Old Fashioned Beef Cube Steak with Tomato Gravy image

Old Fashioned Cube Steak with Tomato Gravy is an old-timey dish inspired by Mom's roast beef recipe. I'm also paying homage to my Midwestern roots where hearty meals are a staple. A family favorite served with lots of mashed potatoes.

2 pounds cube steak, four pieces
1 large onion, cut into slices
1 large yellow, red, or green pepper, cut into strips
2-3 cloves garlic, minced
1 15oz can stewed tomatoes
1 beef bouillon cube plus one cup water OR 1 cup reduced-sodium beef stock
2 Tablespoons olive oil
1/2 teaspoon crushed red pepper
1 teaspoon dried basil
Flour
Salt & Pepper

Steps:

  • Pat dry cube steaks with a paper towel. Sprinkle with salt & pepper on both sides. Dust with flour on both sides.
  • Add 2 Tablespoon olive oil to a 12" heavy-bottomed skillet. Bring to heat over medium-high heat.
  • Add cube steaks to the skillet, two at a time, and brown. As the meat browns, remove to a plate or to the skillet's inverted lid.
  • Once all the meat is browned, reduce skillet heat to medium. Add onion, sliced pepper, crushed red pepper and garlic. Stir and saute for 5 minutes.
  • Add stewed tomatoes, bouillon cube, and water OR beef stock, and dried basil. Bring to simmer and cook for 5-10 minutes until tomatoes are soft.
  • Return cube steaks to the skillet along with accumulated meat juices. Ladle the tomato/vegetable mixture over the meat. Reduce to slow simmer. Cover with lid. Cook for 30 minutes.
  • Remove meat to a platter. (Optional: Mash vegetables and gravy.) Pour tomato gravy over cube steak OR plate individually and ladle tomato gravy over meat.
  • Serve with plenty of mashed potatoes and any green vegetable.

1 tablespoon oil
2 cups water
8 ounces tomato sauce
1 teaspoon cumin
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons flour
1/4 cup water

Steps:

  • Brown steak in oil in dutch oven.
  • Mix water, tomato sauce and seasonings.
  • Pour over steak; bring to a boil.
  • Reduce heat, cover, and simmer for 1-1/2 hours.
  • Mix flour and water; stir into steak.
  • Bring to a boil, boil for 1 minute.
  • Serve with rice or mashed potatoes.

½ cup all-purpose flour
2 teaspoons ground paprika
2 teaspoons onion powder
¾ teaspoon garlic powder
3 tablespoons oil
2 pounds beef round steak, cut into serving-size pieces
½ cup diced onion
1 (10.75 ounce) can condensed cream of chicken soup
1 cup beef broth
1 cup water
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Combine flour, paprika, onion powder, and garlic powder in a resealable plastic bag; shake to mix. Add beef a few pieces at a time and shake to coat.
  • Heat oil in a Dutch oven over medium-high heat. Add beef and brown on both sides, 5 to 7 minutes. Transfer beef to a baking pan and keep warm.
  • Saute onion in the beef drippings in the Dutch oven; cook until tender, about 5 minutes. Stir in cream of chicken soup, beef broth, water, and pepper. Bring gravy to a boil. Remove from heat.
  • Pour gravy over beef in the baking pan. Cover with aluminum foil.

This is one of the first recipes I learned to cook when I was a teenager. Mom taught me to cook over the phone, after I got home from school every day. She was working and I didn't think about it at the time, but later I realized my calls were reassuring to her, since she knew I was safely home. Even when Mom told me how to do it, I nearly always tweaked it! Most of the time, it turned out okay. Mashed potatoes and biscuits are perfect with this, along with a vegetable.

