Simplest Hot Chocolate (with Maple Syrup and No Refined Sugar) image

Being a former sugar addict, this recipe was my saving grace. It has just the right amount of cocoa and that hint of sweetness that my palate desires!

1 cup whole milk
1 tablespoon maple syrup
1 tablespoon unsweetened cocoa powder
½ teaspoon vanilla extract

Steps:

  • Pour milk into a microwave-safe measuring cup; heat in a microwave oven for 1 minute and 30 seconds. Place maple syrup, cocoa powder, and vanilla extract in a mug; pour in 1/3 of the hot milk and stir well. Add remaining hot milk.

Rumplemayer's Hot Chocolate image

This version, adapted from Rumplemayer's, a now-closed New York restaurant once known for its hot chocolate and pastries, is rich, sweet and smooth. It calls for real semisweet chocolate (we bet a mix of semisweet and bittersweet would be delightful, too) so there's none of the chalky aftertaste hot cocoa often leaves behind. A dollop of whipped cream and a sprinkle of cinnamon, if you wish, take it over the top.

4 cups milk
6 tablespoons sugar
7 ounces semisweet chocolate,chopped
1 cup heavy cream (optional)
Ground cinnamon, for garnish (optional)

Steps:

  • Combine the milk, sugar and chocolate in a large saucepan. Heat, stirring frequently, until the chocolate is melted and the mixture comes to a simmer.
  • Meanwhile, whip the heavy cream to soft peaks. Ladle the hot chocolate into 4 mugs, top with whipped cream and sprinkle lightly with ground cinnamon. Serve immediately.

1/4 cup sugar
1 tablespoon baking cocoa
1/8 teaspoon salt
1/4 cup hot water
1 tablespoon butter
4 cups milk
1 teaspoon maple flavoring
1 teaspoon vanilla extract
12 large marshmallows

Steps:

  • In a large saucepan, combine sugar, cocoa and salt. Stir in hot water and butter; bring to a boil. Add the milk, maple flavoring, vanilla and 8 marshmallows. Heat through, stirring occasionally, until marshmallows are melted. Ladle into mugs and top each with a marshmallow.
