- Toss the tomatoes in a large bowl with 2 tablespoons olive oil, the vinegar and a large pinch each of salt and pepper; set aside to marinate.

- Cook the pasta according to the package directions.
- Meanwhile, cut the salami into strips. Slice the black olives and dice the sundried tomatoes and bell pepper. Set all these ingredients aside.
- In a large salad bowl, mix the olive oil and red wine vinegar. Whisk with a fork (or whisk) until they are completely blended and the dressing is a uniform colour throughout.
- Add the parmesan cheese, salt and pepper to the dressing and mix.
- When the pasta is cooked to your liking, remove it from the heat. Drain it and rinse it in cold water until the pasta is cold. Drain it again.
- Add the cooled pasta and the chopped ingredients to the dressing in the bowl. Stir well to mix the ingredients together.

- Preheat oven to 450 degrees F. Bring a large pot of salted water to a boil.
- Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of the tomatoes, the oregano and 1 cup of water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly and simmer rapidly, uncovered, until thick, 15 to 20 minutes. Stir in the ricotta and season with salt and pepper.
- While the sauce simmers, heat the remaining 3 tablespoons oil in a large non-stick skillet over medium high heat. - Add the tomato sauce, salami, half the Asiago and half of the Parmesan to the bowl and stir well to combine. - Bring some water for the pasta to a boil over medium heat and salt it generously. Add the pasta and cook for about 10 minutes or as the package directs.
- Warm a fairly wide, heavy-based saucepan over medium heat. Add the salami strips, not worrying if they clump together. Stir with a wooden spoon for 1 to 2 minutes.

- 1. Cut up asparagus, zucchini, salami, and garlic. Bring water up to a boil for the pasta.
- 2. Add olive oil to skillet, heat to medium high. Add garlic and red pepper flakes if using. Cook for 1 minute. Add asparagus,zucchini, carrots, and capers. Cook five minutes. Add salami and turn down to medium and cook for 10 minutes Stirring often.
- 3. Divide the cream. Mix 1/4 cup of cream with 1 T of corn starch. Set aside. Add the remaining 3/4 cups of cream to the salami mixture. Stir well. At this time add black pepper to taste. I like a lot of it.
- 4. Cook pasta until al dente. Drain and cover to keep warm.
- 5. Turn skillet up to high and the cream, cornstarch mixture and bring to a boil to thicken. add the pasta to the skillet. Toss to coat the pasta. Check the seasoning. If needed add salt.
- 6. Just before serving fold in the cheese. Garnish with chopped chives, parsley or extra capers. Enjoy!

- Bring 2 inches water in a deep skillet to a boil for broccoli rabe and 1 large pot of water to a boil for pasta. Salt the water liberally.
- Simmer the broccoli rabe in water 10 to 12 minutes, then drain. Return the skillet to medium heat with 1/4 cup extra-virgin olive oil. Add garlic and red pepper to the oil and gently cook a couple of minutes, add broccoli rabe and cook 5 minutes more.
- While the broccoli rabe cooks, drop the rigatoni into the boiling water and cook until al dente. Just before draining reserve 1 cup starchy liquid.
- Combine the ricotta, Parmesan, salami and black pepper, to taste, in a pasta bowl. Add the starchy liquid and stir. Add the broccoli rabe and pasta and toss 2 minutes to coat and combine.
