Braised Halibut With Asparagus, Baby Potatoes and Saffron image

The whole dish is incredibly easy and follows a classic sear and simmer braising procedure: Sear the fish and set aside, sauté the aromatics, simmer the potatoes until tender, then gently simmer the fish and asparagus with the potatoes until done. Don't add more than a pinch of salt to the water when cooking the potatoes, otherwise the reduced broth will be too salty.

1/2 teaspoon saffron threads
2 tablespoons lightly toasted almonds
2 garlic cloves, green shoots removed, or 4 green garlic cloves
2 anchovies, rinsed
Salt and black pepper to taste
2 tablespoons extra-virgin olive oil
4 5- to 6-ounce halibut fillets
1 pound baby potatoes, cut in 3/4-inch pieces, or small potatoes, halved and sliced about 3/4-inch thick
3/4 pound asparagus, trimmed and cut in 2-inch lengths
2 tablespoons minced parsley
2 tablespoons minced basil

Steps:

  • Crush saffron threads between your fingers and place in a small bowl or ramekin. Add 1 tablespoon warm water and set aside.
  • In a mortar and pestle, pound together almonds, garlic and anchovies along with a pinch of salt into a paste. Set aside.
  • In a heavy straight-sided skillet or wide saucepan, heat olive oil over medium-high heat. Season fish with salt and pepper. When oil is hot, sear fish for 1 minute on each side. Remove to a plate or platter.
  • Reduce heat to medium and add anchovy paste to pan. Cook, stirring and scraping bottom of pan, until garlic is fragrant, 30 seconds to a minute. Stir in 3 cups water and stir to deglaze bottom of pan. Add potatoes and a pinch of salt. (Don't salt to taste now or broth will become too salty when reduced later.) Bring to a boil. Add saffron with soaking water, reduce heat, cover and simmer until potatoes are just tender, 10 to 15 minutes.
  • Carefully add seared halibut fillets and asparagus to pan. Tip in any liquid that has accumulated on the plate or platter, and bring back to a bare simmer. Cover and poach gently for 5 minutes, or until fish is opaque and asparagus is tender. With a slotted spoon or tongs, carefully remove fish fillets to 4 warm wide soup bowls. If necessary, simmer asparagus for another minute or 2. It should be tender but not too soft.
  • Divide potatoes and asparagus among the bowls. Turn up heat and reduce liquid in pan by half, stirring. Taste and adjust seasoning. Stir in parsley and basil and simmer 20 to 30 seconds. Spoon broth over fish and vegetables and serve.

In this comforting braise, bone-in chicken and potatoes slowly cook in a lively lemon-saffron bath until the meat is fall-off-the-bone tender and the potatoes are soft and full of flavor. Most of the work in this one-pot dinner happens in the oven, so you can rest or multitask as it cooks. Serve it with rice and spoon the pan juices over top, or with toasted pita to soak up the rich, lemony broth. The whole peppercorns taste delicious and soften in both texture and flavor during the cooking process, but if they are too strong for you, leave them out or crack them before cooking. Leftovers are even better the next day, on top of a salad or tucked into a sandwich.

1 heaping teaspoon saffron threads
2 tablespoons hot (not boiling) water
3 pounds bone-in, skin-on chicken parts, preferably thighs and drumsticks
1/2 pound yellow or red baby potatoes
3 tablespoons plus 2 teaspoons olive oil
Kosher salt and black pepper
3/4 cup fresh lemon juice (from 4 to 6 lemons)
1/2 teaspoon whole black peppercorns (optional)
Cooked rice or toasted pita, for serving

Steps:

  • Heat the oven to 350 degrees. Using a mortar and pestle (or the bottom of a spoon and a bowl), grind the saffron threads into a powder as best you can. Add the 2 tablespoons hot water and stir to combine. Set aside.
  • Place the chicken in a 9-by-13-inch roasting pan or baking dish. Cut large potatoes into 1-inch pieces and add to the pan. Drizzle the chicken and potatoes with the oil, then season well with salt and pepper.
  • Add the lemon juice to the saffron water, mix to combine, then pour over the chicken and potatoes, stirring to coat. Arrange the chicken skin-side down. Sprinkle evenly with the whole black peppercorns, if using, then cover tightly with foil. (It's OK if everything is close together.)
  • Cook until the meat is tender and easily pulled from the bone, and the potatoes are soft, about 1 1/2 hours. During the last 15 minutes, remove the foil, flip the chicken, stir the potatoes and cook for 15 minutes more, uncovered, to reduce some of the liquid.
  • Season with black pepper and serve with rice or pita to soak up the lemony juices.

