RUSTIC APPLE TART (ADAPTED FROM MARTHA STEWART SITE AND PIONEER WOMAN)

RUSTIC APPLE TART (ADAPTED FROM MARTHA STEWART SITE AND PIONEER WOMAN) image

Categories     Apple

Number Of Ingredients 14

1 sheet frozen puff pastry (from a standard 17.3-ounce package), thawed
Flour, for work surface
3 Granny Smith apples
1/3 cup sugar, instead do 3/4 cup light brown sugar
for brown sugar, add 1/2 tsp cinnamon, 1/4 tsp salt, and toss apples in 1 TBL lemon juice
1 large egg yolk, beaten with 1 teaspoon water, for egg wash
2 tablespoons unsalted butter (don't use if using brown sugar and cinnamon)
2 tablespoons apple jelly, or apricot jam (if do cinnamon and brown sugar, use 1 T water with 1/4 cup apricot preserves, or no glaze at all.)
DIRECTIONS
Preheat oven to 375 degrees. Open pastry sheet and remove paper. Fold sheet back up. On a lightly floured work surface, roll out pastry sheet (still folded) to an 8-by-14-inch rectangle. Trim edges with a pizza cutter or sharp paring knife. Transfer to a baking sheet; place in freezer. Peel, core, and slice apples 1/4 inch thick. Toss in a large bowl with sugar.
Brush pastry with egg wash, avoiding edges. Use a sharp paring knife to score a 3/4-inch border around pastry (do not cut all the way through). Place apples inside border, and dot with butter. Bake until pastry is golden and apples are tender, 30 to 35 minutes.
In the microwave or a small saucepan, heat jelly with 1 tablespoon water until melted. Brush apples with glaze. Serve tart warm or at room temperature, cutting into pieces with a serrated knife.
COOK'S NOTE
Store-bought frozen puff pastry sometimes cracks along seams when unfolded. To prevent this, leave pastry folded when you roll it.

Steps:

  • i use dufour. and instead of water add 1 T of calvados when warming 4T (not 2) of bonne mmaman apricot preserves. used 11 x 17 pan and when froze put between top and bottom of freezer. next time for dufour maybe do only 1 T butter on top and not 2? After some tastings we decided we preferred (any my GI preferred) PW filling that has brown sugar, lemon, salt and cinnamon (my addition), that sits for 5 min, rather than white sugar and butter as written, since calvados glaze may bother my stomach. So either do as MS wrote with only white sugar and butter for filling with calvados in glaze, or my modified version with PW filling and either glaze with water or no glaze (unsure if any glaze bothers).

RUSTIC APPLE TART

Rustic Apple Tart image

This recipe hails from British Columbia, Canada. It is from the website if the B.C. Tree Fruits Limited company. "Who doesn't love baked apples and cinnamon? They are an irresistible combination especially when served warm with a scoop of vanilla ice cream. This rustic apple tart is simpler to make than a pie. You don't have to be neat and fussy with the crust, just simply fold it up over the apples however you please leaving the centre open. The chopped pecans toast while the tart is baking which gives them a buttery taste and help to make the tart look very rustic." http://www.bctree.com/recipes/archive/apple-rustic-tart.php

Categories     Tarts

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 17

1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 cup cold butter, cut into pieces
3 tablespoons water (ice cold)
4 apples, peeled, seeded and sliced into thin slices
1 lemon, juice of
1 1/2 teaspoons cinnamon
1/8 teaspoon nutmeg
2 teaspoons vanilla
1/4 cup white sugar
1/3 cup golden raisin
2 1/2 tablespoons butter
1 egg, beaten (for egg wash)
1 dash water
2 tablespoons white sugar (for sprinkling crust)
1/4 cup pecans, chopped (optional)

Steps:

