LEMONY SALMON AND ASPARAGUS SALAD



Lemony Salmon and Asparagus Salad image

1 bunch thick asparagus, ends trimmed and tough outer skin peeled off
2 cups snow peas, thinly sliced
1 cup fresh mint leaves, roughly chopped, plus whole leaves, for serving
1/2 cup roasted pistachios, chopped
1/4 cup crumbled feta
1 lemon, zested and juiced
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
Four 6-ounce salmon fillets, skin off
1 tablespoon lemon pepper
Fried Eggs, recipe follows, for serving
Balsamic glaze, for drizzling
Oil, for frying
4 large eggs

Steps:

  • Using a sharp peeler, peel the asparagus into ribbons and add to a large bowl. Add the snow peas, mint, pistachios, feta, lemon juice and zest, 2 tablespoons of the olive oil and a sprinkle of salt and pepper and toss gently. Set aside.
  • Heat a large nonstick pan over a medium heat. Add the remaining 1 tablespoon olive oil. Season the salmon fillets on both sides with the lemon pepper. Cook the salmon until golden brown, about 3 minutes. Flip the salmon and cook to desired doneness, about another 2 to 4 minutes, depending on thickness of your fillets.
  • Serve family style, placing the salad on a platter with the salmon on top. Place the Fried Eggs over the salmon and garnish with balsamic glaze and mint leaves. Or serve individual portions on 4 plates.
  • Heat some oil in a nonstick skillet over medium heat. There should be just enough oil to cover the edges of the eggs when they are cracked into the skillet.
  • Once the oil is mildly hot, crack in the eggs one at a time. Cook until the eggs begin to turn white, then use a small spoon to carefully spoon the hot oil over only the whites of the eggs (avoiding the yolks). This will help the whites cook slowly so the tops will set but still look pretty. Important: Don't spoon any oil over the yolks yet! Only spoon oil over the whites for now to prevent the eggs from turning cloudy.
  • After a minute or two of cooking, once the whites are set and not jiggly or loose, carefully spoon the oil over the yolks. Continue spooning the oil over the eggs until they appear to be done to your liking.
  • Remove the eggs from the skillet with a slotted spatula, then drain them briefly on a paper towel before serving.

1/2 cup panko
1/2 cup loosely packed fresh flat-leaf parsley leaves and tender stems
1 sprig fresh tarragon leaves, plus 2 tablespoons coarsely chopped fresh tarragon
2 tablespoons olive oil
2 teaspoons brown sugar
2 teaspoons Dijon mustard
3 tablespoons fresh lemon juice, plus lemon wedges for serving
Four 6-ounce skinless center-cut salmon fillets (about 1 1/2 inches thick)
1 pound thin asparagus, trimmed and cut into 1 1/2-inch pieces
2 cups shelled English peas or thawed frozen peas (about 10 ounces)
2 tablespoons unsalted butter
4 radishes, thinly sliced (about 4 ounces) (see Cook's Note)

Steps:

  • Preheat the oven to 425 degrees F and line a baking sheet with aluminum foil.
  • Bring 8 cups of salted water to a boil in a covered large saute pan. Fill a large bowl with ice water and set a mesh strainer on top of the ice.
  • Pulse the panko, parsley, the leaves from 1 sprig fresh tarragon and 1/4 teaspoon each salt and pepper in a mini food processor until the herbs are coarsely chopped. Drizzle in 1 tablespoon of the oil and pulse until the mixture is combined. Transfer to a plate.
  • Combine the brown sugar, mustard, 1 tablespoon of the lemon juice and remaining 1 tablespoon oil in a small bowl. Brush the tops and sides of the salmon generously with the mustard mixture and sprinkle with salt and pepper. Press a salmon fillet, top-side down, into the panko mixture. Place, panko-side up, on the prepared baking sheet. Repeat with the remaining fillets and bake until the panko is toasted and the salmon is just cooked through, 8 to 10 minutes.
  • Meanwhile, put the asparagus and peas in the saute pan of boiling water and cook until almost crisp-tender, about 3 minutes. Transfer the vegetables to the prepared ice bath with a slotted spoon and let cool, about 1 minute.
  • Meanwhile, heat a second large saute pan over medium-high heat and add the butter, swirling, until melted. Drain the cooled vegetables and add to the pan. Season with salt and pepper. Cook, stirring occasionally, until tender, 3 to 5 minutes. Remove from the heat, add the radishes, the remaining 2 tablespoons lemon juice and 2 tablespoons tarragon. Toss to combine, taste and adjust the seasoning. Serve the salmon with the asparagus salad and a lemon wedge.

