  • Preheat the oven to 300 degrees F.
  • Scoop out the pumpkin's seeds and pulp with a spoon and put into a colander. Rinse away all the stringy stuff. Give the seeds a separate rinse to make sure they're clean.
  • Spread the seeds out on a rimmed baking sheet and roast until dried out, 30 to 45 minutes. Toss with enough oil to nicely coat (this will depend on how many seeds you harvested), season with salt and sprinkle with the za'atar spice. Return the seeds to the oven and continue to roast until crunchy and golden, 20 to 30 minutes more.

2 tablespoons extra-virgin olive oil
Coarse salt

1/4 cup dried cranberries
1/4 cup hot water
1 tablespoon bourbon
1 tablespoon unsalted butter
1/4 cup pumpkin seeds
Pinch of cayenne pepper
1/4 cup celery leaves

Steps:

  • Preheat oven to 450 degrees with a rack set in the center.
  • Place squash, turnips, rutabaga, and apples on a large rimmed baking sheet. Drizzle with olive oil and season with 1/2 teaspoon salt and pepper; toss to combine. Transfer to oven and roast, turning once, until brown and tender when pierced with a knife, about 15 minutes.

The not-so-secret secret to roasting fresh pumpkin seeds - and crisping them properly - is making sure they're really dry. Patting the seeds down with paper towels does a fine job, but drying them out in the oven is even more efficient and effective. Once they've toasted slightly, simply dress them with oil and salt, then continue to roast them until lightly golden. Feel free to add spices - say za'atar, or cinnamon and cayenne - in Step 3 with the oil and salt. But take note: Some add-ins, like nutritional yeast or raw sugar, may melt under high heat, so sprinkle them onto the seeds just after roasting.

I found the basis for this recipe on All Recipes.com, posted there by Jani. I liked the idea but felt it needed some changes to fit my family's taste. It's a sweet, pumpkin pie spiced flavor with a hint of salt that we really enjoyed. I'm posting my version here for safe keeping because we all want to make this again next year.

5 tablespoons sugar (divided)
1/2 teaspoon sea salt (iodized table salt is fine, I just avoid it due to thyroid disease)
1 teaspoon pumpkin pie spice
3 tablespoons butter

Steps:

  • Preheat oven to 250 degrees F.
  • On foil lined cookie sheet (I fold up all four sides of foil to form a lip so they don't slide off), spread out seeds in a single layer.
  • Toast in oven for 45-50 minutes, stirring several times until seeds are dry & starting to brown.
  • When seeds are toasted, melt butter in a large skillet over med-high heat.
  • Add seeds & 2 Tablespoons of the sugar. Stir until sugar is melted. About 1 minute.

Extra-virgin olive oil
Kosher salt
1 pound portobello mushrooms, cleaned and gills removed
1 head radicchio Trevisano, chiffonade
1 cup baby arugula
1 Granny Smith apple, julienned and tossed with 1 teaspoon red wine vinegar
3 to 4 tablespoons toasted green pumpkin seeds
3 to 4 tablespoons red wine vinegar
Pumpkin seed oil, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • Toss the squash rings with olive oil and salt and bake on a sheet tray in the preheated oven for 15 to 20 minutes or until the squash is soft and starting to caramelize. Repeat this process with the mushrooms. *Hint - these can be done at the same time! Reserve until ready to use.
  • Toss together the radicchio, arugula, apple and pumpkin seeds in a medium bowl. Dress with vinegar, olive oil and salt. The salad should be dressed and well seasoned but not soggy.
  • To serve: Return the squash and mushrooms to the oven for 2 to 3 minutes, just to warm them up. Place a squash ring on a serving plate. Place a handful of the salad inside the ring. Cut the mushrooms into 4 slices and arrange them, fanned, on the side of the salad. Drizzle with pumpkin seed oil.

ROASTED SQUASH WITH MINT AND TOASTED PUMPKIN SEEDS



Roasted Squash with Mint and Toasted Pumpkin Seeds image

Use butternut squash or a small, firm cooking pumpkin such as a sugar pumpkin for the best results.

Yield Makes 8 to 10 servings

Number Of Ingredients 6

2 medium acorn or butternut squash or small sugar pumpkins (about 3 pounds total)
4 tablespoons olive oil, divided
Kosher salt and freshly ground black pepper
1/4 cup shelled pumpkin seeds (pepitas)
1 tablespoon aged balsamic vinegar
1/4 cup fresh mint leaves, torn

Steps:

  • Preheat oven to 425°F. Cut squash into 1 1/2"-thick wedges, leaving skin on. Scrape off seeds and strings with a large spoon and discard. Coat wedges with 3 tablespoons oil and season with salt and pepper. Lay wedges cut side down on a large rimmed baking sheet. Roast, carefully turning halfway through, until golden brown on both sides, about 30 minutes.
  • Heat remaining 1 tablespoon oil in a small skillet over medium-high heat. Add pumpkin seeds and cook, swirling pan often, until seeds are puffed and brown but still have a bit of green, 4-5 minutes. Transfer seeds to paper towels to drain. Sprinkle with salt. DO AHEAD: Squash and toasted pumpkin seeds can be made 4 hours ahead. Let stand separately at room temperature. Rewarm squash before serving.
  • Transfer squash to a large platter and drizzle with balsamic vinegar. Sprinkle squash with torn mint leaves and toasted pumpkin seeds.