  • Prepare crust. In a mixing bowl, combine flour, salt and sugar, mix well. Add butter. Using a pastry blender or a fork, blend in butter until the mixture is crumbly, like oatmeal. Gradually add the ice water, 1-tablespoon at a time, just until the dough comes together. Be sure not to add too much water. Empty the dough from the mixing bowl on to a piece of waxed paper. Using the waxed paper, shape the dough into a flat disc. Wrap in waxed paper or plastic wrap and chill in refrigerator for at least half an hour. You may also use your hands to form the dough into a disc but the less you touch the dough, the flakier the crust will be.
  • Prepare apple filling. In a large mixing bowl, add sliced apples. Sprinkle with lemon juice, cinnamon, nutmeg, vanilla, white sugar and golden raisins. Toss well to combine. Add butter in small pieces and toss.
  • Prepare a baking sheet by lining with a piece of parchment paper. Preheat oven to 400F degrees. Remove dough from the refrigerator. On a floured surface, roll dough into a rough circle, about 13 inches in diameter or 1/4 inch in thickness. Gently roll dough back up onto the rolling pin and transfer onto baking sheet. Pour apple mixture into the centre of the dough.
  • Gently fold up the edges of the dough over the apples, leaving the centre open. You want the tart to look quite rustic, not shaped evenly like a pie. Make an egg wash using 1 egg and a splash of water. Whisk well with a fork. Brush egg wash over the crust evenly with a pastry brush. Sprinkle the crust with white sugar. Sprinkle chopped pecans over the whole tart, gently pressing into the crust so they stick to the egg wash. Place in oven at 400° F and bake for 12 minutes. The high heat will help to cook the bottom of the tart well and to create a flakier crust.
  • After 12 minutes, turn the oven down to 350° F and continue baking for another 25 to 30 minutes or until centre is bubbling and the crust is golden brown in colour. Remove from oven and allow to cool slightly. Serve warm with a scoop of vanilla ice cream, a sprig of fresh mint and a sprinkling of cinnamon.

1/4 cup frozen solid vegetable shortening, cut into 1/2-inch cubes

  • To make the crust: Combine 2 cups of the flour with the salt and confectioners' sugar in the work bowl of a food processor. Pulse a few times to blend. Add the butter, and pulse about 20 times, or until the butter is the size of small peas. Add the egg, pulse to blend, and add enough of the water (a little at a time, pulsing between each addition) for the crust to stay together when you squeeze a handful of dough. Wrap the dough in plastic and chill in the refrigerator for about 30 minutes. Preheat the oven to 375 degrees. To make the filling: Mix the apple slices with the lemon juice, and set aside. Mix the remaining 1/4 cup flour with the sugar and cinnamon in a small bowl. Add half of the flour-sugar mixture to the apples, and stir gently to combine ingredients. Roll the dough out into a large 1/4-inch-thick round. Sprinkle the remaining half of the flour-sugar mixture over all except the outside 2 inches of the dough. Place the apple slices over the flour-sugar mixture in concentric circles, overlapping the slices and leaving about 2 inches of empty crust around the edge of the apples. Using your hands, fold the edge of the crust over the apples, overlapping the folds slightly and pressing the crust together with your hands where the crust overlaps. Place the remaining tablespoon of butter cubes over the top of the uncovered apples. Bake the tart for 35 to 45 minutes, until crust and apples are light golden brown and the apples are somewhat tender. Before serving, dust the tart with confectioners' sugar.

2 tsp. granulated sugar
1/2 tsp. table salt
5-1/2 oz. (11 Tbs.) cold, unsalted butter
1 large egg yolk
3 Tbs. whole milk
For the Filling
4 cups peeled, thinly sliced apples
1 tsp. pure vanilla extract
1/2 tsp. ground cinnamon
1 Tbs. all-purpose flour
Big pinch table salt
1 large egg, beaten well
2 Tbs. turbinado sugar

On low speed, mix the butter and flour until the flour is no longer white and holds together when you clump it with your fingers, 1 to 2 minutes. If there are still lumps of butter larger than the size of peas, break them up with your fingers. Run a spatula along the bottom of the bowl to loosen anything stuck to the bowl. (If mixing by hand, mix with a pastry cutter or two forks until the butter is mixed into the flour as above). In a small bowl, mix the egg yolk and milk and add them to the flour mixture. On low speed, mix until the dough just comes together, about 15 seconds; the dough will be somewhat soft. Dump the dough onto a clean counter and work it with the heel of your hand, Turn the dough out onto a sheet of plastic wrap, press it into a flat disk, wrap it in the plastic, and let it rest in the refrigerator for 15 to 20 minutes (or up to four days). heat the oven to 350*F. Line a heavy-duty rimmed baking sheet with parchment. On a floured surface, roll the dough into a round that's about 13 to 14 inches in diameter. Transfer the dough round to the baking Assemble and Bake the Tart Put the apples in a large bowl. Toss the fruit with the 1/4 cup granulated sugar. Add the flour, vanilla extract, cinnamon, and salt and toss until everything is evenly mixed. Remove the dough from the refrigerator and let it sit at room temperature for about 5 minutes to keep it from cracking. Heap the apple mixture in the center of the dough round. Fold the edges of the dough over some of the apples to create a rim about 2 inches wide. Using a pastry brush, brushevenly with the beaten egg. Sprinkle the turbinado sugar.
