Cranberry Orange Pound Cake With Butter Rum Sauce image

Got this recipe from a Nov. 1990 issue of Classic Pillsbury Cookbooks and have been making it ever since. I have made this dessert a Christmas tradition in our household (though have also served it for other special occasions). Everyone who has sampled it gives it a "thumbs up".

2 3/4 cups sugar
1 1/2 cups butter or 1 1/2 cups margarine, softened
1 teaspoon vanilla
1 teaspoon orange zest
6 eggs
3 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 (8 ounce) carton sour cream
1 1/2 cups chopped fresh cranberries or 1 1/2 cups frozen cranberries (do not thaw)
1 cup sugar
1 tablespoon flour
1/2 cup half-and-half
1/2 cup butter
4 teaspoons light rum or 1/4 teaspoon rum extract

Steps:

  • Heat oven to 350 degrees.
  • Generously grease and lightly flour 12 cup fluted tube pan.
  • In large bowl, beat 2 3/4 cups sugar and 1 1/2 cups butter until light and fluffy.
  • Add vanilla and orange peel.
  • Add eggs 1 at a time, beating well after each addition.
  • In medium bowl, combine 3 cups flour, baking powder and salt.
  • Add alternately with sour cream, beating well after each addition.
  • Gently stir in cranberries.
  • Pour batter into greased and floured pan.
  • Bake at 350 degree for 65 to 75 minutes or until toothpick inserted in center comes out clean.
  • Cool 15 minutes.
  • Remove from pan.
  • Meanwhile, in small saucepan combine 1 cup sugar and 1 Tbsp flour.
  • Stir in half-and-half and 1/2 cup butter.
  • Cook over medium heat until thickened and bubbly, stirring constantly.
  • Remove from heat; stir in rum.
  • Serve warm sauce over cake.

2 tablespoons unsalted butter
3/4 cup dark brown sugar
2 tablespoons dark rum
1/2 cup heavy cream
1 small pineapple, peeled and cut in 1/2
1/4 cup canola oil
1 store-bought pound cake, cut into 1/2-inch thick slices
Vanilla ice cream, for serving
Maraschino cherries, optional

Steps:

  • Melt the butter in a small saucepan over high heat, add the brown sugar and rum and cook, whisking until the sugar has melted and the mixture is smooth. Whisk in the heavy cream and cook until heated through and slightly thickened. Transfer the mixture to a bowl, keep warm.
  • Heat the grill to high.
  • Brush the pineapple on both sides with the oil and place on the grill. Grill until golden brown and caramelized on both sides, about 6 minutes. Remove from the grill, stack the slices and cut into chunks. While the pineapple is grilling, place the pound cake on the grill until lightly golden brown on both sides, about 20 seconds on each side. Remove the pineapple from the grill and, when cool enough to handle, either slice or cut into chunks.
  • Top each piece of pound cake with some of the pineapple and drizzle with the caramel-rum sauce. Top with more pound cake, vanilla ice cream and a maraschino cherry, if desired.

1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups (2 1/2 sticks) unsalted butter, room temperature

5 large eggs
7 tablespoons dark rum
2 teaspoons vanilla extract
1/2 cup powdered sugar
2 teaspoons whipping cream

Steps:

  • Preheat oven to 350°F. Butter and flour 12-cup Bundt pan. Toss raisins with 2 tablespoons flour in small bowl. Combine remaining flour, baking powder and salt in medium bowl. Using electric mixer, beat butter in large bowl until light. Add 1 2/3 cups sugar and beat until fluffy. Add eggs 2 at a time, beating after each addition until well blended. Beat in 6 tablespoons rum and vanilla. Mix in flour mixture. Fold in raisin mixture. Spoon batter into prepared pan.
  • Bake cake until top is golden and tester inserted near center comes out clean, about 1 hour. Cool in pan on rack 10 minutes. Turn out cake onto rack and cool completely.
  • Stir powdered sugar and 1 tablespoon rum in bowl until smooth. Mix in cream. Spoon over cake. Let stand until glaze is set, about 30 minutes.

