ROSSINI COCKTAIL
The Rossini is a classic Italian cocktail similar to the Bellini. Here you add strawberry puree to Prosecco for a delicious and fun drink that's great for any ocassion!

Steps:
- Place the 2 cups strawberries and sugar in a blender or food processor. Blend on high until the strawberries are liquified. Pour the puree into a fine mesh sieve with a bowl underneath. Use a spatula to help push the strawberries through the sieve. Discard the strawberry seeds in the sieve and refrigerate the remaining puree until ready to use.
- When ready to make the Rossinis, pour about two tablespoons of the strawberry puree into a champagne flute. Fill up the the remaining glass with Prosecco, stir, and garnish with a strawberry.

BELLINI BAR

- Stir the sugar and water in a large saucepan over medium heat until the sugar dissolves, about 5 minutes. Cool completely.
- Puree the peaches and orange peel in a blender with 1/2 cup of the sugar syrup until smooth. Strain through a fine-meshed strainer and into a bowl. Cover and refrigerate. In a clean blender puree the strawberries with 1/3 cup of the sugar syrup until smooth. Strain through a clean fine-meshed strainer and into another bowl. Discard the seeds. Puree the blueberries in a clean blender with 1/3 cup of the sugar syrup until smooth. Strain through a clean fine-meshed strainer and into a third bowl. Discard the seeds and solids. Pour each of the purees into clear glass bowls or small pitchers.
- For each serving, pour 2 to 4 tablespoons of the desired fruit puree into a Champagne flute. Slowly pour enough Prosecco into the flute to fill. Gently stir to blend. Garnish with the whole berries, as desired, and serve.
- Do-Ahead Tip: The fruit purees can each be made 1 day ahead. Cover separately and refrigerate.
ROSSINI BELLINI
Strawberries take place of peaches in this version of the classic Italian drink.This recipe is adapted from Cooking Light.

- Combine sugar and water in a small saucepan, stirring until sugar dissolves. Bring mixture to a boil over medium high heat. Remove from heat.
- Place sugar mixture, strawberries, and lemon juice in a blender, process until smooth. Strain pureed mixture through a sieve into a bowl, reserving liquid. Discard solids.
- Place 3 tablespoons strawberry mixture into each of 8 champagne flutes. Pour 1/3 cup wine into each flute.
