CORNBREAD STUFFING WITH APPLES image

Number Of Ingredients 12

5 Tblsp butter
2 1/2 cups finely chopped yellow onions
3 tart apples, cored and chunked, not peeled
3 cups coarsely crumbled cornbread (store bought is ok)
3 cups coarsely crumbled whole wheat bread (ends are ok)
3 cups coarsely crumbled white bread (ends are ok)
2 tsp. dried thyme (more if fresh)
1 tsp. dried sage (more if fresh)
pepper to taste
1/2 cup chopped Italian parsley
1 1/2 cups shelled pecan halves
cider or apple juice to moisten

Steps:

  • 1. Melt half butter in a skillet. Add chopped onions and cook over medium heat partially covered, until tender and lightly colored. Transfer onions and butter to large mixing bowl. 2. Melt remaining butter in the same skillet. Add apple chunks over high hear until lightly colored but not mushy. Add to mixing bowl. 3. Add remaining ingredients to bowl and combine gently. 4. Spoon into a casserole, cover. Bake at 325 degrees for 30-45 min. Add cider or juice as needed to keep moist.
