Creamy smooth White Chocolate Ganache is the base for so many great filling and frostings. A good basic recipe to have on hand.

Number Of Ingredients 3

2 cups (10 oz, 285g) white chocolate, finely chopped (not chips)
1/2 cup (4 oz, 120 ml) heavy cream
flavors to taste (a few drops of peppermint oil would be nice for Snowball Truffles)

Steps:

  • Place the chopped white chocolate in a bowl. Heat the cream in the microwave until it's scalding hot. Immediately pour the cream over the chopped chocolate and let it sit for 2-3 minutes. Gently stir the ganache until it comes together and all the bits of white chocolate are melted.
  • If some of the chocolate doesn't melt, remove 1/2 cup of the ganache and heat for 30 seconds in the microwave. Stir the heated ganache back into the bowl. Repeat until all the bits of chocolate are melted. Let the ganache chill until firm if making truffles (see note)
  • Scoop the chilled ganache and roll in crystal sugar to make Snowball Truffles.

Two simple ingredients transform into a luxurious treat. When it is slightly warm it is in a pourable state and can be used as a glaze for cakes and cupcakes. Let it sit for a while and it will thicken up to a spreadable consistency that can be used as a cake filling or frosting. It also makes a great dip for fruit and cookies.

15 ounces white chocolate, finely chopped
3/4 cup heavy cream (6 fluid ounces)

Steps:

  • Fill a saucepan with enough water so it is about 2 inches deep. Bring the water to a very gentle simmer. You don't want the water to boil. You want to melt the chocolate with very gentle, indirect heat.
  • Place a metal or glass bowl over the warm water. Make sure the bowl does not touch the water.
  • Place the chocolate and cream in the bowl and stir frequently. When the chocolate is almost completely melted, remove it from the heat and let the rest of the chocolate melt while it sits off the heat. If there is any un-melted chocolate then let it continue to sit until all the chocolate melts. As long as the mixture is warm, the chocolate will continue to melt.

44 ounces white chocolate chips, such as Nestle
9 ounces heavy cream

Steps:

  • Melt the white chocolate chips and heavy cream in a large heat-safe bowl in the microwave at 1 to 2 minute intervals, stirring well in between melts, just until the ganache is smooth.
  • Allow to rest, covered, overnight at room temp.
  • For a fluffier texture, whip the set ganache in a stand mixer fitted with the whip attachment.

1 pound semisweet chocolate, chopped
1 cup butter, cubed
1/4 cup dry red wine
8 large eggs, room temperature
1/2 cup sugar
1 teaspoon vanilla extract
GANACHE:
9 ounces bittersweet chocolate, chopped
1 cup heavy whipping cream
2 fresh rosemary sprigs

Steps:

  • Line the bottom of a greased 9-in. springform pan with parchment; grease the paper. Place pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan; set aside., In a large heavy saucepan, combine the chocolate, butter and wine over low heat, stirring constantly while melting. Remove from the heat. Cool to room temperature., Meanwhile, in a large bowl, beat the eggs, sugar and vanilla until frothy and doubled in volume, about 5 minutes. Gradually fold eggs into chocolate mixture, one-third at a time, until well blended. Pour into prepared pan. Place springform pan in a large baking pan; add 1 in. of hot water to larger pan., Bake at 350° for 28-32 minutes or until outer edges are set (center will jiggle). Remove springform pan from water bath. Cool completely on a wire rack., Carefully run a knife around edge of pan to loosen; remove sides of pan. Invert onto a serving platter; remove parchment., Place chocolate in a small bowl. In a small saucepan, bring cream and rosemary just to a boil. Remove from the heat; discard rosemary. Pour cream over chocolate; whisk until smooth. Cool slightly, stirring occasionally. Pour over cake. Chill until set.

ROSEMARY WHITE CHOCOLATE GANACHE

3/4 cup heavy whipping cream
1/2 cup packed fresh rosemary
8 ounces white chocolate, broken into small pieces
2 tablespoons unsalted butter
pinch of salt

Steps:

  • In a medium saucepan over medium heat, bring the cream and rosemary to a boil. Remove from the heat, cover, and let infuse for 10 to 15 minutes. Meanwhile, place the chocolate in a medium bowl. Bring the cream to a second boil. Strain out the rosemary, then pour the hot cream over the chocolate. Let stand for 3 to 4 minutes, then whisk until smooth. It will be like a thin sauce. CHOCOLATE ROSEMARY GANACHE

Leave out the rosemary if you prefer only a rich, dark-chocolate flavor. Use this recipe to frost our Rich Chocolate Heart Cake.

Yield Makes 1 1/2 cups, enough for 4 three-tiered heart cakes

Number Of Ingredients 3

9 ounces semisweet or bittersweet chocolate, finely chopped
1 cup heavy cream
2 tablespoons fresh rosemary, needles

Steps:

  • Place chocolate in a medium heat-proof bowl. Warm cream with rosemary in small saucepan over low heat. Bring just to a boil. Strain cream over chocolate. Cover bowl tightly with foil; let sit about 5 minutes. Stir to melt all chocolate. To warm ganache, place bowl over a small pan of warm water to keep chocolate thin enough to spoon. (Do not keep chocolate over boiling hot water, or it may break and look as if it has separated.) The ganache may be made 1 day ahead and rewarmed in the microwave.
