1 can (8 ounces) sliced pineapple
2 boneless fully cooked ham steaks (about 2 pounds)
1/4 cup packed brown sugar
1/2 teaspoon Dijon mustard
4 maraschino cherries

Steps:

  • Drain pineapple, reserving 1 tablespoon juice; set pineapple aside (discard remaining juice or save for another use). Cut each ham steak in half; place in an ungreased baking pan. , Combine brown sugar, mustard and reserved juice; spread over ham. Top with pineapple and cherries. Bake, uncovered, at 350° for 20-25 minutes or until heated through.

1 cup maple syrup
2 tablespoons Dijon mustard
1 ½ teaspoons distilled white vinegar
15 whole cloves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Arrange ham steaks in a baking dish.
  • Whisk brown sugar, maple syrup, Dijon mustard, and vinegar in a bowl; pour over ham steaks. Sprinkle cloves over ham steaks.
  • Bake in the preheated oven until browned on both sides, about 45 minutes, turning every 15 minutes. Discard cloves before serving.

1/3 cup mayonnaise
1/3 cup sour cream
1/4 cup finely chopped fresh chives
1 tablespoon whole-grain mustard
1 cup long-grain white rice
Kosher salt and freshly ground pepper
2 bunches asparagus, trimmed and cut into 1-inch pieces
Juice of 1 lemon, plus wedges for serving
1 tablespoon unsalted butter
4 6-ounce ham steaks
2 tablespoons packed light brown sugar

Steps:

  • Mix the mayonnaise, sour cream, chives and mustard in a bowl.
  • Bring a saucepan of water to a boil. Add the rice, 1/2 teaspoon salt and a few grinds of pepper; reduce the heat to low and simmer until almost tender, about 15 minutes. Add the asparagus and simmer until the rice and asparagus are tender, about 3 more minutes. Drain in a fine-mesh sieve and rinse under cold water, stirring gently to remove excess water. Transfer to a large bowl and stir in the lemon juice and half of the prepared chive sauce; season with salt and pepper.
  • Heat the butter in a large nonstick skillet over medium-high heat. Add the ham steaks, overlapping as necessary, and cook, flipping occasionally, until golden, about 5 minutes.