Steps:

  • Heat oven to 325°F. Grease and flour 12-cup fluted tube cake pan or 10-inch angel food (tube) cake pan, or spray with baking spray with flour. In large bowl, beat cake mix, dry pudding mix, water, sour cream, butter, 1/4 cup rum, the orange peel and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes. ½ cup vegetable oil

5 eggs
1 box moist pineapple cake mix
1 cup sour cream
1 cup evaporated milk
1 cup flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 12 cup Bundt pan with shortening, dust with flour, and shake out excess. Place on a baking sheet lined with aluminum foil.
  • Cream together butter and oil in a large mixing bowl until fluffy, about 1 minute. Slowly pour in 1 cup of sugar and continue to beat until fluffy, about 2 to 3 minutes. 1 1/2 cups golden raisins
1/2 cup dark rum
3 sticks (1 1/2 cups) unsalted butter, at room temperature, plus more for the pan
2 1/4 cups sifted all-purpose flour, plus more for the pan
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 2/3 cups granulated sugar
6 large eggs, at room temperature
2 teaspoons pure vanilla extract
1 cup confectioners' sugar
2 tablespoons unsweetened coconut milk
1/2 cup unsweetened shredded coconut (see Cook's Note)

Steps:

  • Combine the raisins and rum in a small bowl and soak for several hours or overnight.
  • Preheat the oven to 350 degrees F. Butter and flour a 12-cup Bundt pan or ring pan.
  • Combine the flour, baking powder and salt in a medium bowl. Set aside.
  • Beat the butter in the bowl of an electric mixer until light and fluffy. Gradually beat in the sugar. Beat until fluffy, 2 to 3 minutes.
  • Beat in the eggs 2 at a time, beating well after each addition. Add the vanilla and beat on low to combine. With a rubber spatula, gently fold in the flour mixture. Fold in the raisins with their soaking liquid.
  • Pour the batter into the prepared pan. Bake until the top is golden and a cake tester or toothpick inserted in the middle comes out clean, about 1 hour.
  • While the cake is baking, make the glaze: Whisk the confectioners' sugar and coconut milk together in a small bowl until there are no lumps; add more coconut milk or sugar to reach the consistency of school glue.
  • Cool the cake in the pan on a wire rack for 5 minutes. Remove the cake from the pan and place on the rack. While the cake is still warm, drizzle the coconut glaze over the top and sprinkle with the shredded coconut.

Steps:

  • Preheat oven to 325 degrees. Spray bundt cake pan with baking spray/flour.
  • In a large bowl, beat butter, shortening, and sugar at medium speed with electric mixer, until light and fluffy. Add eggs, one at a time, beating well after each addition.
  • With a wooden spoon, add flour in 4 parts, alternating with buttermilk, beginning and ending with flour. Stir to combine.
  • Add rum and vanilla, stirring to combine. Place batter in pan.

1/3 cup sour cream
1/3 cup milk
24 tablespoons unsalted butter, very soft
3 1/2 cups flour (or cake flour)
3 cups sugar
3/4 teaspoon salt
1/2 teaspoon baking powder
7 eggs

1/4 cup coarsely chopped crystallized ginger
1/4 cup coarsely chopped dried apricot
2 tablespoons dark rum
2 tablespoons water
3/4 cup sugar

Steps:

