1 pound Rock shrimp (peeled and deveined)
2 Tbsp butter
1 Tbsp olive oil
3 garlic cloves (pressed or minced)
1 Tbsp lemon juice
2 Tbsp vegetable broth

Steps:

  • Melt 1 Tablespoon butter in a skillet over medium heat.
  • Add olive oil and garlic to skillet and stir to combine.
  • Add shrimp to skillet and toss to coat with butter mixture then spread into a single layer.
  • Cook shrimp for 3-4 minutes, stirring to make sure all sides are done. Shrimp are done when the flesh turns white and slightly opaque. Keep tongs handy to lift any out that are finished early. Remove shrimp to serving dish.
  • Once all of the shrimp are removed, melt 1 Tablespoon of butter in the skillet.
  • Add lemon juice and vegetable broth and stir to combine. Allow sauce to simmer over low heat for about 5 minutes in order to thicken.
  • Pour lemon butter garlic sauce over shrimp. Garnish with chopped parsley if desired.

1 egg yolk
2 teaspoons chili-garlic sauce
1 teaspoon rice vinegar
¼ teaspoon sea salt
2 dashes ground black pepper
3 tablespoons olive oil
¾ cup ice water
¾ cup all-purpose flour
1 egg yolk
2 tablespoons olive oil, or as needed
1 pound rock shrimp, peeled and deveined

Steps:

  • Whisk egg yolk, chili-garlic sauce, rice vinegar, sea salt, and black pepper together in a bowl. Pour in 3 tablespoons oil slowly, whisking constantly, until sauce is creamy.
  • Whisk ice water, flour, and egg yolk together in a large bowl to make batter.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Dip some shrimp in batter, letting excess drip off, and cook in hot oil until browned on both sides, 3 to 5 minutes. Drain on paper towels. Repeat with remaining olive oil and shrimp.
  • Place cooked shrimp in a large bowl. Pour sauce on top and mix until thoroughly coated.

For the sweet chile aioli:
1 cup mayonnaise
1 tablespoon white miso (also called shiro miso)
Juice of 1/2 lime
1 tablespoon sambal ulek
2 tablespoons Thai sweet chile sauce
2 teaspoons fresh cilantro, finely chopped
For the apple slaw:
1 medium Fuji apple, peeled, cored, and cut into julienne
1 celery heart, stalks cut crosswise into 1-inch pieces then cut into julienne, and tender leaves, coarsely chopped
1/2 cup fresh cilantro, coarsely chopped
1/2 cup micro greens such as arugula, coarsely chopped
Juice of 1/2 lime
1/4 teaspoon fine sea salt
1/8 teaspoon freshly ground black pepper
For the shrimp:
About 10 cups vegetable oil
1/2 cup all-purpose flour
1/4 teaspoon fine sea salt
1/8 teaspoon freshly ground black pepper
16 ounces Asahi Super Dry Beer
3 cups tempura mix*
1/2 pound fresh rock shrimp, peeled and deveined
*Available at Asian markets or in the Asian section of the supermarket

Steps:

  • Make the sweet chile aioli:
  • In a small bowl, whisk together all of the aioli ingredients. DO AHEAD: Can be made 2 days ahead. Cover and chill.
  • Make the apple slaw:
  • In a small bowl, toss together all of the slaw ingredients, cover, and keep chilled until ready to serve.
  • Batter and fry the shrimp:
  • Line a baking sheet with 2 layers of paper towels.
  • In a heavy large pot, heat 3 inches of oil until a deep-fat thermometer registers 350°F.
  • In a small bowl, whisk together flour, salt, and pepper.
  • In a medium bowl, stir together beer and tempura mix-the mixture should be about as thick as pancake batter.
  • Lightly coat the shrimp in the seasoned flour, shaking off any excess, then dip in the tempura batter. Working in batches, fry the shrimp until light golden brown, about 3 minutes per batch. Transfer as done to the prepared baking sheet and return oil to 350°F between batches.
  • Transfer the fried shrimp to a small bowl, add sweet chile aioli, and gently toss to coat.
  • To serve:
  • Divide the apple slaw among 6 small appetizer plates. Arrange about 6 shrimp on each plate and serve immediately.

