3 cups fresh or thawed frozen cranberries, chopped
1 can (20 ounces) unsweetened crushed pineapple, drained
2 cups miniature marshmallows
1 medium apple, chopped
2/3 cup sugar
1/8 teaspoon salt
2 cups heavy whipping cream
1/4 cup chopped walnuts

Steps:

  • In a large bowl, mix first 6 ingredients. Refrigerate, covered, overnight., To serve, beat cream until stiff peaks form. Fold whipped cream and walnuts into cranberry mixture.

CLASSIC CRANBERRY SALAD

This crunchy cranberry salad is a riff on the traditional Thanksgiving staple.

Number Of Ingredients 7

4 cups fresh or frozen cranberries (14 oz.)
¾ cup packed light brown sugar
½ cup fresh orange juice (from 2 oranges)
1 cup peeled and chopped Bartlett pears (about 2 small pears)
1 cup chopped fresh pineapple (from 1 pineapple)
½ cup thinly sliced celery (from 2 stalks)
½ cup chopped toasted pecans

Steps:

  • Bring the cranberries, brown sugar, and orange juice to a boil in a large saucepan over medium-high, stirring often. Reduce heat to medium-low, and simmer, stirring occasionally, until cranberries pop and mixture thickens, 12 to 15 minutes. Remove from heat, and cool to room temperature, about 30 minutes.
  • Stir in the Bartlett pears, pineapple, celery, and pecans. Transfer to a serving bowl; cover and chill salad 4 to 24 hours.

This cranberry salad recipe is reminiscent of a Waldorf salad or a taffy apple salad. Sweet and creamy, this cranberry salad is supposedly a favorite among kids but all of the adults love it too!

1 (12 ounce) package fresh cranberries, finely chopped
½ cup white sugar
2 cups chopped apples
1 cup miniature marshmallows
½ cup chopped pecans
½ cup vanilla yogurt
1 cup frozen whipped topping (such as Cool Whip®), thawed

Steps:

  • Combine chopped cranberries and sugar in a large, nonreactive bowl. Toss well. Cover and refrigerate for 3 hours.
  • After 3 hours, stir apples, marshmallows, and pecans into cranberries. Combine yogurt and whipped topping; fold into cranberry salad. Serve immediately.

One 10-ounce bag fresh whole cranberries (about 3 cups)
3/4 cup sugar
2 cups miniature marshmallows
One 20-ounce can crushed pineapple, drained
1 cup heavy whipping cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup pomegranate seeds

Steps:

  • Pulse the cranberries in a food processor until fine and no large pieces remain. Transfer to a large mixing bowl and stir in the sugar. Cover and refrigerate for at least 2 hours or up to overnight.
  • Drain any accumulated juices from the cranberries and reserve for another use, and then stir in the marshmallows and drained pineapple and set aside.
  • Whip the heavy cream in a large mixing bowl until it begins to thicken, about 1 minute, and then beat in the powdered sugar and vanilla until soft peaks form, 3 to 5 minutes. Fold the whipped cream into the cranberry mixture, one third at a time, until fully incorporated. Transfer to an 8-by-8-inch baking dish.
  • Refrigerate or freeze for about 2 hours. Right before serving, garnish with the pomegranate seeds.

10 cups torn mixed salad greens
1 cup fresh broccoli florets
1 cup fresh cauliflowerets
1 cup (4 ounces) crumbled blue cheese
1 cup dried cranberries
DRESSING:
1/3 cup sugar
1/3 cup vegetable oil
2 tablespoons chopped onion
2 tablespoons cider vinegar
1 tablespoon jellied cranberry sauce
1/2 teaspoon salt
1/2 teaspoon Dijon mustard
1/4 teaspoon poppy seeds

Steps:

  • In a large salad bowl, combine the first five ingredients. In a blender, combine the sugar, oil, onion, vinegar, cranberry sauce, salt and mustard; cover and process until blended. Add poppy seeds; cover and pulse for 5-10 seconds. Drizzle over salad; toss to coat. Serve immediately.

2 tablespoons rice vinegar
1/2 cup sliced almonds, toasted

Steps:

  • In 2-quart saucepan, heat broth, cranberries, cinnamon and cumin to boiling. Remove from heat; stir in couscous. Cover; let stand 15 minutes. Fluff with fork; let stand uncovered until cooled.

ROSE'S CRANBERRY SALAD



Rose's Cranberry Salad image

My friend, Rose, gave me this recipe several years ago, and I have made it every Thanksgiving and Christmas since then. I usually make it the night before I serve it. So good! Yum! Yum!

6 ounce(s) cranberry jello (or cherry)
1 cup(s) boiling water
1/2 teaspoon(s) salt
1 cup(s) cranberry juice cocktail
10 ounce(s) ocean spray cranberry/orange fruit
1 - apple (cored & chopped.. do not peel)
1/2 cup(s) celery (chopped)
1/2 cup(s) pecans, in pieces

Steps:

  • In a large bowl, dissolve jello with boiling water.
  • Fold in remaining ingredients. (You can find the cranberry/orange fruit by Ocean Spray in the canned fruit isle of your favorite super market)
  • Chill until soft set. Stir. And chill again until set. (I usually make this the night before my "big" dinner) Top with whipped cream or topping if you prefer to serve it as a dessert.

This is wonderful Rose Reisman salad, it's great as a side but I'll usually make it for a light lunch.

1 cup chicken stock
1 cup couscous
1/2 teaspoon curry powder (optional)
3/4 cup canned chick-peas, rinsed and drained
1/3 cup dried cranberries
1/4 cup green onion, chopped
1/4 cup red bell pepper, diced
1/4 cup fresh basil, chopped
1 tablespoon olive oil
2 tablespoons thawed orange juice
2 tablespoons lemon juice
2 teaspoons grated orange rind
3 tablespoons honey
1 teaspoon minced garlic

Steps:

  • Bring stock to a boil in small saucepan and stir in couscous and curry powder, cover and let stand for about 5 minutes. Transfer mixture to a large bowl to let cool.
  • Stir chickpeas, cranberries, green onions, bell pepper, and basil into the couscous.
  • For the dressing, mix together the olive oil, orange juice, orange rind, honey and garlic.
  • Pour over couscous and serve.
