A very moist rump roast with a creamy, delicious mushroom gravy.

1 (4 pound) rump roast
1 tablespoon meat tenderizer
1 teaspoon ground black pepper
1 teaspoon garlic salt
½ teaspoon salt
1 tablespoon Worcestershire sauce
2 tablespoons salted butter, cut into small pieces
1 medium yellow onion
1 (10.5 ounce) can Soup, cream of mushroom, canned, condensed, commercial
1 tablespoon cornstarch

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place roast in a casserole dish and sprinkle with meat tenderizer, pepper, garlic salt, and salt. Drizzle with Worcestershire sauce and dot with butter.
  • Cut onion in half. Pull apart petals and place on top of roast.
  • Bake until roast is fully tender, 4 to 5 hours. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Remove from the oven and transfer most of the juice to a saucepan for gravy. Add condensed soup and cornstarch. Heat over medium heat until thickened, 3 to 5 minutes.
  • Slice roast and ladle gravy over individual servings.

1 cup red wine
2 cups beef, chicken, or vegetable broth
1 bay leaf
5 to 6 black peppercorns

Steps:

  • Remove roast from pan and pour off any fat. Place over high heat (use 2 burners if necessary) and deglaze pan with wine and broth, scraping any bits stuck to the bottom of the pan with a wooden spoon or spatula. Once these solids are dissolved, pour liquid into a saucepan and add the bay leaf and peppercorns. Reduce for 5 minutes over high heat or until reduced by 1/3.
  • At this point you basically have a jus which could be used to sauce your roast. To create a gravy, reduce the heat to medium and whisk in 2 tablespoons of white roux. Return to a simmer, whisking constantly. Continuing to cook once a simmer has been reached will result in a smoother sauce, but not a thicker one.
  • Since all starch thickened sauces thicken as they cool, it's a good idea to make your gravy a little on the loose side.

2 tablespoons canola oil
4 medium carrots, halved lengthwise and cut into 2-inch pieces
3 medium potatoes, peeled and cut into chunks
2 small onions, sliced
1/2 cup water
6 to 8 tablespoons horseradish sauce
1/4 cup red wine vinegar
1/4 cup Worcestershire sauce
2 garlic cloves, minced
1-1/2 to 2 teaspoons celery salt
3 tablespoons cornstarch
1/3 cup cold water

Steps:

  • In a large skillet, brown roast on all sides in oil over medium-high heat; drain. Place carrots and potatoes in a 5-qt. slow cooker. Top with meat and onions. Combine the water, horseradish sauce, vinegar, Worcestershire sauce, garlic and celery salt; pour over meat. Cover and cook on low until meat and vegetables are tender, about 8 hours., Combine cornstarch and cold water until smooth; stir into slow cooker. Cover and cook on high until gravy is thickened, about 30 minutes.

1 can (4 ounces) mushroom stems and pieces, drained
1 beef rump roast or bottom round roast (3 pounds)
1/2 teaspoon garlic powder

1 jar (12 ounces) beef gravy
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup water

My 5 Hour Rump Roast and Gravy image

This is the easiest and tastiest roast beef I've ever had. I've been making it for 20 years with great result. This recipe also has a recipe for what to do with the leftover roast beef which is my favorite part. It's simple and sometimes the simple things are the best, hope you enjoy! 5 lbs rump roast
1 package lipton's beefy onion soup
1 cup hot water
1 1/2 cups beef broth

Steps:

  • Place roast in dutch oven.
  • Mix soup mix with one cup of hot water, stir to dissolve and then add the beef broth.
  • Pour over roast-if a lot of the onions end up on top of the roast just scrape them off and into the broth.
  • Heat oven to 300 degrees.
  • Place in oven for approximately 5 hours-depending on oven. Mine cooks it perfect at 5 hours. Flip roast over halfway through cooking.
  • Remove from oven.
  • GRAVY:.
  • Put 2 1/2 tablespoons of butter in skillet on medium high heat, Once melted and hot, add 2 1/2 tablespoons of flour and stir till it's a golden color. Add 1 cup of the broth from the roast pan and whisk, add addiional beef broth until desired consistentcy.
  • I serve my roast with mashed potatoes with lots of pepper, which I make extra just for the leftovers, and corn -- YUMMY!
  • LEFTOVER:.
  • I take the leftover roast beef and shred it in the pan I cooked it in keeping the leftover broth in the pan.
  • Add the leftover mashed potatoes, leftover gravy, and add beef broth to desired consistency-make sure you have lots of broth because once you add the noodles you'll need the extra liquid. Bring to a boil and add Mrs Reames frozen noodles-amount of noodles will depend on how much meat you have leftover . Once it reboils, turn heat down and simmer for about an hour and a half. I don't add more seasoning to this but feel free to add what you like.