1 large salmon fillet (2 pounds), about 1-inch thick, cleaned of bones, skin and sinew (about 1 3/4 pounds cleaned)
1 tablespoon canola oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 cup water
1 1/2 pounds large asparagus spears (with tight heads), lower third peeled and the spears cut on the slant into 1-inch pieces
4 medium-size ripe tomatoes (about 1 3/4 pounds)
2 medium-size onions (about 6 ounces), peeled, sliced thin and separated into rings
1 tablespoon Worcestershire sauce
3 tablespoons red-wine vinegar
1/2 cup extra-virgin olive oil
3/4 teaspoon Tabasco sauce
1 teaspoon salt
4 to 6 sprigs fresh tarragon, chopped

Steps:

  • Sprinkle the salmon on both sides with the canola oil, salt and pepper. Set aside.
  • Light a grill with a very clean rack and heat it until very hot.
  • Bring 1 cup of water to a boil in a large skillet and add the asparagus in one layer. Cover, bring to a boil and boil gently for about 3 minutes, until most of the water has evaporated. Drain the asparagus and set it aside, uncovered, so it will cool without discoloring.
  • Cut the tomatoes crosswise into 1/4-inch slices. Divide the slices among six plates and, leaving space in the center and around the edge of each plate, arrange the tomatoes in a slightly overlapping circular pattern. Divide the onion rings among the plates and arrange them on top of the tomatoes.
  • In a bowl, mix together the dressing ingredients and dribble the dressing over the tomatoes and onions on the plates. (This can be done up to 1 hour ahead.)
  • When ready to serve, place the salmon on the grill and cook, covered (if your grill has a lid) for about 2 1/2 minutes on each side, or for about 3 minutes, uncovered, on each side. Transfer the salmon to a serving plate and allow it to rest for 5 minutes before carving. (While resting, it will continue to cook in its own residual heat. It should be somewhat rare in the center.)
  • With the asparagus pieces, create a border around the tomatoes and onions. Cut the salmon into 1/2-inch slices and arrange them in the center of the plates. Sprinkle with tarragon and serve immediately.

8 or 10 (5 ounces) salmon fillets, skinned
Home-made vinaigrette, mayonnaise or yogurt
1 lemon, zested

Fresh chervil or tarragon

Steps:

  • Scrub and steam or boil the potatoes until tender, using whatever potatoes you have available, but bearing in mind that the waxy fleshed variety such as fingerlings are particularly good in salads as they do not collapse. Cook the asparagus tips in lightly salted water. Steam, poach or grill the salmon.
  • Skin or peel the potatoes, if you wish, and dice or slice them. Mix them with the asparagus and then with the dressing. If using mayonnaise and the potatoes are too hot, this will cause the mayonnaise the split. Grate in the lemon zest, add seasoning and the herbs, and fold into the salad. Spoon the potato and asparagus onto the plate, with a fillet of salmon on top. Whole herbs or baby greens can be used to garnish it, as can edible flowers.