Rock shrimp are meaty and firm, like lobster tail, and have a mild, bland flavor that can really use the help of seasoning at several stages. So we salt them before cooking and during cooking. Once the shrimp are mixed with onion and celery and mayonnaise, taste the shrimp salad as a whole to decide if it could stand even another pinch of salt or grind of pepper. But use unsalted butter on the bun when griddling, to get the perfect play between the sweet and the saline.

1/2 cup kosher salt, plus more for seasoning
1 1/2 pounds peeled raw rock shrimp
1/2 of 1 small white onion, finely minced
1 small celery rib from inner core, finely minced
5 tablespoons mayonnaise (Hellmann's or Best Foods only!)
Freshly ground black pepper
2 large, bushy branches of dill, stems removed, feathery leaves chopped
1/2 of 1 lemon
4 tablespoons unsalted butter, at room temperature
4 hot dog buns, preferably potato
2 large hard-boiled eggs, peeled then sliced into thin rounds using an egg slicer
1 small red or green Belgian endive, cut crosswise into thin coins

Steps:

  • In a stockpot, bring 2 1/2 quarts of water to a rolling boil, and add the 1/2 cup salt. In a large bowl, prepare an ice bath with 3 to 4 quarts of cold water and about a quart of ice.
  • Season the shrimp all over with kosher salt, and turn off the heat under the boiling water. Wait 1 full minute before dropping the shrimp into the hot water. Let shrimp cook just until they lose their translucence, 1 to 2 minutes. Strain, then plunge into the ice bath just until cooled, no more than 2 minutes. Pat shrimp dry, and transfer to a cutting board. Roughly chop the shrimp by making a few cuts through the pile with your chef's knife until shrimp is cut into medium, bite-size pieces.
  • Transfer chopped shrimp to a bowl, and stir in the onion, celery and 3 tablespoons mayonnaise. Season to taste with kosher salt, pepper, chopped dill and a few drops of lemon juice. Set aside.
  • Heat a large cast-iron skillet over medium. Evenly butter the interior and exterior of each hot dog bun. Working in batches, toast the buns inside and out in the skillet until golden brown. (We love as much buttery griddled surface area as possible.)
  • To assemble, remove the buns from the skillet, and slather the interiors with the remaining mayonnaise. Evenly distribute the shrimp salad among the buns. Top each roll with alternating slices of hard-boiled egg and endive, then sprinkle each roll with a little kosher salt, a short grind of fresh black pepper and a few drops of lemon juice.

1/2 teaspoon sea salt
1 egg
1 cup flour
2 cups panko
1/2 pound rock shrimp
1 pound asparagus, trimmed
Vegetable oil

Steps:

  • In a large bowl, whisk together the salt, egg and 1 cup ice water. Sift the flour into the bowl and whisk until smooth. Fill another wide bowl with panko. Dredge the rock shrimp a few pieces at a time in batter, then panko. Set on a plate. Repeat with remaining shrimp and asparagus.
  • Heat 2 inches of oil in a deep, heavy pot over medium-high heat. When the oil is hot enough to toast a panko crumb in 30 seconds, add the shrimp, a few pieces at a time. Fry until golden brown on all sides, less than two minutes, then remove to a plate lined with paper towels. Repeat with the remaining shrimp and asparagus. Serve immediately with a wedge of lemon or ponzu (recipe below).

Vegetable oil
1/2 cup real mayonnaise
1/4 cup plus 1 tablespoon heavy whipping cream
2 teaspoons Szechuan seasoning
2 cups tempura batter mix (recommended: Hime)
1 1/2 cups ice water
1 pound rock shrimp*
Endives, for garnish
Crispy onions (recommended: French's Original), for garnish

Steps:

  • Add enough oil in skillet to come 2 inches up the side of the pan. Heat oil to 375 degrees F.
  • In a small mixing bowl, whisk together mayonnaise, heavy cream and Szechuan seasoning.
  • Once oil is heated, in a large bowl combine tempura mix and ice water. Mixture will be thick and lumpy. Working in batches, dip rock shrimp in batter (shaking off any excess) and add to oil. Fry for 2 to 4 minutes or until golden brown. Remove shrimp from oil and drain with a slotted spoon. Make sure oil temperature does not fall below 350 degrees F. Skim oil between batches.
  • In a large bowl toss cooked shrimp in sauce until lightly coated. Serve warm on endive leaves. Top with french-fried onions.
