3 tablespoons minced shallot
½ cup dry white wine
½ cup heavy cream
½ cup chicken broth
1 teaspoon lemon juice
2 teaspoons chopped fresh rosemary
salt to taste

3 tablespoons coarse grain mustard
1 tablespoon fresh rosemary, chopped
1 teaspoon lemon juice
1 teaspoon lemon rind, grated
1 teaspoon honey

Steps:

  • Beat butter until light and creamy.
  • Add all the other ingredients and mix together until well combined.
  • Spoon the butter mixture down the middle of a piece of plastic wrap, fold up the edges over the butter and roll the mixture into a log shape.