1/2 cup fresh lemon juice
5 tablespoons extra virgin olive oil, divided

2 cups vidalia onions, finely chopped (or other sweet onion)
1/4 teaspoon crumbled saffron thread, divided
1/2 teaspoon sweet paprika, divided (preferably Spanish smoked)

Steps:

  • Sprinkle the fish fillets with salt and arrange in a flat-bottomed bowl or pie plate.
  • Pour on the lemon juice and let it sit.
  • In a shallow, ovenproof casserole, heat 3 tablespoons of the oil.
  • Add the potatoes in layers and sprinkle each layer with salt.
  • Turn the potatoes to coat with the oil and saute over medium heat for 2 minutes.
  • Stir in the onions, 1/8 teaspoon of the saffron, and 1/4 teaspoon of the paprika and saute for 2 minutes more.
  • Cover and cook over medium-low heat until the potatoes are almost tender, 15-20 minutes, lifting and turning the potato mixture occoasionally.

Olive oil
1 pound spinach leaves, rinsed
8 medium sized potatoes
1 tablespoon saffron
4 fillets (7 to 8-ounces) Lake Superior jumbo whitefish
White pepper and salt
1 leek
Mousseline Mustard Sauce, recipe follows
4 medium shallots, chopped
1 cup dry white wine
1 tablespoon champagne vinegar
Pinch salt
Pinch white pepper
1 tablespoon heavy cream
1 cup butter, softened
2 tablespoon whole grain Dijon mustard

Steps:

  • Heat a deep fryer to 350 degrees F.
  • Saute mushrooms in a skillet with 1 tablespoon of olive oil until soft. Keep warm in pan.
  • Saute spinach in pan with 1 tablespoon of olive oil until soft. Keep warm in pan.
  • Peel potatoes. Cut off sides of potatoes. Add potatoes to a pot of boiling water with saffron, for color and taste. Boil until tender. Drain.
  • Season the fish with white pepper and salt on both sides. Heat a non-stick skillet over high heat. Brush fish on both sides with olive oil. Add fish to skillet and sear on both sides, 3 minutes each side.
  • Using only the white part of the leek, halve lengthwise. Take each half and julienne thinly. Wash and dry. Deep fry in hot oil for 1 to 2 minutes until crisp. Drain on paper towels.
  • Put spinach in center of plate. Put mushrooms on spinach. Put whitefish on top of mushrooms. Cover fish with Mousseline Mustard Sauce. Put 2 potatoes on side of plate. Put a small heap of leeks on top of fish.
  • Combine in a saucepan, shallots, white wine, vinegar, salt and pepper. Reduce to 10 percent of its original volume. When reduced, add heavy cream. Slowly whisk in soft butter, spoon by spoon. Fold in mustard. Adjust seasoning, to taste.

1 tablespoon hot water
2 lbs potatoes, peeled and cut into large cubes
2 teaspoons olive oil
1 small onion, sliced
1/2 teaspoon ground turmeric
1/2 teaspoon ground coriander
1/4 teaspoon ground cumin
1 cup vegetable broth
1 garlic clove, minced
1/4 cup raisins
1 teaspoon chopped fresh parsley
1 teaspoon chopped fresh cilantro

Steps:

  • Soak saffron in hot water.
  • Cook potatoes in salted water until tender but still firm, drain and set aside.
  • Heat oil in a large heavy bottom saucepan, add onion, turmeric, coriander and cumin.
  • Cook over low heat for 5 minutes or until onion is soft.
  • Add potato, broth, and garlic, then bring to a boil, reduce heat and simmer 10 minutes.
  • Add saffron water and raisins and cook 10 minutes or until potato is soft and the sauce is reduced and thickened.
  • Stir in the parsley and cilantro.

Modified from Bon Appetit. The original recipe called for 1/2 tsp smoked paprika for the aioli, but I thought that was a bit too smoky, thus my change.

1 tablespoon water
1/2 teaspoon crumbled saffron thread
1/4 teaspoon smoked paprika
1/4 teaspoon hungarian hot paprika
1/2 cup mayonnaise
1 tablespoon extra virgin olive oil
1 teaspoon fresh lemon juice
1 garlic clove, minced
12 small yukon gold potatoes or 12 small red potatoes, unpeeled
fleur de sel (fine French sea salt)
2 tablespoons chopped fresh cilantro

Steps:

  • Bring 1 tablespoon water to boil in small saucepan. Add saffron. Remove from heat.
  • Cover and let steep 15 minutes.
  • Mix in paprika, then mayonnaise, olive oil, lemon juice, and garlic. (Aioli can be made 2 days ahead. Cover; chill.)
  • Place potatoes in pot with enough cold salted water to cover.
  • Bring to boil and cook until just tender, about 20-25 minutes. Drain. Cool slightly.
  • Press gently on potatoes to split skins and crack open. Sprinkle with fleur de sel.
  • Place 2 potatoes on each of 6 plates.
  • Drizzle with saffron aioli; sprinkle with cilantro and serve.

