Barilla® Gluten Free Lox Pasta Salad image

This quick and easy pasta salad recipe combines gluten-free pasta with green olives, capers, salmon, and basil and is served with wedges of hard-boiled eggs.

1 (12 ounce) box Barilla® Gluten Free Rotini
4 tablespoons extra virgin olive oil
3 tablespoons red wine vinegar
½ cup green olives, sliced
1 pint cherry tomatoes, quartered
1 tablespoon capers in brine, drained
1 cup smoked salmon (lox), sliced in strips
½ cup green olives, sliced
5 basil leaves, thinly sliced
2 hard-boiled eggs, cut into wedges

Steps:

  • Bring a large pot of water to a boil. Cook pasta according to package directions.
  • Drain pasta and toss with olive oil in a bowl. Let cool for 5 minutes.
  • Combine pasta with all remaining ingredients. Garnish with hard boiled eggs.
  • Serve immediately, do not chill.