  • Red wine reduction: Put all ingredients in a wide shallow pan and bring to a simmer over medium-low heat. Slowly reduce until concentrated and thick.
  • Salad: Bring a small pot of salted water to a boil over medium heat. Add the asparagus, blanch for just 1 minute and then drain. Heat a large saute pan over medium heat and add olive oil. Stir in the shallots and cook until they begin to turn translucent. Add the asparagus and cook until heated through. Stir in the lemon zest and lemon juice and season with salt and pepper, to taste.
  • Salmon: Heat a large saute pan over medium-high heat and add the olive oil. Season the salmon fillets with salt and pepper, to taste, and sear until almost cooked through, about 7 minutes. Turn the fillets over and cook them for 2 minutes more.
  • Watercress puree: Add all the ingredients into a blender and puree until smooth. Taste and adjust seasoning.
  • Arrange the salmon on a serving platter and garnish with the wine reduction and watercress puree. Serve the salad alongside or in a separate bowl.

1 lb. small, round red-skinned potatoes,
each about 1 1/2 inches in diameter
3/4 lb. asparagus, tough ends trimmed
For the vinaigrette:
4 dry-packed sun-dried tomato halves
Boiling water as needed
1/4 cup extra-virgin olive oil
3 Tbs. fresh lemon juice
1 Tbs. finely chopped fresh flat-leaf parsley
1 Tbs. finely chopped fresh dill
1 tsp. grated orange zest
1/2 tsp. minced garlic
1/2 tsp. kosher salt
Freshly ground pepper, to taste
10 oz. mixed baby greens (about 8 cups
loosely packed)
3 green onions, white and light green portions,
thinly sliced

Steps:

  • Prepare a hot fire in a grill.Season the salmon with salt and pepper. Grilling method: Using tongs, place the salmon over the hottest part of the fire or directly over the heat elements and grill, turning once, until the salmon is opaque throughout when tested with a fork, about 4 minutes per side. Transfer the salmon to a plate and let cool to room temperature. Meanwhile, put the potatoes in a large saucepan and add water to cover. Bring to a boil over high heat, reduce the heat to medium-low, cover and simmer until the potatoes are tender when pierced with a knife, about 15 minutes. Drain and, when cool enough to handle, peel and cut into slices 1/2 inch thick. Set aside on a large plate to cool completely. Cut the spears diagonally into 1-inch lengths. Place in a steamer rack over boiling water, cover the steamer and cook until tender-crisp, about 3 minutes. Remove the rack from the pan and rinse the asparagus under running cold water until cool. Pat dry and arrange next to the potatoes on the plate. When the salmon is cool, cut it into 1-inch chunks and place the chunks alongside the potatoes and asparagus. To make the vinaigrette, put the sun-dried tomatoes in a heatproof bowl, add boiling water to cover and let stand for 5 minutes. Drain and cut into 1/4-inch dice. In a small bowl, whisk together the olive oil, lemon juice, sun-dried tomatoes, parsley, dill, orange zest, garlic, 2 Tbs. water, salt and a grind of pepper until blended. In a large bowl, toss the salad greens with 2 Tbs. of the vinaigrette. Spoon the remaining vinaigrette over the asparagus, potatoes and salmon. Using a large, flat spoon or spatula, gently coat the ingredients evenly with the dressing. Arrange the greens on a large platter. Top with the asparagus, potatoes and salmon, and sprinkle with the green onions. Serve at room temperature. Serves 4.

In a small bowl, whisk the lemon juice with the olive oil, shallot, tarragon and Dijon mustard and season with salt and pepper. 3. Season the salmon fillets with salt and pepper. Make four long cuts in each strip of lemon zest to make a fan. Place a lemon zest fan on each salmon fillet; place each fillet in a small, resealable freezer-safe plastic bag and seal, pressing out the air. Bring the water in the skillet to a simmer. Add the salmon in the bags and poach at a gentle simmer until just cooked through, about 10 minutes. 4. Meanwhile, in a large bowl, toss the lettuce pieces with half of the vinaigrette. 2 tablespoons extra-virgin olive oil
2 tablespoons soy sauce
2 tablespoons unseasoned rice vinegar
1 tablespoon honey
1 teaspoon finely grated peeled fresh ginger
Fine sea salt
5 1/2 ounces soba (Japanese-style noodles)
1 tablespoon vegetable oil
12 ounces wild salmon fillet, skinned
9 ounces thick asparagus spears, trimmed, cut on diagonal into 1-inch pieces
3 1/2 ounces baby spinach leaves (5 to 6 cups)
1 avocado, peeled, pitted, coarsely chopped
1 teaspoon sesame seeds

