1 (8 ounce) package cream cheese, softened
1 cup sour cream
1 (1 ounce) package dry fiesta-style ranch dressing mix
1 cup chunky salsa
1 ½ cups shredded Cheddar cheese
10 (10 inch) flour tortillas

Steps:

  • In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa and Cheddar cheese. Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve.
  • To serve, slice the chilled, rolled tortillas into 3/4 inch slices and arrange on a large serving platter.

2 boneless, skinless chicken breasts
1 teaspoon salt, for chicken
¼ teaspoon pepper, for chicken
1 teaspoon garlic powder
4 slices ham
4 slices provolone cheese
1 cup flour
2 eggs, beaten
1 cup breadcrumb
3 cups broccoli floret
4 tablespoons olive oil
1 teaspoon salt
¼ teaspoon pepper

Steps:

  • Preheat oven to 400°F (200°C)
  • Cut about ¾ of the way through the chicken horizontally, making sure not to cut through the other side. Flip the chicken open and flat.
  • Lay a sheet of plastic wrap on top of the chicken and pound it flatter using a pot or a pan. Remove the plastic wrap.
  • Season with the salt, pepper, and garlic powder, rubbing the seasoning in evenly. Lay 2-3 slices of ham over the chicken, followed by 4 slices of provolone cheese.
  • Carefully roll the chicken up.
  • Transfer the flour, eggs, and breadcrumbs into 3 separate bowls.
  • Dip the chicken roll into the flour, tapping off any excess, and then into the egg, followed by the breadcrumbs. Place on a baking sheet
  • Add the broccoli to the baking sheet, mixing it with the olive oil, salt, and pepper. Make sure to save a little oil to drizzle on top of the chicken.
  • Bake for 20 minutes.
  • Slice, then serve!

Steps:

  • Mix cream cheese, sour cream, green onions, and taco seasoning in a bowl until well blended. Spread a thin layer of the cream cheese mixture onto each tortilla. 1/4 cup sugar
2 teaspoons ground cinnamon
12 sheets frozen phyllo dough, thawed

SYRUP:
1/2 cup honey
1/2 cup sugar
1/2 cup water
1 tablespoon lemon juice

Steps:

  • Preheat oven to 350°. Combine walnuts, sugar and cinnamon., Place 1 sheet of phyllo dough on a 15x12-in. piece of waxed paper; brush with butter. Place a second phyllo sheet on top, brushing it with butter. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.) Sprinkle with 1/4 cup walnut mixture. Using waxed paper, roll up tightly jelly-roll style, starting with a long side, removing paper as you roll. Slice roll into 4 smaller rolls; transfer rolls to a greased 13x9-in. baking dish. Repeat with remaining phyllo dough and walnut mixture, by 1/4 cupfuls. Bake until light brown, 14-16 minutes. Cool dish on a wire rack., Meanwhile, in a small saucepan, combine all syrup ingredients. 1/2 lb salami or 1/2 lb dried beef
1 (4 ounce) package cream cheese
4 large kosher dill pickles, whole

Steps:

  • Pat dill pickle dry with paper towel.
  • Take 2-3 pieces of meat (depending on size of pickle), and place them on a cutting board overlapping half of each with the next. (If you're lucky, you can find the ham cut in a rectangular shape as opposed to square. In this case, you can use just one slice and it will encase the entire pickle.).
  • Spread cream cheese over meat.
  • (You can use more cream cheese if you like.) Wrap pickle around in blanket fashion.
  • Chill for an hour or two, then slice pickle in~1/2 inch pieces and lay flat on tray.
  • (If using dried beef, you can also put meat in blender and pulverize. Spread cream cheese on dried pickle then roll in pulverized beef. Again, allow to refrigerate 1-2 hours and slice as above.).

3 ½ cups broccoli, finely chopped, divided
2 cups shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
8 oz cream cheese, 1 package, softened
3 chicken breasts
salt, to taste
pepper, to taste
14 oz cheddar cracker, 1 package
1 cup all-purpose flour
2 eggs

Steps:

  • In a small bowl, microwave 1½ cups (225 g) of broccoli for 1 minute. Add the cheddar cheese, garlic powder, onion powder, and cream cheese. Mix thoroughly, and set aside until ready to use.
  • On a cutting board, butterfly the chicken breasts with a knife. Cut through the chicken breast so you have 6 thinner chicken cutlets. Cover in plastic wrap, and tenderize by beating with a rolling pin or a heavy pan.
  • Remove the plastic wrap, and season with salt and pepper. Place a scoop of the broccoli cheddar mixture on top of a chicken cutlet, and spread until the chicken is covered.
  • Roll the chicken up starting from the tapered end. Use 2 toothpicks to keep the chicken tightly rolled. Repeat with the rest of the chicken.
  • Preheat the oven to 325˚F (165˚C). Line a baking sheet with parchment paper.
  • In a plastic bag, crush the cheddar crackers until they have a coarse, sand-like texture. Pour the cracker crumbs into a large bowl. Add the rest of the minced broccoli. Stir to combine.
  • Put the flour into a medium bowl.
  • Whisk the eggs in another medium bowl.
  • Using tongs, place one of the pieces of chicken into the flour. Turn the chicken in the flour until it is fully coated, tap off any excess flour. Place the chicken in the egg, turn until the chicken is coated. Place the chicken in the broccoli cracker crumb mixture, turn until the chicken is fully coated. Repeat with the remaining chicken rolls.
  • Transfer the pieces of chicken to the prepared baking sheet. Bake for 40-45 minutes.
  • Let the chicken cool slightly, then remove the toothpicks.
  • Enjoy!