Number Of Ingredients 10

1 (2 1/2 pound) tenderized round steak, cut into 6 pieces
salt and ground black pepper to taste
1 cup all-purpose flour, divided
1 teaspoon garlic powder, or to taste
½ cup cooking oil, divided
1 large onion, sliced
1 cup water
1 teaspoon beef base (such as Better than Bouillon®)
1 teaspoon Worcestershire sauce
2 cups milk

Steps:

  • Sprinkle each side of the round steak pieces with salt and pepper, rubbing seasoning into the meat.
  • Combine 1/2 cup flour and garlic powder in a 1-gallon resealable bag. Add steak pieces, seal bag, and shake to evenly coat all the pieces.
  • Heat 1/3 cup of oil in a large skillet over medium heat until hot. Add seasoned and floured steak pieces to the skillet in a single layer in batches and cook until browned, 4 to 5 minutes per side. Remove from the skillet and keep warm. Repeat with remaining pieces, adding more oil, if necessary, until all are browned.
  • Add onion slices to the same skillet and stir, coating onions with pan drippings, until onion slices have separated and are just beginning to soften, about 2 minutes. Move onions to one side of the skillet and return browned steak pieces to the skillet. Spread steak evenly in the skillet and place onions on top.
  • Stir together water, beef base, and Worcestershire sauce in a microwave-safe container. Microwave on high for 1 minute, stir, and pour into the skillet. Cover, reduce heat to a simmer, and cook until the steak is tender, about 45 minutes.
  • Remove the steak from the skillet and add reserved 1/2 cup of flour to the pan drippings. Increase heat to medium; stir briskly and cook until bubbly, 2 to 3 minutes.
  • Stir in milk and keep stirring until gravy bubbles again. Return steak, onions, and any accumulated juices to the skillet, cover, and reduce heat to a simmer. Simmer, stirring occasionally, until flavors are well combined, about 10 minutes.

2 lb cube steak, minute steaks or tenderized bottom round steak
1/4 c all purpose flour
1/2 tsp garlic powder
1/2 tsp season salt
pinch black pepper
2 Tbsp canola oil
1 medium yellow onion
1 medium green or yellow bell pepper
1 medium red or orange bell pepper
1 clove garlic, chopped
1 can(s) stewed tomatoes
1 Tbsp worcestershire sauce
1/2 c red wine
1 can(s) water

Steps:

  • 1. To prepare steaks: In small container combine flour, garlic powder, black pepper and season salt. Dredge cube steaks in flour mixture and place on raised baking rack in fridge for an hour or two.
  • 2. In the meantime slice onion and peppers into julienne strips. Line bottom of casserole dish with 1/2 of onion strips set aside.
  • 3. Remove cube steaks from fridge, heat large skillet with 1T canola oil and brown the steaks on both sides. Place steaks on bed of onions. Be careful not to burn.
  • 4. When steaks are all removed from skillet add remaining onion, and peppers to the skillet. Add 1 T. canola oil and saute until tender.
  • 5. Create the gravy: Sprinkle 2T all purpose flour onto vegetables and cook for 1 to 2 minutes to remove raw flour taste. Deglaze the pan by adding wine and liquid from stewed tomatoes, mix well and let cook for another minute, add garlic, worcestershire, then slowly add water to create a thickened gravy like sauce. You may have to add a bit more or you may not use all of the water.
  • 6. Break up the tomatoes and place over the cube steaks then pour the gravy over the cube steaks and cover your casserole dish with foil. Bake @ 350 degrees for 1 1/2 hours. 2 hours makes tough cuts more tender.

This is a super easy and delicious dish using ingredients you probably have on hand. Prep time is only about 10 minutes then it goes in the oven. A great weeknight meal with rice and rolls. If you have more time, you can substitute pounded round steak, diced fresh tomatoes, sauteed sliced fresh onion and mushrooms, fresh garlic, and chopped fresh basil.

1 (10 3/4 ounce) can cream of mushroom soup
1 (14 1/2 ounce) can stewed tomatoes
1 (6 1/2 ounce) can sliced mushrooms
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1 teaspoon dried basil
2 tablespoons olive oil

Steps:

  • Mix dry seasonings (except basil) and coat steaks on both sides.
  • Heat oil in a deep skillet and brown steaks thoroughly.
  • Remove steaks to a deep baking dish that has been sprayed with non-stick spray.
  • Add mushrooms to the pan stirring to brown slightly.
  • Pour mushrooms over the steaks.
  • Add mushroom soup and undrained tomatoes to skillet and simmer, stirring to gather all browning bits from the steaks. Add basil and stir.
  • Pour tomato gravy over steaks.
  • Cover and bake in a preheated 375 degree oven for 40 minutes.
  • Serve over hot rice or noodles.
