POTLUCK TACO CASSEROLE
This is the dish I most often take to potlucks, and the pan comes home empty every time. It has the irresistible taco taste that everybody craves. -Kim Stoller, Smithville, Ohio

- Preheat oven to 400°. In a large skillet, cook beef over medium heat 10-12 minutes or until no longer pink, breaking into crumbles; drain. Add taco seasoning and prepare according to package directions. Spoon meat into a greased 13x9-in. baking dish., In a large bowl, beat eggs and milk. Stir in biscuit mix and pepper. Pour over meat. Bake, uncovered, 20-25 minutes or until golden brown. Cool 5-10 minutes., Spread sour cream over top; sprinkle with lettuce, tomato, green pepper, onions and cheese. Freeze option: Cool baked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Unwrap casserole; reheat on a lower oven rack until heated through and a thermometer inserted in center reads 165°. Cool for 5-10 minutes, then top as directed.

Steps:
- Brown hamburger, adding 1 cup chopped onion, and 1 cup chopped green pepper as the meat browns. Add 1 large can chili beans (without meat), 1 large can stewed tomatoes and season to taste with salt, pepper, garlic, cumin, and extra hot chili powder, if desired. Layer meat and bean mixture in casserole with 1 package of corn tortillas. Top with grated cheese. Bake in 350* oven for 20-30 minutes. Variations: Add canned or left over corn, chopped olives to make it a mock tamale pie.
TURKEY POTLUCK CASSEROLE
Just that...great for potlucks, or just for a dinner..this is a wonderful tasting casserole that can be made with left-over cooked chicken if desired instead of turkey (prep time includes cooking the rice)

- Set oven to 350 degrees /Grease a 2-quart casserole dish. Combine 2 tbsp melted butter with paprika and add the crushed Rice Krispies; mix and set aside. /Melt 3 tbsp butter in a medium saucepan over low heat. /Whisk in flour, garlic powder (if using) and black pepper and thyme (if using); gradually add half and half cream, whisking constantly until smooth. /Raise heat to medium; cook until bubbly and thickened, stirring constantly Add in shredded cheese and Parmesan cheese, stirring until melted. /Remove from heat; stir in rice, parsley, chopped turkey and peas. /Pour into prepared casserole dish. Sprinkle cereal mix evenly over top. /Bake for 20-25 minutes, or until thoroughly heated and bubbly.

POW-WOW POTLUCK
I have no idea why it is called this, but my Mom made this all through my childhood. I remember it as one of my favorite meals growing up. It is very simple to make!

Steps:
- Brown, crumble, and drain hamburger meat in a large skillet.
- In the same skillet, combine the cooked meat, beans, and sloppy joe sauce.
- Simmer until heated through, approximately 5-10 minutes.
- To serve, put a layer of corn chips (I use chili cheese Fritos) on the bottom of a plate.
- Top with the meat mixture, then top with the toppings of your choice.
- I normally put out shredded mexi blend cheese,diced tomatoes, chopped onions, sour cream, shredded lettuce, and sliced jalapenos, but use your imagination!
- Prep time includes chopping veggies and browning the hamburger meat.
