Janet Hommes, of Surprise, Arizona uses a packaged coleslaw mix for this easy eggroll, so it's a breeze to put together. Serve it with your favorite brand of sweet 'n' sour sauce to suit your family's taste.

Number Of Ingredients 10

1/2 pound bulk pork sausage
1/4 cup chopped green pepper
2 tablespoons plus 1-1/2 teaspoons chopped onion
1/2 teaspoon minced garlic
3-3/4 cups coleslaw mix
1/4 teaspoon pepper
1/8 teaspoon salt
16 egg roll wrappers
Oil for frying
Sweet-and-sour sauce

Steps:

  • In a large skillet, cook the sausage, green pepper and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. In a large bowl, combine the coleslaw, pepper and salt; stir in sausage mixture. , Place 1/4 cupful of sausage mixture in the center of one egg roll wrapper. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Fold bottom corner over filling. Fold sides toward center over filling. Moisten remaining corner with water; roll up tightly to seal. Repeat, In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry egg rolls, a few at a time, for 2-3 minutes on each side or until golden brown. Drain on paper towels. Serve with sweet-and-sour sauce.

1 tablespoon rice vinegar
1 tablespoon soy sauce
1 ½ teaspoons minced ginger
1 teaspoon agave syrup
1 tablespoon olive oil
1 tablespoon sesame oil
1 pound ground turkey
½ teaspoon salt
½ tablespoon ground black pepper
1 (8 ounce) package coleslaw mix
½ red bell pepper, diced
2 green onions, chopped, or more to taste
2 cloves garlic, minced
1 tablespoon sesame seeds

Steps:

  • Mix chipotle hot sauce, rice vinegar, soy sauce, ginger, and agave syrup together in a small bowl to make sauce.
  • Heat olive oil and sesame oil in a wok or large skillet over medium heat. Add ground turkey; cook, stirring to break up clumps, until juices run clear, about 6 minutes. Season with salt and pepper. Transfer to a bowl, reserving juices in the wok.
  • Combine coleslaw mix, red bell pepper, green onions, and garlic in the wok; cook and stir over medium heat until slaw is slightly wilted, 1 to 2 minutes. Add sauce; mix to combine, about 1 minute. Return turkey to the wok and stir until heated through, 2 to 3 minutes.

1 bottle (16 ounces) reduced-fat poppy seed salad dressing, divided
2 pounds boneless skinless chicken breasts
1 can (20 ounces) unsweetened pineapple tidbits, drained
1 package (14 ounces) coleslaw mix
1 medium sweet red pepper, finely chopped
8 whole wheat tortillas (8 inches)
1/2 cup sliced almonds, toasted

Steps:

  • Place 1 cup dressing in a large resealable plastic bag. Add the chicken; seal bag and turn to coat. Refrigerate for 1 hour., Drain and discard marinade. 1 tablespoon white wine vinegar
1/4 teaspoon sugar
1/4 cup mayonnaise

2 tablespoons horseradish, drained

1/4 pound sliced dill-flavored havarti cheese
1/2 pound deli-sliced roast beef
4 whole-wheat wraps
