I make this at least once a week when our garden is exploding with zucchini and yellow squash. It only takes about 10 minutes and the parmesean cheese makes it wonderful. You can't go wrong with this simple recipe!

1 medium zucchini or 1 medium yellow squash
2 tablespoons butter
1 teaspoon salt (to taste)
1/2 teaspoon pepper (to taste)
2 teaspoons onion powder (to taste)
1/2 cup parmesan cheese

Steps:

  • Slice squash into 1/4 inch slices.
  • Melt butter in frying pan over medium heat and add squash.
  • Sprinkle with salt, pepper and onion powder to taste.
  • Flip with a spatula every few minutes until cooked through.
  • Sprinkle with parmesean cheese just before serving. It will melt in about 1 minute.

BATTER FRIED ZUCCHINI OR SQUASH

Remember the power of ONE for a light, crisp batter. I use any kind of summer squash I have growing in the garden -- zucchini, Yellow Crookneck, Patty Pan, 8 Ball, Papaya Pear, Sunburst, ... . IMO, the best size for frying is when the seeds have begun to develop but before they've gotten large and hard. The immature seeds add depth to the flavor. Cooking time will vary with the size of your frying utensil.

4 -6 zucchini or 4 -6 summer squash
1 egg
1 cup milk
1 teaspoon italian seasoning
1 dash garlic powder
1 cup self-rising flour
grated parmesan cheese (optional)

Steps:

  • Clean and cut up zucchini/squash. I like to cut them into sticks rather than slices because that shape fries more evenly in deep fat without need of turning.
  • Pre-heat oven to 250.
  • Prepare an oven-proof pan by lining it with several paper towels.
  • Either heat your deep fryer to the temperature recommended for fried squash in its manual or heat 2 inches of frying grease (I prefer a 50-50 mix of oil and shortening), in your preferred, stove-top, frying utensil -- mine is a cast iron chicken fryer -- until a drop of water thrown into the grease sizzles vigorously but not violently.
  • While the grease is heating beat the egg in a shallow bowl. Beat in the milk, seasonings, and finally the flour. The batter will be thin and may have a few lumps.
  • Toss a skillet's worth of squash sticks in the batter and coat thoroughly.
  • When the grease is ready carefully drop in the battered sticks, being sure not to drop them right on top of each other. If you are in doubt of your ability to do this without burning yourself use tongs.
  • Yes, the thin batter will have drippy bits that dangle from the sticks and there will be a lot of little, batter crispies in the grease. The drippy bits are what makes this batter light and crisp where a thicker batter might be heavy.
  • If necessary turn the pieces over partway through so as to brown them evenly.
  • When nicely brown transfer the sticks to the prepared pan and put them into the oven while you fry the next batch. Do not try to fry too much at once or the temperature of the grease will drop and the coating will end up soggy and greasy.
  • When the squash is done serve with grated Parmesan at the table.
  • Some people might like ranch or blue cheese dressing instead or a simple dipping sauce made from sour cream, fresh dill, and a bit of lemon juice to thin it.
  • This recipe doubles nicely. But if you need more than that I suggest making separate, additional batches since the rising power fades after long sitting.
  • Leftovers can be reheated on a baking sheet in a 450 degree oven. The microwave would make them soggy and unpleasant.
  • This batter is also good on eggplant, onion rings, and chicken tenders.
  • Note: If you do not keep self-rising flour in the house you can use 1 cup all-purpose flour mixed with 1tsp baking powder and a pinch of salt instead.