  • To ensure all the ingredients are at room temperature, set them out at least 2 hours before making the batter.
  • Position a rack in the lower third of an oven and preheat to 325°F
  • Thoroughly grease and flour a 10-cup fleur-de-lis cake pan or standard Bundt pan.
  • In a small bowl, whisk together the sour cream and milk until blended; set aside.
  • Place the butter in the bowl of an electric mixer and sift the flour, sugar, salt and baking powder over the butter.
  • Add the eggs, vanilla and sour cream mixture. Fit the bowl on the mixer and, using the paddle attachment, beat on low speed until the mixture is creamy and smooth, 1 1/2 to 2 minutes.
  • Stop the mixer and scrape the sides of the bowl occasionally.
  • Remove the bowl from the mixer and, using a large spatula, gently fold the ginger and apricots into the batter.
  • Spoon the batter into the prepared pan, spreading the batter so the sides are higher than the center.
  • Bake until the cake begins to pull away from the sides of the pan and a toothpick inserted into the center comes out clean, about 1 hour and 15 minutes.
  • Transfer the cake to a wire rack and cool upright in the pan for 10 minutes.
  • Tap the sides of the pan and invert the cake out onto the rack. Set the rack over a sheet of waxed paper.
  • To make the glaze, in a small bowl, whisk together the rum, water and sugar until blended.
  • Using a pastry brush, generously brush the surface of the warm cake with the glaze.
  • Let the glazed cake cool completely, 1 to 2 hours, before serving.
  • Serves 16.

4 1/2 c white lily all purpose flour
1 lb box powdered sugar
8 large eggs room temperature
2 tsp vanilla bean paste or vanilla extract
1 Tbsp coconut extract
1 Tbsp carribean rum coconut liqueur or rum extract
2 tsp pineapple extract
1 Tbsp baking powder
1 1/2 c unsweetened coconut(adding flavor without the sugar)
2 small boxes cheesecake pudding mix
1 c evaporated milk
3 stick butter, softened room temperature
1/2 c sour cream room temperature
CARIBBEAN RUM CREAM CHEESE COCONUT FROSTING
1 stick butter softened, room temperature
1 lb powdered sugar
8 oz cream cheese softened
2 tsp coconut extract
1 tsp pineapple extract
1-2 Tbsp evaporated milk, or as desired to reach spreading consistency
1 1/2-2 c sweetened shredded coconut (enough for sides & generous amount on top)
pineapple slices halved as desired for top of cake
maraschino cherry halves as desired for garnish
2 tsp caribbean coconut liqueur

Steps:

  • 1. NOTE: PLEASE MAKE SURE THERE IS AT LEAST 1 1/2 -2 INCHES OF SPACE LEFT OVER WHEN FILLING CAKE PAN TO ALLOW FOR CAKE TO RISE. Preheat the oven to 325 degrees F. Use at least a 12 cup cake pan or preferably larger like a 16 cup.
  • 2. If YOU ARE NOT USING WHITE Lily CAKE FLOUR OMIT THE ADDITIONAL 1/2 CUP AND JUST USE 4 CUPS. WHITE Lily IS A winter wheat flour, and is lighter in volume than regular all purpose flour. It does make a difference in the texture of the cake.
  • 3. Mix pudding with flour & Baking powder.
  • 4. Set aside till needed.
  • 5. Cream butter with powdered sugar, & sour cream till creamy and smooth.
  • 6. Add eggs one at a time, beating well after each addition, until all have been added.
  • 7. Gradually blend in flour mixture alternately with evaporated milk in 3 increments
  • 8. Combine all of the extract flavorings & Rum in a small bowl and add at once to cake batter, beating well after adding.
  • 9. Now add unsweetened coconut and blend again.
  • 10. Spray cake pan with bakers Joy. Then pour batter into prepared pan, & bake in preheated 325 degree oven approximately 1 1/2 hours or until tooth pick inserted into center of cake comes out clean. Allow cake to cool at least 10 minutes till it pulls away from sides of cake pan then invert onto cooling rack or cake platter. Frost as desired.
  • 11. To Prepare frosting, add softened butter & cream cheese to medium size bowl, & beat to blend together. Then add the powdered sugar, and starting on low speed beat until powdered sugar is blended into butter mixture, then add extracts and beat again. Add evaporated milk 1 tablespoon at a time till spreading consistency is reached. Then frost cake and top both sides and top with shredded coconut. Garnish with pineapple slices, and maraschino cherries as desired.
  • 12. Now frost Cake with this delicious icing and enjoy. Decorate with Pineapples, Cherries and shredded coconut as I did or as desired.

