HOMEMADE SALAMI



Homemade Salami image

This homemade salami is good for party trays. It can be served on platter with sliced cheese and crackers, or just eaten in a sandwich.

Number Of Ingredients 8

2 pounds ground beef
¼ teaspoon garlic powder
¼ teaspoon onion powder
½ teaspoon mustard seed
2 tablespoons sugar-based curing mixture (such as Morton® Tender Quick®)
1 tablespoon coarsely ground black pepper
1 teaspoon red pepper flakes
1 teaspoon liquid smoke flavoring

Steps:

  • In a large bowl, mix together the ground beef, garlic powder, onion powder, mustard seed, curing salt, black pepper and liquid smoke. Mix in the red pepper flakes if desired. Roll the mixture into a 2 inch diameter log, and wrap tightly in aluminum foil. Refrigerate for 24 hours.
  • Preheat the oven to 325 degrees F (165 degrees C). Make a few slits in the bottom of the roll to allow the fat to drain when cooking. Place roll onto a broiler pan, and fill the bottom part of the pan with about 1 inch of water to keep the salami moist.
  • Bake for 90 minutes in the preheated oven. Remove from pan and cool completely before unwrapping the salami. Slice and eat as lunch meat, or serve on a tray with crackers and cheese.

2 tablespoons dill pickle relish
4 flour tortillas (10 inches), room temperature

  • In a small bowl, combine the cream cheese, salami and pickle relish., Spread over tortillas. Roll up tightly; wrap in plastic. Refrigerate for 15 minutes. Unwrap and cut each tortilla into 1-in. slices.

1 1/4 pounds smoked kielbasa (Polish sausage)
Good olive oil
1/2 cup good mayonnaise, such as Hellmann's
2 tablespoons Dijon mustard
1 teaspoon whole-grain mustard
1 teaspoon prepared horseradish
Kosher salt and freshly ground black pepper

Steps:

  • Slice the kielbasa crosswise 1/2 inch thick diagonally. Heat 2 tablespoons olive oil in a medium (10 to 11-inch) sauté pan, add the kielbasa, and cook over medium-high heat for 5 to 6 minutes, turning occasionally, until the kielbasa is nicely browned on both sides.
  • Meanwhile, in a medium bowl, whisk together the mayonnaise, Dijon mustard, whole-grain mustard, horseradish, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Serve the kielbasa hot from the pan with small wooden skewers and a dish of the mustard sauce on the side for dipping.

1 loaf French bread
14 salami slices
14 Provolone or American cheese slices
Lettuce
Sliced tomato
Mayonnaise
Carrot strips
Broccoli florets
Radish
Red pepper

Steps:

  • Make a large salami and cheese sandwich with lettuce, tomato, and mayonnaise on the bread, reserving the bread heels for later use. Cut the sandwich into 2-inch pieces. Arrange these in a snake curve on a platter. For the head, halve one heel and open it to make the snake's mouth.
  • Wedge 2 carrot strip "fangs" into the mouth to hold it open. Cut a piece of red pepper into a tongue shape and set it between the fangs. Add broccoli florets for eyes and radish slices for eyebrows. Use the remaining heel at the tip for a tail.

This silly little recipe came from my husbands family. They would munch on these over late night cocktails. Don't judge 'em 'til you've tried 'em. Everyone says "ewww" when they first read the list of ingredients, even me! But, they are addictive.

peanut butter (we prefer chunky)
sweet gherkins or sour gherkins

Steps:

  • Spread peanut butter on each slice of salami.
  • Place a gerkin in the center of salami on top of peanut butter.
  • Fold salami to inclose gerkin.
  • Secure with toothpicks and place on serving plate.
  • Eat!

Steps:

  • Preheat the broiler.
  • Place ground pork sausage and spicy ground pork sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain sausage. Mix in processed cheese sauce.