  • Take skillet off of burner.

1 pound lasagna noodles
Nonstick cooking spray, for spraying baking sheet
2 tablespoons olive oil
4 cloves garlic, minced
1 medium onion, diced
1 red bell pepper, diced
24 ounces white mushrooms, chopped
2 yellow squash, diced
2 zucchini, diced
1/2 cup white wine
1/2 teaspoon crushed red pepper flakes
Salt and freshly ground black pepper
One 28-ounce can diced tomatoes, drained
1/4 cup tomato paste
1/4 cup chopped fresh parsley
32 ounces ricotta
1/2 cup grated Parmesan
2 large eggs
Salt and freshly ground black pepper
1 1/2 pounds shredded fresh mozzarella
Grated Parmesan, for sprinkling

Steps:

  • For the noodles: Cook the noodles according to the package instructions. Spray a baking sheet with cooking spray. Drain the noodles and transfer them to the prepared sheet.
  • For the sauce: Heat the olive oil in a large skillet over medium heat. Add the garlic and onions and cook for a minute. Add the red peppers and saute for another minute or so. Add the mushrooms, yellow squash and zucchini and cook for a few minutes. Pour in the wine, add the red pepper flakes and some salt and pepper and stir. Pour in the tomatoes, using your hands to squeeze and crush the tomatoes, and add the tomato paste. Stir to combine, bring to a simmer and let simmer for 20 minutes or so. Stir in the parsley.
  • For the ricotta mix: In a bowl, combine the ricotta, Parmesan, eggs, 1/4 teaspoon salt and some pepper.
  • To assemble: Grab a foil loaf pan and spoon in 1/4 to 1/2 cup of the sauce on the bottom of the pan. Lay out 3 noodles and spoon 1/4 cup of the ricotta mix on each and spread evenly. Roll each noodle tightly and place the rolled noodles in the loaf pan on top of the sauce. Top with more sauce and sprinkle with shredded mozzarella and Parmesan. Repeat with the remaining ingredients. Cook immediately, or cover with foil and freeze.
  • To cook immediately, bake, uncovered, at 350 degrees F until bubbly, about 25 minutes. To cook frozen, remove the loaf pans from the freezer and bake, covered, at 350 degrees F for 40 minutes. Uncover and bake until the cheese is nice and bubbly, an additional 10 minutes.

1 cup tomato, diced
1 tomato, sliced
15 leaves fresh basil
1 cup balsamic vinegar
¼ cup honey

Steps:

  • Preheat oven to 400˚F (200˚C).
  • In a saucepan, heat balsamic vinegar and honey over high heat. Stir until sauce reduces to ⅓ cup (80 ml). Set aside.
  • On a cutting board, slice the chicken breasts in half horizontally.
  • Cover chicken with a piece of plastic wrap. Using the rough side of a metal mallet, pound the chicken until ½-inch (1 cm) thick. Repeat with remaining breasts.
  • Drizzle olive oil over pieces of chicken and season with salt and pepper.
  • Place 2 slices of mozzarella on each piece of chicken. Spoon ¼ cup (50 g) of diced tomatoes on each piece of chicken. Place 3 pieces of basil on each piece of chicken.
  • Roll up the chicken, making sure the ingredients are tucked under the breast and not pushed out the sides.
  • Place the roll-ups in a greased baking dish. Drizzle each roll-up with more olive oil and sprinkle with salt and pepper.

4 skinless, boneless chicken breasts
20 slices pepperoni sausage
8 ounces pepperoni sausage, chopped
4 slices mozzarella cheese
1 (28 ounce) jar spaghetti sauce
1 pinch garlic powder
salt and pepper to taste
1 teaspoon Italian-style seasoning

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pound chicken breasts flat with a meat mallet. Season to taste with garlic powder, salt, pepper and Italian style seasoning.
  • Place 4 to 5 slices pepperoni on each breast and top each with a slice of cheese. Roll up breasts and fasten with toothpicks.

1/4 c butter, melted
10 1/2 oz mini marshmallows
5 1/2 c rice krispies
1 1/2 c milk chocolate chips
1/2 c peanut butter

Steps:

  • 1. Melt butter in a 6 quart kettle, add marshmallows. Melt completely over low heat.
  • 2. Add the Rice Krispies. Mix well.
  • 3. Spread evenly into a greased 10½ x 15½ baking sheet.
  • 4. In a microwave safe bowl combine chocolate chips and peanut butter. Melt at 1 minute intervals until completely melted, stirring after each minute.
  • 5. Spread on top of Rice Krispies mixture. Let set in a cool place till chocolate mixture sets up. Be careful not to let the chocolate get too hard, it will not make a neat roll if you do.
  • 6. Loosen all around with a metal spatula. Roll, starting on the long side. Sprinkle the roll with seasonal sprinkles if desired. Slice and enjoy! Can be wrapped in Saran Wrap for storage if needed.

