16 ounces frozen whole kernel corn
6 ounces fat free cream cheese
1/2 cup heavy whipping cream
8 tablespoons Splenda sugar substitute
1/4 teaspoon black pepper
1/8 cup unsalted butter

Steps:

  • Spread corn over bottom of a crockpot or slowcooker.
  • Top with cream cheese, cubed into pieces.
  • Mix remaining ingredients together and pour over corn.
  • Cover and cook on high heat for 2-3 hours till creamy. Stir occasionally as it cooks.

I'm posting this here for safe keeping as I have already misplaced this recipe at least 4 times. This is supposed to taste just like the creamed corn served at a popular BBQ restaurant in San Antonio, Texas called Rudy's. Since I've never eaten at Rudy's I cannot say for certain whether it does or doesn't taste like theirs. The directions that were provided were not very detailed.

2 (16 ounce) packages frozen corn (cook corn as directed on package)
12 ounces butter
12 ounces cream cheese
4 tablespoons sugar
1/2 cup half-and-half
1/4 cup flour (optional)

Steps:

  • Put all ingredients except half and half in large pot and simmer until heated through.
  • Add 1/2 cup half and half.
  • Simmer again until all ingredients heated through.
  • You can add 1/4 cup flour to thicken if desired.

4 pounds frozen sweet corn
2 (8-ounce) blocks cream cheese, diced into 1 inch squares
1 (4-ounce) stick of salted butter
3/4 cup heavy whipping cream
4 tablespoons of sugar
1 teaspoon black pepper
1/2 teaspoon salt

Steps:

  • Throw all the ingredients into a crockpot on medium or low for at least 4 hours. If you need it done faster, cook it on the stove or on high in the crockpot, but be prepared to sacrifice a little of the savory goodness that results when corn is allowed to soak in dairy for hours. All of the cream cheese pieces should be completely melted and will easily break down and combine with the cream and butter to make the 'gravy'. Do not over-salt. There is plenty of salt in the butter and cream cheese. Over-salting will ruin this dish.
