1 (14 1/2 ounce) can English peas, drained
1 can whole kernel white corn, drained
1 can whole kernel corn, drained
1 (14 1/2 ounce) can French style green beans, drained
1 cup chopped onion
1 small chopped bell pepper
1 1/2 cups vinegar
2 tablespoons Wesson Oil
1 cup sugar

Steps:

  • Mix all the vegetables and set aside. In a saucepan, mix vinegar, oil and sugar; bring to boil. Coll and then pour over other mixture. Marinate, covered for AT LEAST 24 hours.

This is a wonderfully easy salad to prepare that I got from a magazine years ago. It is great served cold after the flavors have blended for a couple of hours, and it is equally as good served hot making it super versatile. Can be easily doubled or tripled. I often use this for large crowds and it is always a hit.

2 cups cooked long-grain rice, chilled
1 (15 ounce) can black beans, drained and rinsed
2 cups chopped tomatoes
1 cup yellow sweet bell pepper, chopped (or you can use red or green)
1 cup frozen whole kernel corn, thawed
2 green onions, thinly sliced
1 cup salsa or 1 cup picante salsa
2 tablespoons fresh cilantro, snipped (optional)
4 ounces monterey jack cheese or 4 ounces monterey jack pepper cheese, cut into 1/4 inch cubes
lettuce (optioinal for garnish)
sour cream (optional)

Steps:

  • Mix together rice, black beans, tomatoes, pepper, corn, green onion, and cilantro.
  • Coat with salsa and add cheese.
  • If serving cold, you can use the lettuce leaves to garnish your serving bowl by laying down the leaves and then adding salad.
  • If serving hot, place in oven at 350 just until cheese melts.
  • A dollop of sour cream is great either way you serve it.

1 1/2 lb lean ground beef
1 pkg taco seasoning
1/2 c water
2 medium fresh tomatoes, chopped
1 medium head of iceberg lettuce, chopped
1 can(s) pinto beans
1 c cheddar cheese, grated
3/4 c french dressing
4 c doritos, slightly crushed

Steps:

  • 1. In a medium skillet, brown ground beef. Stir in taco seasoning and water. Add Pinto Beans and simmer for 5 minutes.
  • 2. In a large mixing bowl add lettuce, tomatoes, cheese and beef. Stir to mix well.
  • 3. Stir in French Dressing to taste.
  • 4. Just before serving, add slightly crushed Doritos. Do not add too soon or the chips will get soggy.
  • 5. Garnish with cheese and chips. You can also add Avacado, salsa or other ingredients.

1 head iceberg lettuce
3 tomatoes, chopped
1 3/4 lbs nacho cheese flavored tortilla chips or 1 3/4 lbs corn chips
1 cup cheddar cheese, shreaded
1 (8 ounce) jar taco sauce
8 ounces sour cream

Steps:

  • Brown ground beef, drain.
  • Chop or shred lettuce and tomatoes.
  • Without opening bag, squeeze the chips until they have crumbled into bite-size pieces.
  • Mix taco sauce and sour cream. (or Catalina dressing can be used) and combine all ingredients.
  • Stir well to mix.
  • Serve at room temperature.

1 cup frozen corn kernels
⅓ cup chopped green onions
1 avocado - peeled, pitted and diced
⅓ cup picante sauce
2 tablespoons vegetable oil
2 tablespoons lemon juice
½ teaspoon garlic salt
¼ teaspoon ground cumin

Steps:

  • In a large bowl, combine the tomatoes, zucchini, corn, green onions, and avocado.

1 pound(s) medium red potatoes
1 - medium onion , diced
1/2 cup(s) white vinegar
1 teaspoon(s) salt
1/4 teaspoon(s) pepper
1 teaspoon(s) sugar
1 cup(s) chicken broth
1/2 - a pound of bacon or more to taste
1 - egg, beaten

Steps:

  • Scrub potatoes to clean, rinse, then boil in there jackets. Drain, let cool. Peel and cut into 1/4 inch slices. Set aside. Fry bacon till crisp, break up into small pieces. add to the potatoes. Cook onion to some of the bacon grease and cook till transparent. , add vinegar, salt & pepper and broth to pan the onions were in. Stir , let it come to a boil. Stir in 1 beaten egg.Stir. Remove from heat, and pour over potatoes with the bacon. Let cool. Can be served warm or cold.....Enjoy

3 large boneless, skinless chicken breast - poached in salt water - chunked or shredded, which ever you prefer
1/3 - 1/2 c small diced celery
1/3 - 1/2 c fine diced red or sweet onion
1/2 - 3/4 c mayonnaise - more if needed
2 1/2 tsp lemon juice
3 tsp sweet pepper relish, could use sweet pickle relish as well
salt & pepper to taste
2 - 3 pinch cajun seasoning
1/2 tsp dried dill weed

Steps:

  • 1. Mix all ingredients in a large bowl, gently tossing to combine well. Chill and serve on your favorite bread or roll.