Artichokes:
2 large lemons, halved
5 medium artichokes
10 cups canned low-salt chicken broth
2 tablespoons extra-virgin olive oil
1 bay leaf
Stew:
12 small red-skinned potatoes
1 tablespoon salt
1 bay leaf
1 1/4 teaspoons mustard seeds
1/2 teaspoon celery seeds
1/4 teaspoon (packed) stem saffron
18 mussels, scrubbed, debearded
3/4 cup chopped shallots
5 tablespoons unsalted butter
2 green onions, finely chopped
1 bunch chives, chopped

Steps:

  • Squeeze juice from 2 lemon halves into large bowl; add lemon halves. Fill bowl with water. Cut stem off 1 artichoke. Starting at base, bend leaves back and snap off where they break naturally; continue until all tough outer leaves have been removed, leaving cone of tender pale green leaves. Using small sharp knife, trim outside edge of base until smooth and no dark green areas remain. Rub trimmed edge with 1 of remaining lemon halves. Cut artichoke lengthwise into quarters. Rub cut sides of quarters with lemon. Using small knife, cut out choke and small purple-tipped leaves from 1 quarter. Rub cut areas with lemon. Trim top leaves, leaving artichoke quarter about 2 inches long. Cut quarter into 2 wedges. Place wedges into lemon water. Repeat with remaining artichokes.
  • Bring remaining ingredients to boil in heavy large pot (do not use aluminum or cast iron). Drain artichokes; add to pot. Return to boil. Reduce heat to medium-low; simmer until artichokes are tender, about 20 minutes. Using slotted spoon, transfer artichokes to medium bowl. Reserve 1 cup cooking liquid in small bowl.
  • Place potatoes, salt, bay leaf, 1/2 teaspoon mustard seeds and celery seeds in large saucepan. Pour in enough cold water to cover potatoes generously. Boil until potatoes are tender, about 20 minutes. Drain. Cool 15 minutes; peel.
  • Stir saffron in heavy large in heavy large pot over medium-low heat until fragrant, about 2 minutes. Add reserved 1 cup cooking liquid; bring to simmer. Add artichokes, potatoes, mussels, shallots, butter and 3/4 teaspoon mustard seeds. Bring to boil. Cover pot; cook until mussels open and potatoes are golden, about 8 minutes. (Discard any unopened mussels.) Mix in green onions. Season with salt and pepper.
  • Divide stew among 6 shallow soup bowls. Sprinkle with chives and serve.

Ingredients for steamed mussels (see recipe)
40 mussels
2 teaspoons olive oil
1 large onion, peeled and chopped
3 cloves garlic, peeled and minced
1/2 pound chorizo, cut into 1/4-inch-thick slices
3 cups long-grain rice
1 cup white wine
2 1/4 cups water
1/4 teaspoon saffron
2 teaspoons salt, plus more to taste
1/2 teaspoon grated lemon rind
4 medium-size sweet potatoes, roasted until just tender, peeled and cut into 1/2-inch pieces

Steps:

  • Steam the mussels (see recipe). Measure the broth and add enough water to equal 2 cups. Set aside the mussels and the broth.
  • Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until soft, about 5 minutes. Add the chorizo and cook until browned, about 5 minutes. Stir in the rice and cook, stirring, for 2 minutes. Add the reserved mussel liquid, white wine, water, saffron and 2 teaspoons salt, and bring to a boil. Reduce to a simmer, cover and cook until the liquid has been absorbed and the rice is tender, about 17 minutes.
  • Gently stir in the lemon rind, sweet potatoes and additional salt to taste. Divide among 8 plates. Top with mussels and serve immediately.

2 cloves garlic
1/4 cup fresh parsley leaves
1/2 teaspoon salt
4 drops Tabasco
1/6 cup fresh spinach leaves
1 teaspoon almond paste (restaurant uses 1/2 tablespoon pistachio compound)
3/4 cup olive oil
Mashed Potatoes
1 four- to five-ounce lobster tail
3 pounds Idaho potatoes, peeled and roughly cut
1/2 cup half-and-half
1/4 teaspoon high-quality saffron threads
1 clove garlic, peeled and mashed with 1 teaspoon salt
1/4 teaspoon black pepper
11/2 teaspoons lobster base powder or concentrate (may substitute chicken or vegetable bouillon)
2 tablespoons butter
2 green onions, finely diced

Steps:

  • Aioli Combine eggs and lemon juice in blender on high speed and drop in garlic cloves one at a time. Add parsley, salt, Tabasco, and spinach, then almond paste. Slowly pour in olive oil. Mashed Potatoes Place lobster tail in boiling water seasoned with 1/2 teaspoon salt, 1 teaspoon paprika, juice of 1 lemon, and 1/4 teaspoon cayenne pepper. Reduce heat and poach 4 to 5 minutes. Let cool in liquid, remove meat from shell, and mince. Boil potatoes, drain, then set aside. Heat half-and-half to a simmer. Add saffron, mashed garlic, black pepper, and lobster base powder to warmed cream. Place potatoes in bowl of a mixer on medium speed and drizzle in cream, then add butter a tablespoon at a time. Fold in lobster and green onions. To serve, pipe potatoes around salmon filets and drizzle with aïoli.