¼ cup butter
½ pound button mushrooms, chopped
½ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon ground nutmeg
1 cup seasoned dry bread crumbs, divided
6 skinless, boneless chicken breast halves
⅛ cup butter, melted
¾ cup heavy cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Mushroom Filling: Melt 1/4 cup butter in a small skillet over medium heat. Add mushrooms, salt and pepper and saute together, stirring, until mushrooms are dark. Remove skillet from heat; stir in nutmeg and 3/4 cup bread crumbs.
  • Spoon mushroom mixture onto the end of each chicken breast, roll up and fasten with toothpicks. Place seam side down in a lightly greased 9x13 inch baking dish. Brush 1/8 cup melted butter over breasts, then sprinkle with remaining 1/4 cup bread crumbs. Pour cream over all.
  • Bake uncovered at 350 degrees F (175 degrees C) for 30 minutes or until chicken is cooked through and no longer pink.

Change up your typical pasta casserole with these fun vegetarian lasagna rollups-they're like individually portioned mini lasagnas. The pasta tends to soak up a lot of the liquid while it cooks, so you'll want to reserve about a half jar of marinara sauce to add at the end for a properly saucy dish.

1 pound lasagna noodles (not no-boil)
1 (16-ounce) container ricotta
2 cups shredded mozzarella
1/2 cup grated Parmesan
1 tablespoon Italian seasoning
2 large eggs
1 (10-ounce) package frozen chopped spinach, thawed and excess water squeezed out
2 (24-ounce) jars marinara sauce, divided

Steps:

  • In a large pot of boiling salted water, cook the lasagna noodles according to the instructions on the box until barely al dente. Drain and set aside.
  • Meanwhile, in a large bowl, mix the ricotta, mozzarella, Parmesan, Italian seasoning, and eggs. Stir in the spinach.
  • Pour 1/2 jar of marinara sauce into the bottom of a slow cooker, spreading evenly.
  • Cut each lasagna noodle in half crosswise. Spread about 1 heaping tablespoon ricotta mixture across one noodle half. Roll up the noodle and place it in the slow cooker, seam-side down. Continue with the remaining noodles and ricotta mixture.
  • Pour 1 jar of marinara sauce over the top of the rollups. Cover and cook on high for 3 hours. Pour the remaining 1/2 jar of sauce into the slow cooker and allow to heat through before serving.

HAM & OKRA ROLLUPS

I accidentally ate one of these thinking it was stuffed with a green olive because I wouldn't have touched "pickled okra" with a ten foot pole! Now i'm hooked on the stuff! This is a quick and easy finger food. The taste is awesome! Please let me know how you like it!!!!!!!!!

1 package sliced sandwich ham (the rectangular shaped)
8 ounces cream cheese
1 jar pickled okra

Steps:

  • Bring cream cheese to room temperature or soften in microwave.
  • spread thin layer over 1 side of ham slice.
  • Cut each end off okra slice.
  • Lay okra slice over cream cheese at 1 end of ham slice.
  • Roll up and refrigerate until firm enough to slice.
  • Slice into 1/4" swirls.
  • Lay flat on serving platter.
  • Cover with plastic wrap and chill until ready to serve.

I don't know where I got this recipe, but I know it wasn't on this site, 'cause I couldn't find it anywhere. I've made them before (and they're yummy) so I knew I must have it written down somewhere. Luckily, I found it and am posting it here for safe-keeping. You can use any type of seafood you desire, just be sure to finely dice it, and enjoy. BTW, Prep time doesn't include chilling time, and the 1/2 cup of seafood cocktail sauce at the end of the ingredient list is optional for dipping.

1 (8 ounce) pkg.of cream cheese, softened
1/4 cup seafood cocktail sauce
1 (8 ounce) package imitation crabmeat, finely diced
1/4 cup swiss cheese, shredded
1/4 cup green onion, chopped, or
1/4 cup green pepper, chopped
4 (8 inch) flour tortillas
1/2 cup seafood cocktail sauce

Steps:

  • Mix softened cream cheese and cocktail sauce together, until well blended.
  • Stir in crabmeat, swiss cheese and green onion, or green pepper and mix well.
  • Spread evenly onto the 4 flour tortilla shells and roll each one up tightly.
  • Wrap in plastic wrap and refridgerate for at least 2 hours, or overnight.
  • After they are thoroughly chilled, slice into 1/2 inch circles, and serve with the 1/2 cup, optional cocktail sauce.
  • Note: I microwave my tortilla shells (one at a time) for about 15 seconds, before I spread the mix on them.That makes the shells much easier to roll.
  • I also make my own 'cocktail sauce' by simply mixing prepared horseradish and ketchup (to taste) together.