1 large onion, chopped
1 lb mild Italian turkey sausage
1 lb ground beef (or additional 1 lb mild Italian turkey sausage)
4 garlic cloves, minced
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (15 ounce) cans diced tomatoes
2 cups water
1 tablespoon dried basil
2 bay leaves
3/4 teaspoon red pepper flakes
1/2 teaspoon black pepper
salt, to taste
1 1/2 teaspoons sugar
1/4 cup white wine (optional)
2 tablespoons fresh parsley, chopped
3 zucchini, sliced in 1/2 inch rounds
3 yellow squash, sliced in 1/2 inch rounds
garlic powder
onion powder
salt and black pepper
extra virgin olive oil
2 cups breadcrumbs (I grind 5 slices of whole wheat bread in a food processor)
1/2 teaspoon dried marjoram or 1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon sugar
1/4 teaspoon black pepper
salt, to taste
2 tablespoons extra virgin olive oil
1 cup parmesan cheese
16 ounces penne rigate (I use whole wheat Penne Rigate, any kind of tube or spiral pasta will be fine)
16 ounces ricotta cheese
12 ounces mozzarella cheese, shredded
2 -3 eggs
1/4 teaspoon black pepper

Steps:

  • ITALIAN SAUSAGE MEAT SAUCE: Caramelize onion in olive oil. Remove casings from sausage and add sausage and ground beef to pan breaking into bits and browning. Add garlic and sauté two minutes more. Stir in crushed tomatoes, tomato paste, diced tomatoes, water, basil, bay leaves, red pepper flakes, black pepper, salt, sugar, and wine. Boil and simmer, covered, for at least 40 minutes up to 3 hours. Add chopped parsley to Meat Sauce during the last 15 minutes of simmering sauce.
  • SAUTEED SQUASH: Sprinkle squash with garlic powder, onion powder, salt and pepper. Sauté squash in olive oil until browned on both sides. Transfer to drain on plates lined with paper towels.
  • PARMESAN GARLIC BREADCRUMB TOPPING: Combine breadcrumbs, marjoram or oregano, garlic powder, onion powder, black pepper, salt, sugar, olive oil, and Parmesan cheese.
  • PASTA: Boil salted water for pasta. Cook pasta according to package directions.
  • CHEESE MIXTURE: Combine ricotta cheese, mozzarella cheese, eggs, and black pepper.
  • ASSEMBLY: Preheat oven to 350F degrees. Grease a large baking pan with olive oil. In baking pan, spread pasta across the bottom coating with a small amount of olive oil. Remove bay leaves from Meat Sauce. Top pasta with half of Meat Sauce. Place Sautéed Squash at an angle half in half out of Meat Sauce. Top Sautéed Squash with other half of Meat Sauce.
  • Spread dollops of Cheese Mixture evenly across the top of the Meat Sauce. Sprinkle Breadcrumb Topping evenly over dish.
  • Bake at 350F degrees for 40 minutes or until crumbs are golden and dry and sauce is bubbly.

1 cup buttermilk
1/2 cup yellow cornmeal
1/2 cup all-purpose flour
salt
vegetable oil, to a 1-inch depth heated until just before smoking
1 yellow squash, cut in 1/8 " - 1/4-inch slices

Steps:

  • Soak squash in buttermilk to cover, at least 5 minutes.
  • Mix dry ingredients together.
  • Dredge marinated squash in cornmeal mixture (I use a Ziploc baggie & shake until covered).
  • Fry in vegetable oil until golden, turn and fry until lightly golden on other side.
  • Salt lightly, remove from oil, & drain on paper towels.
  • This is delicious - also works for fried green tomatoes (cut green tomatoes at least 1/4" slices).
  • If you like fried okra - batter should be 1 cup milk + 1 egg.
  • Dredge in same mixture as above & salt as you do for squash & drain on paper towels.

2 tablespoons onions, diced

1/2 cup water
1 tablespoon sugar
1/4 cup cream

Steps:

  • Wash tender yellow squash; remove stem and blossom ends.
  • Cut into 1/2-inch rounds.
  • Place squash, butter, onions and salt into heavy skillet.
  • Add water.
  • Cover and cook on medium low heat until water is absorbed and squash is tender.
  • Lightly mash with a fork.
  • Add sugar and cream.
  • Let it cook slowly until mixture is fairly dry and flavors develop, being careful not to let it scorch.
