WATERMELON RUM COCKTAIL



Watermelon Rum Cocktail image

Shake rum and orange liqueur with lime juice and pureed watermelon for a seriously refreshing cocktail.

1 1/3 cups diced seedless watermelon
1/2 cup rum, white or dark
2 tablespoons orange-flavored liqueur, such as triple sec
Juice of 1 lime (about 2 tablespoons)
2 thin lime rounds, for garnish (optional)

Steps:

  • Puree the watermelon in a blender until very smooth. Pour into a cocktail shaker filled with ice and add the rum, liqueur and lime juice. Shake vigorously and strain into 2 ice-filled cocktail glasses. Garnish each with a lime round if using.

1 seedless watermelon
1 ½ cups rum, or as needed

Steps:

  • Rinse the outer rind of the watermelon thoroughly, and pat dry. Set the watermelon in a position so it will not roll over. Press the tip of a funnel through the rind of the melon. If using a plastic funnel, you may need to cut a hole.
  • Situate the melon on a towel in the bottom of the refrigerator or on the counter. Pour rum into the funnel a little at a time, refilling as it seeps into the melon. I start the afternoon before, since we usually leave to go to events in the morning. Allow the melon to marinate at least a few hours, before removing the funnel. Slice just before serving.

We bought a watermelon a little too early in the year and the flavor wasn't up to snuff. This is a handy dish to bring to parties or an afternoon of decadent lounging by yourself.

1/2 large watermelon
2 cups fruit juice (Sunny D, Tampico, crystal light, white grape, etc.)
1 cup rum (spiced or fruit flavored are nice)

Steps:

  • Place watermelon on its side and make vertical slices of your desired thickness.
  • Cut these slices into quarters and stack to fit in a large non-reactive bowl.
  • In separate bowl, mix the rum and citrus beverage (we used Mango Tampico and Bacardi Superior for irony's sake).
  • Pour this mixture over the watermelon slices, making sure that all the slices are immersed/covered.
  • Cover the bowl with plastic wrap and put it in the fridge overnight.
  • Serve the slices on a plate (keep in mind that they will leak the mixture as they warm, so cover them if you'll be traveling with the plate to avoid spillage).
