Here's a healthy and satisfying make-ahead meal that kids will love: salami and cream cheese sandwiches.

1 teaspoon grainy mustard
2 slices rye bread
2 ounces salami (about 6 slices), thinly sliced
1/2 small bunch arugula, trimmed and washed
1 tablespoon cream cheese

Steps:

  • Spread mustard on one slice of bread; top with salami and arugula. Spread cream cheese on the other slice of bread; close sandwich. Serve, or refrigerate, wrapped tightly in wax paper or plastic, up to overnight. Cut in half.

Whipped Cream Cheese
Mustard
Leafy Green Lettuce
Salami
Avocado

Steps:

  • Spread a generous amount of cream cheese on each side of your bread. On one side spread mustard. Layer salami, lettuce, avocado & tomato on sandwich and fold over bread to close sandwich. Slice in half and devour!

2 slices rye bread
4 -6 slices kosher salami, thinly sliced
2 slices American cheese (cheddar may also be used)
1 teaspoon butter

Steps:

  • Fry salami until fat has rendered (I like mine a little burnt around the edges). Note: it's a good idea to make a cut in the salami slices so that they'll lay flatter after they're cooked.
  • Drain salami on paper towels.
  • Spread butter on one side of each slice of bread.
  • Place one slice of cheese on unbuttered side of bread.
  • Top with fried salami slices.
  • Top salami with remaining slice of cheese.
  • Place unbutter side of remaining slice of bread on top of the cheese.
  • Heat frying pan to low/medium heat.
  • Place sandwich in pan and cook until golden brown.
  • Flip sandwich and repeat with the other side.

Couldn't really taste the baby spinach but I still like knowing its in there. I paired it with a Greek pasta salad and for desert, Peach Dumplings with Vanilla Greek...

4 slices jewish rye bread with caraway seeds
butter
8 slices (hard salami), four slices each sandwich
4 slices provolone cheese, two on each sandwich
baby spinach, enough to cover each sandwich

Steps:

  • 1. Butter one side of the 4 pieces of bread. I put them on a paper plate as the buttered side will be laying down on the plate to fill it.
  • 2. On two of the slices, layer the two slices of cheese on each. Then the 4 slices of the hard salami on each, then the baby spinach to cover - use as much as you like of the spinach leaves. Cover each slice with the other slice of bread, buttered side out.
  • 3. Put a frying pan on medium-high heat and grill until golden brown on each side. Be careful as it is really hot right off the grill. Enjoy!!

A recipe inspired by (copied from) a Sue Grafton book. I really enjoyed this simple easy to make sandwich and hope you will too. Lends its self to many modifications.

3 slices monterey jack pepper cheese
4 slices salami
1 egg
1 kaiser roll (can use hamburger bun)
butter

Steps:

  • Butter the kaiser roll and toast it face down on a hot frying pan. Remove to plate.
  • Place salami on bottom of roll and top with cheese.
  • Place prepared bottom in toaster oven. Heat until cheese is well melted.
  • While cheese is melting, fry egg, sunny side up (then flip and fry till not runny if you are worried about it - but runny is better).
  • Remove roll from toaster when cheese is melted and top with egg.
  • Apply mustard, mayo, jalapeno peppers, whatever, (or nothing) to the top of the bun and place on the egg. Mash it down and enjoy.

This recipe comes from a good friend, and I made it yesterday about 1 hour after I had seen this, and it is delicious! Easy to make, and the bonus, no soggy bread like from a mayo based spread.

250 g cream cheese, room temp, (8 oz)
1/4 c spring onion, finely chopped
1/4 c fresh dill, finely chopped
1 clove garlic, pressed
8 slice sandwich bread
280 g salami, genoa or haus, (10 oz)
8 large lettuce leaves or as desired

Steps:

  • 1. For the salami, I used Haus (German style), produced here in Thailand, which is beef and pork. Imported Genoa salami, one would need to take out a small loan to get that. This Haus salami is excellent. I used one pack, 70 grams (2 1/2 oz) for each sandwich.
  • 2. Add the cream cheese, spring onion, dill, and garlic to a mixing bowl.
  • 3. Mash together with a fork to completely mix.
  • 4. To make a sandwich, spread some cream cheese mix onto two slices of bread, top one slice of bread with the lettuce leaves.
  • 5. Top the lettuce with the salami slices from the whole 70 gram package or 2 1/2 ounces if the salami you are using is larger diameter.
  • 6. Top the sandwich with the other slice of bread. Slice in half, and enjoy. Repeat for remaining sandwiches. The cream cheese mix will keep refrigerated for 3 to 5 days.
