One-Pan Roasted Sausage, Peppers and Potatoes image

1 14 oz. package smoked sausage, halved lengthwise and cut into pieces
1 red bell pepper, small chopped
1 green bell pepper, small chopped
1/2 medium red onion, chopped
2 lbs. yellow or red potatoes, small chopped
2 cloves garlic, minced
1/4 cup olive oil
1 teaspoon Italian seasoning
1 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes, optional

Steps:

  • Preheat oven to 400 degrees F.
  • Add sausage, veggies, potatoes and garlic to a large lined baking sheet. Drizzle with oil. Sprinkle with Italian seasoning, salt, pepper and red pepper flakes. With your hands, toss mixture together until evenly distributed.
  • Bake until veggies and potatoes are tender, about 30 minutes. Serve hot.

3 tablespoons extra virgin olive oil
2 teaspoons red wine vinegar
2 garlic cloves (minced (about 2 teaspoons))
1/2 teaspoon kosher salt

1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (plus additional to taste)

Steps:

2 medium any color bell peppers, cut into 2-inch pieces
1/4 cup apple jelly
1 tablespoon Dijon mustard
2 medium unpeeled apples, quartered

Steps:

  • Heat oven to 425°F. Spray 13x9-inch (3-quart) glass baking dish with nonstick cooking spray. Place sausage and bell peppers in sprayed baking dish. Pierce sausage several times with fork.
  • In small saucepan, combine jelly and mustard. Heat over low heat until melted, stirring frequently. Brush half of jelly mixture over sausage and bell peppers.
  • Bake at 425°F. for 10 minutes.

1 pound orecchiette or other short pasta

1 pound sweet Italian sausage, removed from casings
1 tablespoon butter, cut into small pieces

  • Heat broiler. Place peppers, skin side up, on a foil-lined baking sheet; broil 4 inches from heat until charred, 18 to 20 minutes. Transfer to a large bowl. Cover with plastic wrap; steam 2 to 3 minutes. Using a paper towel, rub off pepper skins, reserving any juices in bowl. Thinly slice peppers crosswise into 1/4-inch strips; return to bowl. Set aside.
  • In a large pot of boiling salted water, cook pasta until al dente, according to package instructions. Drain, reserving 1/2 cup pasta water.

  • Roast peppers on racks of gas burners over high heat, turning with tongs, until skins are blackened, 10 to 12 minutes.