1/2 cup dark brown sugar

2 tablespoons light corn syrup

3 tablespoons canned evaporated milk
3/4 cup dark brown sugar (packed)
1 tablespoon rum flavoring

Steps:

  • Preheat oven to 325 Grease and flour a 10" tube pan Cream butter and sugars until very light and fluffy.
  • Add eggs one at a time, beating well after each.
  • Combine dry Add alternately with milk&vanilla starting adn ending with dry.
  • Beat well with each addition Fill prepared pan and bake for 1 hour and 35-40 minutes, or until toothpick comes out clean.
  • Cool completely, remove from pan.
  • Serve with sauce or glaze Rum sauce: Combine everything in a heavy saucepan.
  • Bring to a boil over medium heat, stirring occasionally.
  • Cover and continue to boil for 1 minute to wash crystals down side of pan.
  • Uncover and continue to boil for 3-4 minutes.
  • Let cool slightly.
  • Serve over slices of cake.
  • Rum Glaze Put all in a small heavy pan.
  • Let it cook, stirring occasionally til mixed well.
  • I let it cook a couple more minutes until it was thickened.
  • Pour over top of cake.

2 1/3 cups sifted cake flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1 cup unsalted butter (2 sticks)
1 1/2 teaspoons freshly grated navel orange rind
1/2 teaspoon freshly grated lemon rind
1 cup superfine sugar or 1 cup strained sugar
4 large eggs
1 teaspoon vanilla extract
1/3 cup dark rum, preferably Jamaican

Steps:

  • Preheat oven to 350°; butter an 8- or 9-inch flat-bottomed tube pan; dust with all-purpose flour, invert over the kitchen sink, and tap to remove excess.
  • To soften the raisins--place in a steam basket in a medium saucepan and steam for 1 minute over boiling water (do not submerge the raisins or they will absorb too much water).
  • Spread them out over several layers of paper towels and dry thoroughly.
  • Using a triple sifter, sift together the flour, baking powder, salt, and cinnamon; set aside.
  • Cut the butter into 1-inch pieces and place it along with the rinds in the bowl of an electric stand mixer fitted with paddle attachment.
  • Soften on low speed.
  • Increase speed to med-high and cream until smooth and light in color, about 1 1/2 to 2 minutes.
  • Add in sugar, 1 tablespoon at a time, taking 6-8 minutes to blend it in well; scrape the sides of the bowl occasionally.
  • Add in eggs, 1 at a time at 1-minute intervals, scraping the sides of the bowl again.
  • Blend in the vanilla.
  • Decrease mixer speed to low; add the dry ingredients in three additions alternately with the rum in two additions, mixing until incorporated after each addition; mix the batter for 15 seconds longer.
  • Remove bowl from mixer and fold in raisins with a rubber spatula.
  • Spoon batter into prepared pan; smooth the surface with the back of a tablespoon.
  • Center the pan on the rack and bake for 45-50 minutes, or until the cake is golden brown on top and begins to come away from the sides of the pan; or toothpick inserted into the center comes out dry.
  • Remove cake from oven; set on a cake rack for 10-15 minutes; invert cake onto a rack and remove the pan.
  • Turn cake top side up onto a second cake rack to cool at room temperature.
  • Cut a double thickness of cheesecloth to measure approximately 18 x 24 inches.
  • Saturate in 1/4 cup dark Jamaican rum; open the rum soaked cheesecloth and stretch flat on an 18-inch square of heavy-duty foil; arrange cake in the center of the cheesecloth.
  • Wrap the cloth over the cake by lifting the ends and bringing them to the center.
  • Then wrap tightly in foil; place the cake in a plastic bag and seal; let stand at room temperature overnight.
  • The following day, remove the foil and unwrap the cake; remoisten the cheesecloth with an additional 1/4 cup rum; rewrap the cake in the cheesecloth and foil and return to the plastic bag to age for 2-3 days or up to 10 days.
  • It is not necessary to remoisten the cheesecloth after the second day.
  • Wrap leftover cake in the cheesecloth; store in plastic wrap or foil at room temperature for up to 10 days.