3 1/2 pounds beef rump roast
3 1/2 cups water, divided
2 envelopes Lipton Beefy onion soup
1/2 cup plain flour

Steps:

  • Pour a little oil or spray in bottom of heated iron skillet. Sear the roast on all exposed surfaces, being careful not to puncture the roast. It is not necessary to brown the roast; searing seals in the juices. Place the roast in an enamel roasting pan. Pour 2 cups water in skillet and sprinkle with soup. Stir with a metal spatula. Pour mixture over the roast and put cover on pan. Place in 350° oven and cook for approximately 2 1/2 hours (about 45 minutes per pound) or until fork-tender. Remove roast to platter or serving plate, reserving the juices. With a wire whisk, gradually add remaining 1 1/2 cups water to flour, and mix until smooth. Pour reserved juices from roasting pan into a saucepan. Slowly add flour/water mixture, stirring rapidly to prevent lumping. Heat. It may be necessary to add more water if gravy is too thick. You may add a little Kitchen Bouquet to the gravy for a richer color (usually not necessary). The roast will cut more evenly if it has cooled for 20-30 minutes. For as long as I can remember, my mother has been fixing the perfect rump roast. It is by far my favorite meal. Served with rice and gravy, I am one happy camper. I love mine rare. Lately I have been fixing one on Sunday, having my Sunday meal and then I have the rest to eat on all week long. Life doesn't get any better. One thing my mom used to always remind me was to take your meat out well before you are going to cook it so it gets to room temperature.

1 (4 lb) rump roast (room temp.)
3 garlic cloves
1 tablespoon salt
1 tablespoon pepper
1 onion

Steps:

  • DO NOT USE A GLASS PAN FOR THIS RECIPE.
  • Pre-Heat the oven to 500 degrees.
  • Prep the roast by making 4-5 slits in the roast and filling the holes with salt, pepper and 1/2 of a clove of Garlic.
  • Now Salt and Pepper the rest of the roast.
  • Put the Roast in the oven and sear for 20 minutes.
  • Then add the water, the chopped onion and reduce the temperature to 275 degrees.

This easy roast beef recipe with carrots and a simple gravy is ideal for a stunning Sunday dinner for the family. It takes just 15 minutes to prepare

1 tsp plain flour
1 tsp mustard powder
950g beef top rump joint (see tip below)
1 onion, cut into 8 wedges
500g carrots, halved lengthways
1 tbsp plain flour
250ml beef stock

Steps:

  • Heat oven to 240C/220C fan/gas 9.
  • Mix 1 tsp plain flour and 1 tsp mustard powder with some seasoning, then rub all over the 950g beef top rump joint.
  • Put 1 onion, cut into 8 wedges, and 500g carrots, halved lengthways, into a roasting tin and sit the beef on top, then cook for 20 mins.
  • Reduce oven to 190C/170C fan/gas 5 and continue to cook the beef for 30 mins if you like it rare, 40 mins for medium and 1 hr for well done.
  • Remove the beef and carrots from the oven, place onto warm plates or platters and cover with foil to keep warm.
  • Let the beef rest for 30 mins while you turn up the oven to cook your Yorkshire puds and finish the potatoes.
  • For the gravy, put the tin with all the meat juices and onions back onto the hob.
  • Stir in 1 tbsp plain flour, scraping all the stuck bits off the bottom of the tin. Cook for 30 seconds, then slowly stir in 250ml beef stock, little by little.
  • Bubble to a nice gravy, season, then serve with the beef, carved into slices, carrots and all the other trimmings.

Roast like grandma used to make and easy gravy. This is a recipe my grandmother has made for years. I love the gravy that goes with this! Serve with mashed potatoes and your favorite vegetables!

2 tablespoons olive oil
1 (3 pound) beef sirloin tip roast
1 onion, chopped
4 cloves garlic, minced
2 cups brewed coffee
1 ½ cups water
2 cubes beef bouillon
6 basil leaves
1 tablespoon salt
1 teaspoon ground black pepper
½ cup all-purpose flour
½ cup water
salt to taste

Steps:

  • Heat olive oil in stock pot over medium heat; sear roast in the hot oil until slightly browned, about 2 minutes per side. Remove roast from pot and place on a plate. Cook and stir onion and garlic in the hot oil until onion is lightly browned, 10 to 15 minutes.
  • Return seared roast to the stock pot; pour coffee and 1 1/2 cup water over roast. Add beef bouillon, basil leaves, 1 tablespoon salt, and pepper.
  • Bring broth to a boil; reduce heat to medium low, cover stock pot, and simmer until meat is falling apart, 2 to 3 hours. Remove and discard basil leaves. Transfer roast to a serving dish and cover with a lid or aluminum foil, keeping the broth in the stock pot over medium heat.
  • Whisk flour and 1/2 cup water together in a bowl until smooth. Slowly whisk flour mixture into broth until gravy is smooth and somewhat clear; season with salt. Pour about half the gravy over the roast and pour the rest into a gravy boat for serving.
