1 large zucchini, thickly sliced
4 ounces button mushrooms, quartered
1 red bell pepper, chopped
1 tablespoon olive oil
3 cups water

2 tablespoons olive oil
2 cups couscous
2 tablespoons balsamic vinegar

Steps:

  • Preheat your grill to a high heat, outdoor or indoor.
  • Brush vegetables lightly with olive oil, and place them on the grill. Cook, flipping over occasionally, until just tender.
  • While the vegetables are grilling, bring water, salt, 1 tablespoon olive oil, and couscous to boil in a large pot. Once the water has come to a boil, remove the pot from the heat and let it stand 5 minutes. Fluff with a fork when done. Let couscous cool to room temperature.
  • Place couscous on a plate and top with veggies. Drizzle with a small amount of olive oil and Balsamic vinegar.

1 pound parsnips
1 medium red onion
2 tablespoons olive oil
2 tablespoons honey
1 tablespoon minced fresh thyme
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2/3 cup mayonnaise
1/3 cup sour cream
1/4 cup spinach leaves
1/4 cup chopped fresh parsley
1 tablespoon chopped fresh chives
1/4 teaspoon kosher salt
6 fresh basil leaves
Zest of 1 lemon
1/4 cup shredded Parmesan
2 tablespoons chopped fresh parsley

Steps:

  • For the roasted veggies: Preheat the oven to 450 degrees F. Line a baking sheet with parchment.
  • Slice the carrots and parsnips into 2-inch pieces, discarding the tops. Depending on your vegetables, you may need to slice thicker ends in half or even quarters and then slice them to achieve equal pieces. Cut the onion into thick slices. Transfer the vegetables to a large bowl.
  • In a small bowl, mix together the olive oil, honey, thyme, salt and pepper. Pour over the vegetables and toss to coat. Dump the vegetables onto the prepared baking sheet and spread into a single layer.
  • Roast, shaking the baking sheet once or twice while roasting, until the vegetables are dark and golden around the edges and tender in the centers, 40 to 45 minutes.
  • For the dip: While the vegetables are roasting, make the dip. Place the mayonnaise, sour cream, spinach, parsley, chives, salt, basil and lemon zest in a blender or food processor and process until smooth and green. Transfer to a serving bowl and refrigerate until ready.
  • For the topping: To serve, transfer the vegetables to a platter and sprinkle over the Parmesan and parsley. Set out with the dip on the side.

Steps:

  • Arrange an oven rack in the center of the oven, then preheat to 425˚F (220˚C).

  • Preheat oven to 375 degrees. Arrange oven racks to accommodate two dishes being cooked simultaneously.
  • Grind the bread in a food processor until fine crumbs form. Transfer to a large bowl, and pour milk over crumbs.

  • To make the roasted root vegetables: On a baking sheet, toss all the vegetables in the olive oil, and season with salt and pepper. Add to the oven along with the meatloaves and roast for 30 to 35 minutes, stirring midway through baking. Remove from the oven and sprinkle with fresh herbs.

Roasting veggies intensifies the flavor, this is a veggie combination that goes well together and seems to all get roasted at the same time, you can also add in potatoes and/or fennel bulb, but remember if you add in veggies such as potatoes or fennel they will take a longer time to cook, just keep and eye on them, and maybe remove all of the other veggies and continue to roast until done. The lemon-mustard vinaigrette can be made ahead of time, and ALL ingredients can be adjusted to suit taste. This is a wonderful side dish to serve with a turkey or roasted chicken dinner. If you like then roast the veggies with fresh garlic mixed with the olive oil.

  • Using kitchen shears, remove backbone and ribs to "butterfly" chicken.
  • Gently separate, but do not remove, skin over chicken breast, legs and thighs.
  • Wash and cut potatoes (skin on), carrots, and onion into coarse cubes.
  • Spray a 13 by 9 inch baking dish with non-stick spray.
  • Spread vegetables in bottom of dish, drizzle with 2 tablespoons olive oil, sprinkle with 1/2 teaspoons garlic salt and 1/2 teaspoons coarse ground black pepper.
  • Place chicken on top of vegetables.
  • Combine 1/4 cup olive oil, 1/4 cup lemon juice, 1 teaspoons lemon pepper, and 1/2 teaspoons garlic salt with a whisk.
  • Gently lift chicken skin and drizzle olive oil and lemon juice mixture under the skin.
  • Pour any remaining oil mixture over skin.
  • Tent dish with aluminum foil. Place in preheated oven for 40 minutes, remove foil, and roast for 30-45 minutes longer, until chicken juices run clear.