1/4 cup dark rum
1/4 cup honey
2 tablespoons orange juice
1/4 teaspoon ground cinnamon
1 pineapple, peeled and cored
1 poundcake, sliced into 1 inch thick slices and then halved
2 tablespoons butter, melted
1 pint vanilla ice cream
1/4 cup shredded coconut, lightly toasted

Steps:

  • In a small saucepan whisk together rum, honey, orange juice and cinnamon.
  • Simmer over medium heat 3-5 minutes, until thick and syrupy.
  • Remove from heat and let cool slightly.
  • Cut the pineapple into half, lengthwise and then cut each half into six long wedges; you will have 12 pieces.
  • Brush the pineapple wedges with the glaze and place on tray.
  • Brush melted butter over each side of pound cake slices.
  • Barbecue pineapple over medium heat, brushing frequently with glaze and turning occasionally, until caramelized and golden.
  • Barbecue pound cake slices, 2 minutes per side, until toasty and warm.
  • Serve grilled pineapple and pound cake with scoops of vanilla ice cream sprinkled coconut, and drizzled with remaining rum and honey glaze.

APRICOT-ALMOND-RUM POUND CAKE

I got this recipe from my Mom's recipe collection. Flecked with apricot bits and flavored with rum and almonds, this is a moist and delicious pound cake. The recipe calls for light rum, but I have used dark rum and it was just as delicious. If you have the willpower, the cake tastes even better if wrapped when cool, and left overnight before cutting. I didn't name the recipe, but I don't know if I would classify this as a Pound Cake as it is quite light, just a bit denser than an angel food cake IMHO.

2 tablespoons butter, for greasing tube pan (you may not need whole 2 tbsp.)
1/4 cup ground almonds
1 cup dried apricot, chopped (or snipped with kitchen shears dipped in flour to prevent sticking)
1/4 cup light rum
3/4 cup butter, at room temperature
1/2 cup almond paste, broken up
1 cup sugar, divided
6 eggs, separated
1 1/2 cups all-purpose flour
1/2 teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F.
  • Butter a 9 inch tube pan generously, and dust with ground almonds.
  • Combine apricots with rum and set aside.
  • In a large mixing bowl, cream butter with almond paste and 1/2 cup sugar.
  • Add egg yolks and beat until light and fluffy.
  • Mix in apricots in rum and almond extract until well blended.
  • Mix in flour until well blended, but don't over mix.
  • In another bowl beat egg whites until fluffy.
  • Into the egg whites, gradually beat in remaining 1/2 cup of sugar until stiff and shiny.
  • Mix 1/3 of the egg whites into the creamed mixture.
  • Carefully fold in the remaining egg whites until well blended but not overmixed.
  • Pour batter into prepared pan.
  • Bake for 60-65 minutes, or until a cake tester inserted in the center comes out clean and cakes slightly pulls away from side of pan. I start checking at about 55 minutes.
  • Note* The Rum flavor is faint, but complimentary. If you want a more pronounced rum flavor, sub rum extract for the almond extract.

  • To prepare cake, coat an 8 x 4 inch loaf pan with cooking spray; dust with 2 tablespoons flour.

1 pkg duncan hines yellow cake mix
1 pkg vanilla instant pudding
4 eggs
1/2 c cold water
1/2 c vegetable oil
1/2 c dark rum
FOR GLAZE:
1 stick unsalted butter
1/4 c water
1 c brown sugar
1/2 c rum

Steps:

  • 1. Preheat oven to 325. Prepare bundt pan with cooking spray. Sprinkle nuts in bottom of cake pan. Mix cake ingredients together. Pour batter over nuts. Bake one hour. Cool and invert onto serving plate.
  • 2. Prepare glaze: Melt butter in saucepan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat. Stir in rum.
  • 3. Prick holes in top of cake with fork. Drizzle and smoothe glaze over top and sides of cake. Allow cake to absorb glaze. Repeat until glaze is used up.
