Grilled Sweet Potato Wedges with Orange-Molasses Butter image

3 large sweet potatoes
1 1/2 sticks (12 tablespoons) unsalted butter, softened
1/4 cup molasses
1 teaspoon finely grated orange zest
Pinch ground cinnamon
Kosher salt and freshly ground black pepper
Canola oil, for brushing
4 green onions, thinly sliced on the diagonal

Steps:

  • Bring the sweet potatoes to a boil in a large pot of salted water. Cook until just tender when pierced with a knife, 10 to 15 minutes. Drain and cool slightly.
  • Combine the butter, molasses, orange zest and cinnamon in a bowl. Season with salt and pepper. Mash with a fork to blend.
  • Heat a grill to medium-high. Cut each sweet potato into 6 to 8 wedges; brush with canola oil and season with salt and pepper. Grill the wedges until golden brown, about 3 minutes per side. Remove the sweet potatoes to a platter; immediately brush them with the orange-molasses butter and sprinkle with the green onions. Serve.

3 tablespoons unsalted butter, more for the pan
3 tablespoons honey
1/4 cup orange juice
1/4 teaspoon cayenne
1/4 teaspoon cumin
1/4 teaspoon smoked paprika (regular is fine if you don't have smoked)
4 medium sweet potatoes, preferably the same size and shape, peeled, halved crosswise, and quartered lengthwise (2 lb. total)
kosher salt
fresh ground black pepper

Steps:

  • Heat the oven to 400°F Lightly butter a large Pyrex or ceramic baking dish that can hold the sweet potato wedges in one layer.
  • In a small saucepan, melt the butter. Whisk in the honey, orange juice, and spices. Put the sweet potatoes in the buttered baking dish, add the honey mixture, and toss the pieces well to coat them thoroughly. Arrange the sweet potatoes in a single layer; sprinkle with salt and pepper.
  • Roast until the potatoes are browned and tender and the juices are bubbly and thickened, 45 to 55 minutes. To ensure even roasting, stir and baste several times with the pan juices, doing so more frequently toward the end of roasting. Serve at once.

2 tablespoons cold butter

Steps:

  • In a large saucepan over medium heat, cook sweet potatoes in boiling water until tender but still hold their shape, about 5 minutes; drain. Arrange in a buttered 2-qt. baking dish so slices overlap slightly. , In a saucepan, combine juice, butter, sugar, syrup, zest and spices; bring to a boil over high heat, stirring occasionally. Reduce heat to medium; cook until thickened, about 5 minutes. Drizzle over potatoes., In a small bowl, combine oats, sugar and cinnamon. Cut in butter until crumbly. Stir in pecans. 1/4 cup honey

1 lemon
2 limes
3/4 cup packed dark brown sugar
1 teaspoon kosher salt (Diamond Crystal)
1/2 teaspoon ground ginger

1/4 teaspoon black pepper
3 1/2 pounds sweet potatoes (about 9 small)
4 tablespoons unsalted butter, cut into 1/2-inch cubes

Steps:

  • Heat oven to 375 degrees (see Tip). Use a vegetable peeler to peel strips of zest off 2 oranges. Cut the strips into thin matchsticks using a sharp knife and transfer to a large bowl. Juice all the oranges, the lemon and limes into the bowl for 1 1/4 cups juice. Whisk in the brown sugar, salt, ginger, cinnamon, nutmeg and black pepper until the sugar dissolves.