4 cups assorted vegetables, such as quartered mushrooms, broccoli florets, sweet pepper cut into 1-inch pieces, or zucchini cut into 1-inch chunks

Steps:

  • Preheat oven to 375 degrees F. Line a 15x10x1-inch baking pan with foil, coat a twelve 2 1/2-inch muffin tin with nonstick cooking spray; set aside.
  • In a medium bowl combine beef, onion, 1/2 cup of RAGÚ® Old World Style® Traditional Sauce, bread crumbs, egg, parsley, garlic, 1/4 tsp salt and 1/8 tsp pepper.

1 1/2 lb baby red potatoes, quartered
1 cup red onion wedges
1 package (1 oz) dry ranch salad dressing and seasoning mix
1/8 teaspoon salt
4 cups small broccoli florets
1/4 cup Progresso™ plain panko crispy bread crumbs
1/4 cup shredded Parmesan cheese (1 oz)
2 tablespoons chopped fresh Italian (flat-leaf) parsley leaves

Steps:

  • Heat oven to 425°F. Line 15x10x1-inch pan with foil. Spray foil with cooking spray.
  • In large microwavable bowl, place 3 tablespoons of the butter. Microwave uncovered on High 30 to 60 seconds or until melted. Stir in garlic powder and pepper. Add potatoes and onion wedges; toss to coat. Place mixture in pan. Sprinkle with 2 rounded tablespoons of the ranch dressing mix. Toss to coat, then spread in single layer in pan. Turn potatoes skin-side down. Roast 29 to 33 minutes or until potatoes are very tender when pierced with knife. Remove from oven; stir.
  • In same bowl, place 1 more tablespoon butter; microwave uncovered on High 15 to 30 seconds or until melted. Stir in salt. Add broccoli to mixture; toss to coat. Arrange in single layer in pan next to potato mixture. Roast 11 to 14 minutes longer or until potatoes are browned and broccoli is tender.
  • Meanwhile, melt remaining 1 tablespoon butter in 8-inch skillet over medium heat. Add bread crumbs; cook 2 to 3 minutes, stirring frequently, until golden brown. Remove from heat; stir in remaining 1 rounded tablespoon ranch dressing mix. Pour into small bowl; stir in Parmesan cheese. Top vegetables with bread crumb mixture and parsley.

1 cup breadcrumbs
1/2 cup skim milk
1 tablespoon olive oil
1 teaspoon olive oil
1 medium yellow onion, diced
5 ounces baby spinach leaves
1 1/4 lbs ground turkey
2 tablespoons grated parmesan cheese
1 large egg
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon nutmeg
3 tablespoons tbsps ketchup
2 teaspoons Worcestershire sauce
1 teaspoon hot sauce
3 large carrots
4 medium yukon gold potatoes
1 teaspoon chopped parsley
1 teaspoon chopped chives
1 1/2 tablespoons olive oil
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • 1-Preheat oven to 375, Arrange oven racks to accommodate two dishes being cooked at the same time.
  • 2- Put foil on baking sheet for easy clean up.
  • 3-Prepare Veggies-Chop root vegtables to aprox 1/2" size,( flower bag ) put into a roaster bag for faster cooking.Toss all the vegtables into bag add 1tbl sp, plus 1 tsp olive oil, salt, pepper, and herbs mix well in bag. Close bag cut 3 or 4 slits in top of bag place on baking sheet.Put on bottom rack of oven.
  • 4- Now,prepare Glaze- In a sm bowl combine the ketchup, worcestershire sauce and hot sauce. Set aside.
  • 5-In a large bowl, pour milk over bread crumbs.Set aside.
  • 6- Mix turkey, cheese, egg, salt, pepper and nutmeg. Combine the mixture with your hands untill well mixed, it will be quite wet.
  • 7-Heat 1 tsp oil in a large skillet, over medium heat. Add onion and cook stirring occasionally untill soft and golden. about 5 minute Add spinach and stir untill just wilted. about 30 seconds.
  • ( or add 1 tbl water to pan and put lid on to wilt spinach leaves, stir a little as needed ).
  • 8-Transfer spinach and onions to bowl with soaked crumbs. Add the turkey mixture. Combine with your hands untill well mixed, it will be quite wet.
  • 9-Tightly pack one cup of mixture into a one cup DRY measure cup. Invert the cup onto a rimmed foil lined baking sheet, gently shaking the cup to release the mixture. Gently pat and shape the mound. Repeat three times with remaining mixture.
  • 10- Spoon glaze on top of each meatloaf, let dribble down the sides.
  • Put into oven on top rack. ( Veggies should already be in oven ).
  • 11-Bake mini meatloaves untill cooked through and light golden ( remember turkey is lighter than hamburger ) Aprox 1 hr to 1 1/4 hr , I like mine well done ! Take meatloaves and veggies out at same time.

