Rubs can be applied just before cooking, but for a more pronounced flavour, apply your rub and refrigerate for several hours. When a rub is applied and is tightly wrapped and refrigerated for 12-24 hours, the flavour will infuse the meat. I have found that kosher salt is the best to use as the sharp pieces of salt, when rubbed, permeate the meat more efficiently.

4 tablespoons brown sugar
4 tablespoons kosher salt (or table salt)
2 tablespoons paprika
1 tablespoon mustard powder
1/2 teaspoon ground black pepper
1 pinch dried oregano
1 pinch dried thyme
1/2 teaspoon cumin powder
1 tablespoon garlic powder
1 tablespoon onion powder

Steps:

  • Mix all the ingredients together in a bowl. Store in an airtight container.
  • NOTE: To make this a wet rub, simply add 1 tablespoons lemon/lime juice and 1 tablespoons olive oil.

4 beef t-bone steaks (or up to 10 depending on size and how you like yours seasoned)
1 tablespoon canola oil
1 teaspoon paprika
1 teaspoon beef bouillon granules
1 tablespoon cornstarch or 1 tablespoon flour
4 teaspoons garlic powder
4 teaspoons kosher salt
4 teaspoons cracked black pepper
1 teaspoon dried oregano

Steps:

  • Blend all dry ingredients together and rub into both sides of at least 4 t-bone steaks.
  • Heat 1 tablespoon canola oil in large skillet at fairly high heat.
  • Cook steaks for 5 minutes; turn, drop heat to medium and continue cooking for approximately 10 minutes for medium-rare, depending on the thickness of your steaks.

4 teaspoons salt, or to taste
2 teaspoons paprika
1 ½ teaspoons ground black pepper
¾ teaspoon onion powder
¾ teaspoon garlic powder, or to taste
¾ teaspoon cayenne pepper, or to taste
¾ teaspoon ground coriander, or to taste
¾ teaspoon ground turmeric, or to taste
4 (16 ounce) t-bone steaks, at room temperature

Steps:

  • Preheat an outdoor grill for high heat, and lightly oil the grate. Stir the salt, paprika, black pepper, onion powder, garlic powder, cayenne pepper, coriander, and turmeric together in a small bowl; set aside.
  • Rub the steaks on all sides with the seasoning mixture. Cook on the preheated grill to your desired degree of doneness, 3 to 3 1/2 minutes per side for medium-rare. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).

2 beef T-bone steaks, 1 1/2 inches thick and about 1 1/2 pounds each
1 garlic clove, cut in half
2 teaspoons black peppercorns, crushed
1/4 cup butter or margarine, softened
1 tablespoon Dijon mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon lime juice
Salt and pepper to taste, if desired

Steps:

  • Trim fat on beef steaks to 1/4-inch thickness. Rub beef with garlic. Press pepper into beef. Cover and refrigerate 1 hour. Mix butter, mustard, Worcesershire sauce and lime juice; reserve.
  • Heat coals or gas grill for direct heat. Cover and grill beef 4 to 5 inches from medium heat 16 to 18 minutes for medium doneness, turning halfway through grilling. Sprinkle with salt and pepper.
  • Place beef on warm platter; remove bone. Cut beef at slanted angle into thin slices. Serve with butter mixture.

1 bottle ranch dressing
1 lb bacon
1 lb grated cheddar cheese
10 medium potatoes
salt and pepper

Steps:

  • Boil potatoes until soft.
  • Slip peels off and cube potatoes.
  • Salt and pepper potatoes to taste.
  • Fry bacon until crisp, saving bacon grease.
  • Crumble bacon and set aside.
  • Brown cubed potatoes in bacon grease and set aside.
  • Pour bottle of Ranch Dressing onto an oven safe platter.
  • Pile potatoes on top of dressing.
  • Crumble bacon over potatoes and spread cheddar over potatoes.
  • Broil in oven until cheese melts.
  • Serve as a side or an appetizer.

4 tablespoons hoisin sauce
2 tablespoons dark sesame oil
2 teaspoons chili-garlic sauce
4 garlic cloves, minced
2 tender steaks, 1-inch thick
2 -4 tablespoons chopped parsley (optional)
2 teaspoons toasted sesame seeds

Steps:

  • In ziploc baggie, combine first 5 ingredients.
  • Add steaks, turn bag over and over to coat both sides of each steak well.
  • Marinate in fridge for 30 minutes to overnight.
  • Heat broiler, remove steaks from bag saving marinade.
  • Place steaks on lightly geased broiler pan.
  • Spoon half of the marinade on steaks.
  • Broil 4-6 inches from heat for 4 minutes.
  • Turn steaks over, top with rest of marinade, and broil 4-5 minutes longer for medium rare.
  • Plate, and sprinkle with sesame seeds and parsley.
  • *Let rest 5 minutes before eating.
  • You can also slice this thinly and serve over rice or make wraps.
  • These can also be cooked on a grill.

1/4 cup olive oil
2 tablespoons lemon juice
2 tablespoons soy sauce
1 tablespoon sugar
