3 minutes.
  • Gently draw in edges with a fork to allow uncooked egg to run underneath and cook until eggs are just set.
  • Remove from pan and keep warm.
  • Meanwhile, place bagels in a toaster or oven grill (broil) and toast until golden brown.
  • Spoon eggs onto bagels and top with flaked salmon.