Steps:

  • Whisk first 5 ingredients in small bowl. Season dressing to taste with sea salt and freshly ground black pepper. Cook soba noodles in large saucepan of boiling salted water until tender but still firm to bite, stirring occasionally. Drain. Transfer to bowl of ice water to cool. Drain well; transfer to large bowl. Pour dressing over; toss to coat. Heat vegetable oil in heavy medium nonstick skillet over medium-high heat. Sprinkle salmon with sea salt and pepper. Cook until browned but still deep pink in center, about 3 minutes per side. Transfer salmon to plate; cool slightly. Wipe skillet clean. Add enough water to skillet to reach depth of 1 inch. Bring to boil. Sprinkle sea salt over and add asparagus. Simmer until crisp-tender, 3 to 4 minutes. Drain. Add spinach and asparagus to noodles; toss to incorporate evenly. Season to taste with sea salt and pepper. Divide noodle salad among plates. Break salmon into bite-size pieces. Tuck salmon and avocado into noodles on plates. Sprinkle sesame seeds on top

Salmon and Asparagus Salad image

This salad combines some of my favorite ingredients and flavors, Salmon, Asparagus and Arugula!

1 1/2 lb 4 salmon fillets
1 lb asparagus, fresh
8 c arugula or mixed baby greens
2 c yellow cherry tomatoes, whole or halved
2 Tbsp extra virgin olive oil
salt and pepper to taste
creamy lemon-shallot vinaigrette

Steps:

  • 1. 1. Brush salmon and toss asparagus with olive oil; sprinkle with salt and pepper.
  • 2. 2. In a skillet on top of the stove or on the grill, cook salmon over medium-high heat (400*F or 200*C) for 3 to 5 minutes on each side.
  • 3. 3. Grill asparagus, turning occasionally, 3 to 5 minutes or until tender. (Can steam in microwave for 10 minutes or until tender in water if prefer)
  • 4. 4. Divide arugula evenly among 4 plates and top with flaked salmon, asparagus, and tomatoes. Serve with vinaigrette lightly drizzled over top.

Salmon and Asparagus Salad image

Maple syrup and Dijon mustard are the secret to fabulously flavored salmon and asparagus salad.

1/3 cup maple-flavored syrup
2 tablespoons Dijon mustard
2 tablespoons olive or vegetable oil
1 salmon fillet, 1/2 inch thick (1 lb)
1 lb asparagus spears
4 cups baby salad greens
1 cup shredded carrots (about 1 1/2 medium)
2 hard-cooked eggs, cut into 8 wedges
Freshly ground black pepper, if desired

Steps:

  • Heat gas or charcoal grill.
  • In small bowl, mix all Maple-Dijon Dressing ingredients with wire whisk.
  • Cut salmon crosswise into 4 pieces. Brush salmon with 1 tablespoon of the dressing. In large bowl, toss asparagus and 1 tablespoon of the dressing. Place asparagus in grill basket (grill "wok").
  • When grill is heated, place asparagus and salmon, skin side down, on gas grill over medium heat or on charcoal grill over medium coals; cover grill. Cook asparagus 7 to 10 minutes and salmon 10 to 15 minutes, shaking grill basket or turning asparagus occasionally, until asparagus is crisp-tender and salmon flakes easily with fork.
  • Slide pancake turner between salmon and skin to remove each piece from skin. On 4 plates, divide salad greens, carrots and eggs. Top with salmon and asparagus. Sprinkle with pepper. Serve with remaining dressing.