Steps:

  • In a small bowl, combine first six ingredients; combine 2 teaspoons of the seasoning mixture with butter then toss with vegetables.
  • Transfer to a roasting pan and bake uncovered for 15 minutes at 425 degrees.
  • Meanwhile, rub oil on turkey then sprinkle with remaining seasoning mixture.
  • Move vegetables to edge of pan and place turkey in the center baking at 425 for 20 - 25 minutes or until a meat thermometer reads 170 degrees and the vegetables are tender.
  • Save half of the turkey for Buffalo Turkey Linguini (if making) or for another use such as sliced cool on salad or in a cool rice salad.
  • Remove remianing turkey and vegetables to a platter and keep warm; pour cooking juices into a small saucepan.
  • Combine cornstarch and water until smooth then gradually stir into saucepan bringing to a boil then cooking for 2 minutes (or until thickened) stirring constantly.

Here's what you need: carrots, butternut squash, broccoli floret, oil, small whole chicken, salt, black pepper, fresh thyme leaf, fresh thyme sprigs, butcher's twine

2 carrots, diced
1 cup butternut squash, diced
1 ½ cups broccoli floret
2 tablespoons oil
4 lb small whole chicken
salt, to taste
black pepper, to taste
1 leaf fresh thyme leaf, to taste
3 sprigs fresh thyme sprigs, for garnish
butcher's twine

Steps:

  • Preheat oven to 425°F (220°C).
  • In a large, ovenproof skillet or frying pan, mix together the carrots, squash, and broccoli, and coat with the oil. Spread the veggies into 1 even layer.
  • Place the chicken on top of the veggies.
  • Season the bird on all sides and in the cavity with salt, pepper, and fresh thyme leaves. While seasoning the bird, make sure that enough seasoning has fallen onto the veggies below to give them good flavor.
  • To truss the chicken, fold the wingtips underneath the breasts so that they fit snugly. Using a piece of butcher's twine, tie the legs together so the bird holds a nice shape.
  • Bake for 1 hour, or until a thermometer inserted into the thickest part of the breast reads 160°F (70°C).
  • NOTE: Once resting out of the oven, the temperature will continue to rise to a safe 165°F (75°C).
  • Let the chicken rest for at least 15 minutes once out of the oven, so that all of the juices in the meat can settle and the internal temperature has time to finish rising.
  • Carve the bird as desired.
  • Serve on a plate with the veggies, and fresh thyme sprigs for garnish.
  • Enjoy!

3 small russet potatoes, cut into 1/2-inch wedges
1 large onion, cut into 1/2-inch pieces
2 large carrots, cut into 1/2-inch chunks
5 large radishes, trimmed and cut into wedges
1 ½ tablespoons vegetable oil
1 teaspoon dried dill weed
½ teaspoon kosher salt, or to taste
¼ teaspoon fresh cracked black pepper, or to taste
½ cup whole-milk plain Greek yogurt
1 small lemon, zested and juiced
1 teaspoon dried dill weed
½ teaspoon kosher salt
½ teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon freshly ground black pepper
4 (5 ounce) boneless, skinless chicken thighs

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a rimmed baking sheet.
  • Place potatoes, onion, carrots, and radishes in a large bowl. Drizzle with oil, and toss to coat. Sprinkle with 1 teaspoon dill, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper. Toss again to coat. Pour veggies out onto the prepared baking sheet.
  • Bake in the preheated oven for 20 minutes.
  • While the veggies bake, prepare the chicken. In the same bowl the veggies were in, add the Greek yogurt, lemon zest, lemon juice, 1 teaspoon dill, 1/2 teaspoon kosher salt, onion powder, garlic powder, and 1/4 teaspoon black pepper. Mix until thoroughly combined. Dip each chicken thigh into the yogurt mixture, making sure each one is evenly coated.
  • Remove pan from the oven, and gently push the veggies to the sides of the pan, leaving room in the middle for the chicken thighs. Place the thighs in the middle of the baking sheet, and place pan back into the oven until chicken is no longer pink in the center, and veggies are tender, 30 to 40 minutes more. An instant-read thermometer inserted into the center of each thigh should read at least 165 degrees F (74 degrees C). If desired, place pan beneath broiler, and broil chicken for a few minutes to brown the chicken. Season with additional salt and pepper to taste before serving.
