This is my momma's recipe. These cookies are so unusual and everyone loves them including me. Mom used to take them and share at the nursing home she volunteered at. She makes them around the holidays.

Ingredients

1 c butter
1/4 c brown sugar
1/2 c sugar
2 eggs
1 1/2 tsp vanilla extract
1 Tbsp instant coffee granules
1 Tbsp hot water
1 3/4 c flour
1 tsp baking soda
1/2 tsp salt
2 1/4 c quick cooking oats
1 1/2 c chocolate chips
1 1/2 c chopped recans
1 1/2 c miniature marshmallows

Steps:

1. Heat oven to 350F.
2. Beat butter,sugars until creamy. Add vanilla; beat well. Dissolve coffee granule in hot water. Add to butter mixture; mix well. Add flour, baking soda & salt. Stir in oats, chocolate chips & chopped pecans. Scoop 1 teaspoon of dough and flatten it on on baking sheet. Place 4 marshmallows in the middle and wrap dough around them. Bale for 10-12 minutes.

Top with miniature marshmallows and serve immediately.

2 rounded Tbsp. MAX by MAXWELL HOUSE Indulge Mocha + S'Mores Coffee Drink Mix
1 Tbsp. creamy peanut butter
1/4 cup JET-PUFFED Miniature Marshmallows
1 Tbsp. PLANTERS Dry Roasted Peanuts, chopped

Steps:

Add boiling water to drink mix and peanut butter in mug; stir until mix is dissolved.
Top with marshmallows. Let stand 1 min.
Sprinkle with nuts.
