CREAMY, LEMONY, PEPPER-PARMESAN DRESSING ON ROMAINE LETTUCE SALAD

- Combine the mayonnaise, lemon zest (grated yellow part of lemon) and lemon juice. To get the juice out of a lemon, heat it up in microwave for 10 seconds on high. Cut the lemon across in half. Squeeze the lemon halves while holding them upright over the dressing bowl so that the seeds stay with the lemon halves, not in the dressing! Add pepper to the dressing bowl, too. Whisk the dressing and pour in the extra-virgin olive oil while you whisk. If you pour in a slow, steady stream, 3 tablespoons of extra-virgin olive oil will pour out in a count to the number six. Once the oil is combined with the acid (the lemon juice) and the mayonnaise, you can switch utensils and stir in the cheese and a pinch of salt with a spoon or rubber spatula.
- Chop up the lettuce into 2-inch pieces. Place the lettuce in a salad bowl and top with the dressing when you are ready to serve dinner.
HEARTS OF ROMAINE WITH CREAMY DRESSING
This salad is best made with whole uncut leaves of romaine. You may need to remove quite a few of the large outer leaves to expose the smaller pale green sweet leaves at the heart. There are tender small varieties called Little Gem and Winter Density that make incredible salads. Look for them at your farmers' market.

- Remove the outer darker green leaves from: 2 heads of romaine lettuce.
- Cut off the stem end and separate the leaves. Wash them thoroughly and spin-dry in batches.
- To make the dressing, stir together in a large bowl: 1 tablespoon white wine vinegar, Grated zest of 1 lemon, 1 tablespoon fresh lemon juice, Salt, Fresh-ground black pepper.
- Taste, and adjust as needed. Whisk in: 3 tablespoons extra-virgin olive oil, 3 tablespoons heavy cream.
- Taste for salt and acid and adjust if needed. Gently toss the lettuce with the dressing, making sure each leaf is evenly coated.
- A couple of salt-packed anchovies, rinsed, filleted, and chopped, are a great addition to the dressing.
- Some or all of the following herbs are delicious chopped and scattered over the salad: basil, chervil, chives, and tarragon.
- This dressing is equally suitable for butter or Bibb lettuces and for frisée and radicchio.
SUNDAY'S FETA, DILL, LEMON, AND ROMAINE GREEK SALAD
This is an extremely simple, yet wonderfully delicious salad that I make when I see freshly made Feta in the grocery store. It was introduced to me as a child, and ever since then...well I am an addict :) I have also made every friend of mine that has tried this one as well. If you like lots of lemon, you like dill, and you love feta, you will love this salad!

- Wash Romaine and cut across the width until chop off the end. Put aside.
- Juice both lemons and set aside.
- Chop dill (preferably stemmed) until somewhat minced, make sure to at least have 2 large handfulls.
- Crumble Feta into a Ziploc bag with hands and set aside.
- Pour olive oil, lemon juice, and dill into Ziploc bag that contains the Feta.
- Close the Ziploc and shake until the dressings looks creamy to an extent.
- Throw some of the chopped Romain into the Ziploc and continue to shake.
- Pour out Ziploc into bowl with remaining Romaine and mix!
- Enjoy the wonderful meld of flavors!

ROMAINE SALAD WITH BREADCRUMBS AND SIMPLE DRESSING
Steps:
- Melt the butter in a medium skillet over medium heat. Add the breadcrumbs, 1/2 teaspoon salt and a bunch of grinds of pepper (about 20 grinds) and cook, stirring constantly, until the crumbs are golden brown, about 5 minutes. It's important to stir the whole time to make sure that they do not burn--which will happen if they sit too long in the skillet untouched. Once golden, immediately transfer them to a plate to cool and stop the cooking process. Set aside.
- Whisk the yogurt, mustard, Worcestershire, lemon zest and juice, garlic, 3 tablespoons water, 1/2 teaspoon salt and about 20 grinds of black pepper in a small bowl until smooth, creamy and combined.
- And add the romaine to a serving bowl. Sprinkle in 3/4 cup of the breadcrumbs, 3/4 cup of the Parmesan and the dressing and toss until the lettuce is nicely coated. Sprinkle the remaining breadcrumbs and Parmesan on top and serve immediately.
CRISP ROMAINE SALAD WITH TANGY VINAIGRETTE

- Add the olive oil, vinegar, lemon zest, lemon juice, mustard, shallot, 1/2 teaspoon salt, and 1/2 teaspoon pepper to a glass jar, screw on the lid and shake vigorously to emulsify.
- Add the lettuce, chives and radishes to a large serving bowl. Add about half of the dressing and toss to combine. Add the Parmigiano-Reggiano and toss once again. Season with salt a pepper to taste. Serve extra dressing on the side.
