1 baguette (8 to 10 ounces), sliced 1/4 inch thick (about 60 slices)
3/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
White-Bean and Caper Crostini
Tomato-Basil Crostini
Artichoke-Dill Crostini
Salami-Ricotta Crostini
Pesto-Bocconcini Crostini
Goat Cheese and Sun-Dried Tomatoes Crostini

Steps:

  • Preheat oven to 350 degrees. Arrange baguette slices on two large rimmed baking sheets; brush both sides with oil, and season with salt and pepper.
  • Bake, rotating sheets halfway through, until golden, 15 to 20 minutes (if undersides are not browning, turn crostini over once during baking). Let cool on baking sheets. Top crostini with desired toppings, and serve.

1 (1 pound) loaf cocktail rye bread
1 cup thousand island dressing
1 ½ pounds deli sliced corned beef
1 (16 ounce) jar sauerkraut, rinsed and well drained
1 pound sliced Swiss cheese

Steps:

  • Preheat the oven's broiler.
  • Arrange cocktail rye slices on a baking sheet. Top each one with about 2 teaspoons of thousand island salad dressing, then fold about 1/2 slice of corned beef to fit the bread, and lay over the dressing. Place a small amount of sauerkraut over the meat, then top with 1/4 slice of the Swiss cheese, or a slice about as big as the bread.
  • Broil for 3 to 5 minutes, until cheese is melted. Serve warm.

6 slice(s) german rye bread
2 large garlic cloves, halved
2 tablespoon(s) vegetable oil
3 1/2 ounce(s) german soft, spreadable cheese
2 medium ripe tomatoes, seeded and diced
3 - basil leaves, sliced very thinly lengthwise
- sea salt and freshly ground pepper

Steps:

  • Cut bread slices in half. Rub one side of each piece with the cut side of garlic. Brush with oil and place on a baking sheet; bake in a preheated 400-degree oven for 10 minutes.
  • Let bread cool slightly and spread toasted bread with cheese. Gently stir together tomato and basil; spoon on top. Sprinkle with salt and pepper and serve.
