1 lb. petite red potatoes, halved (see notes)
1 onion, diced into chunks
1 teaspoon salt
2 teaspoon thyme
2 teaspoons garlic powder
1 teaspoon pepper
up to 1/4 cup olive oil

Steps:

  • Preheat oven to 425 degrees
  • Add potatoes, onions, and spices to a glass casserole dish
  • Pour on olive oil to coat well (I used the full 1/4 cup)
  • Toss to combine
  • Bake at 425 degrees for 50 - 60 minutes, checking to stir and flip every 15 - 20 minutes

This sweet and savory roasted vegetable dish with carrots and brown sugar was a huge hit with my vegetable-hating nieces this summer.

6 medium potatoes, chopped
6 medium carrots, peeled and chopped
3 medium onions, chopped
6 cloves garlic, crushed
¼ teaspoon dried sage
¼ teaspoon dried basil
¼ cup extra-virgin olive oil
2 tablespoons balsamic vinegar
2 tablespoons light brown sugar
sea salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place potatoes, carrots, onions, garlic, sage, and basil in a large bowl; add oil and balsamic vinegar and toss to coat. Transfer to a rimmed baking sheet.
  • Roast in the preheated oven, tossing a couple of times for even cooking, until tender, about 30 minutes. Remove from the oven and sprinkle with brown sugar. Continue to roast for 10 minutes. Season with sea salt and pepper just prior to serving.

2 pounds potatoes, sliced into 1/2-inch-thick pieces
1 onion, halved and each half cut into quarters
½ cup canola oil
½ cup olive oil
4 cloves garlic
1 envelope onion soup mix
1 tablespoon chopped fresh rosemary, or more to taste
1 tablespoon freshly ground black pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Combine potatoes and onion in a roasting pan; cover with canola oil and olive oil. Add garlic, onion soup mix, rosemary, and black pepper and stir until potatoes and onion are evenly coated. Cover roasting pan with aluminum foil.
  • Roast in the preheated oven for 25 minutes. Remove foil and continue to roast until potatoes and onion are browned and edges are crispy, 15 to 30 minutes.

1 1/2 pounds (about 3 potatoes) round, white thin skinned potatoes
1 large sweet onion
Coarse salt
1 tablespoon vegetable oil, 1 turn of the pan
2 tablespoons butter

Steps:

  • Heat a 10-inch heavy skillet over medium high heat.
  • Slice potatoes and onions very thin. Salt potatoes and onions. Add oil and butter to the pan. When the butter foams, add potatoes and onions to the skillet.
  • Place a dinner plate on top of potatoes and weight it with any heavy object: a sack of flour, heavy canned goods, etc. Let the potatoes and onions crust, 2 to 3 minutes, then turn, replace weights, and let them crust again. Keep turning the potatoes and onions over for about 20 minutes, until they are evenly golden and crusted.

6 onions (about 5 ounces each), left unpeeled
3 tablespoons peanut or safflower oil
1/2 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • Split potatoes in half lengthwise and cut onions in half crosswise.
  • Pour oil on a jellyroll pan, preferably aluminum. Sprinkle salt over potatoes and onions; place them cut side down in one layer on oiled pan.

1 tablespoon , achiote rojo or annatto seeds, rojo (packaged seasoning paste)
2 pounds plum tomatoes (2), peeled and quartered
2 tablespoons fresh orange juice
8 small white boiling onions, peeled and halved root to stem
12 small red potatoes, scrubbed and halved
1 tablespoon olive oil
1/2 teaspoon salt, or to taste

Steps:

  • Preheat oven to 350°. Put the seasoning paste, tomatoes, and orange juice in a blender and blend until smooth. Put the onions and potatoes in an ovenproof casserole dish. Add the seasoning mixture, oil, and salt. Turn to coat the vegetables. Cover and bake about 20 minutes. This is a perfect accompaniment to Shake-and-Bake Tofu (page 138), since they both bake at 425°. This needs more time in the oven, so start it first. Complete the meal with a simple salad or coleslaw.

4 to 5 large potatoes, preferably red-skinned or Yukon gold
2 medium red or green bell peppers or 1 of each, cut into thick strips
1 large onion, halved and sliced
2 tablespoons light olive oil
1/2 teaspoon salt-free herb-and-spice seasoning mix, optional
Salt and freshly ground pepper to taste

Steps:

  • Preheat the oven to 425°F.
  • Scrub the potatoes well. Cut them in half lengthwise, then into approximately 1/4-inch-thick slices.
  • Combine the potatoes with the remaining ingredients in a large mixing bowl and stir together. Transfer to a roasting pan (foil-lined if you prefer).

  • Combine all ingredients in a large plastic bag; shake until well coated. Empty bag into an ungreased 13-in. x 9-in. baking pan. Cover and bake at 350° for 35 minutes, stirring occasionally. Uncover and bake 15 minutes longer or until potatoes are tender.
