Romanian potato salad. Excellent with grilled meat or chicken cutlets. Pickled red peppers are more traditional but roasted are probably easier to find in the U.S.

6 large potatoes, peeled and sliced
1 onion, thinly sliced
3 -6 dill pickles, thinly sliced
1/2 cup pickled sweet red peppers, sliced
1/4 cup vegetable oil
1/4 cup white vinegar or 1/4 cup cider vinegar
2 teaspoons sugar
salt and black pepper
12 black olives

Steps:

  • Boil the potatoes in salted water for about 10 minutes, or until they are tender.
  • Drain and cool potatoes. Combine with the pickles, onions, and red peppers.
  • Combine oil, vinegar, sugar, salt, and pepper.
  • Pour this dressing over the potatoes and pickles. Mix gently.
  • Top with olives and let cool to room temperature.

This is a light, refreshing Middle Eastern salad dressing that has been served at family functions since I was a baby.

3 cloves garlic, peeled and sliced
⅛ teaspoon ground black pepper
salt to taste
2 ½ cups lemon juice
1 cup canola oil
1 large head romaine lettuce - rinsed, dried, and torn into bite-size pieces
1 pint cherry tomatoes, halved
1 red onion, sliced
4 ounces feta cheese, crumbled

Steps:

  • In a mortar and pestle, crush the garlic. Add the pepper and salt and continue mashing until mixture becomes a thick paste. Transfer to a jar along with the lemon juice and canola oil. Shake well.
  • In a large bowl, toss together the lettuce, tomatoes and onion. Just before serving, add the cheese and just enough dressing to coat. (There will be extra dressing, but it keeps well.) Toss well.

This simple potato salad has nothing to do with the Orient. It's easy to make, needs few ingredients and can be safely taken to picnics because there is no mayo or eggs in it. I have sometimes used Wishbone Italian dressing in place of the oil/vinegar dressing. Good that way, too. The recipe is in most Romanian cookbooks but don't know if it started out life as an ethnic Romanian recipe. Have a feeling there's a little French in there...from a stripped down Salad Nicoise maybe?

2 1/2 lbs redskinned potatoes
1 medium red onion, sliced
1 green pepper, seeded and sliced into rings
2 tablespoons oil
2 tablespoons wine vinegar
salt
fresh ground black pepper
black olives (to garnish)
grape tomatoes (to garnish)

Steps:

  • Cook potatoes in their skins till done.
  • Cool a little, then peel and slice in 1/8" slices and place in serving bowl.
  • Add onion slices and green pepper rings.
  • Season with salt and pepper.
  • Whisk oil and vinegar together and pour over potatoes. Mix gently.
  • Garnish with olives, tomatoes if desired.
  • Serve chilled or at room temperature.
  • Makes about 4 servings.
