1 pound sirloin steak, cut into 1/2-inch pieces
1 pound cremini or button mushrooms, stems trimmed and caps halved
2 shallots, coarsely chopped
2 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
4 cups low-sodium chicken broth or water
1/2 cup quick-cooking barley
Chopped fresh parsley (optional)

Steps:

  • Preheat oven to 425 degrees. In a roasting pan or rimmed baking sheet, toss together steak, mushrooms, shallots, and olive oil; season with salt and pepper. Arrange in a single layer and roast until beef and mushrooms are browned, about 30 minutes. Transfer to a medium pot and add broth and barley. Bring mixture to a boil over medium-high, then reduce heat and simmer until barley is soft, about 12 minutes. To serve, season to taste with salt and pepper and top with parsley, if desired.

1 (8 ounce) package fresh mushrooms, halved
1 clove garlic, minced
1 teaspoon rosemary
¼ teaspoon salt
3 tablespoons olive oil
2 tablespoons butter
2 onions, sliced
2 cloves garlic, minced
1 teaspoon chopped fresh thyme
½ cup heavy cream, divided
1 (14.5 ounce) can chicken broth
½ cup milk
¼ teaspoon ground black pepper

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Mix the mushrooms, 1 minced clove garlic, rosemary, and salt together in a bowl. Drizzle the olive oil over the mushroom mixture, and toss to coat evenly; transfer to a baking sheet.
  • Roast the mushrooms in the preheated oven until golden brown, about 15 minutes.
  • Melt the butter in a large saucepan over medium heat. Stir the onions, 2 minced cloves garlic, and the thyme into the melted butter; cook and stir until the onions are completely soft, 7 to 10 minutes.
  • Combine the mushroom mixture and the onion mixture in the bowl of a blender or food processor with about half of the heavy cream; blend on low until combined yet slightly chunky. Return the blended mixture to the stockpot. Stir the remaining heavy cream, the chicken broth, milk, and black pepper through the blended mixture; bring the resulting soup to a simmer, and cook until the flavors are thoroughly combined, at least 15 minutes.

A tasty mushroom soup made with no milk or cream. White beans are used to thicken, and roasting mushrooms, onions, and garlic in the oven add great flavor. It's a flexible recipe. You can use any combination of mushrooms that you'd like, and any kind of broth that you'd like. This recipe calls for pureeing the onions, garlic and a small amount of the mushrooms, leaving most of the mushroom quarters for the soup, but you can puree as many of the mushrooms as you'd like. I've tried it as written, and also with all of it pureed. I actually like it best all pureed - it's like a more traditional mushroom soup. Adapted from a recipe found online - the original also called for 3 cans of beans, half of which were pureed, and half were left whole for the soup.

16 ounces button mushrooms, cleaned and quartered
8 ounces cremini mushrooms, cleaned and quartered
2 sweet onions, peeled and cut into wedges
3 garlic cloves, peeled and slightly smashed
2 1/2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
10 stems fresh thyme, divided
8 -10 fresh sage leaves
48 ounces low sodium chicken broth (or vegetable broth)
1 (15 ounce) can white beans

Steps:

  • Preheat oven to 450 degrees.
  • In a large bowl, toss the onions and garlic with 1 TBS olive oil, half the salt, and half the pepper.
  • Spread onto a baking sheet.
  • Then toss the mushrooms with the remaining olive oil, salt, pepper, 8 of the thyme stems, and the sage leaves.
  • Spread onto another baking sheet.
  • Roast the vegetables for 20-30 minutes - stirring every 8 minutes and remove and set aside any pieces that are browning nicely (before they burn).
  • In a blender, add 1 cup of broth, 1 can of beans, the onions, garlic, sage leaves, about 1/2 cup mushrooms. Blend until pureed.
  • Pour into a pot on the stove, and add the remaining chicken broth, mushroom pieces, and leaves from two remaining thyme stems.
  • Heat and simmer 15 minutes.

ROASTED ONION & MUSHROOM SOUP

This recipe is one I created by combining my Roasted French Onion Soup and elements of a mushroom soup found on 'Zaar; the mushrooms are made rich and succulent by roasting them with garlic while the onions are roasting. I make it using a combination of button, cremini, portabella, and shitake mushrooms - I love how the portabella mushrooms add depth and enhance the mushroom flavour. It can be served as is, or done up like french onion soup, with toasted crusty bread and melted old cheddar on top. If you're not a vegetarian, you could use beef broth instead of the dark vegetable stock.

2 -3 large Spanish onions or 2 -3 large vidalia onions, sliced in half rings
1 tablespoon olive oil

6 small fennel bulbs, stalks removed, halved lengthwise
Extra-virgin olive oil
Sea salt and freshly ground black pepper
1/4 cup (1/2 stick) unsalted butter
1 large onion, chopped
4 garlic cloves, minced
1/2 bunch fresh thyme sprigs, leaves stripped from the stem
1 pound white button mushrooms, wiped of grit and coarsely chopped
1 pound oyster mushrooms, wiped of grit and coarsely chopped
1 pound chanterelle mushrooms, wiped of grit and coarsely chopped
1 pound cooked chestnuts
3 quarts chicken stock
1/2 cup heavy cream
Fresh chopped chives, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the fennel halves, cut-side up, in a baking dish and drizzle with enough olive oil to come up half-way; season with a generous amount of salt and pepper. Roast for 30 minutes or until completely tender - the roasted fennel is the base of the soup, so it's important the flesh is soft enough to be cut with a spoon. Reserve until ready to serve.
  • In a large pot, melt the butter over medium flame, add the onion and garlic, and saute for 4 minutes until translucent. Toss the thyme into the pan, along with the mushrooms, season with salt and pepper. Cook, stirring, for 10 to 15 minutes, until the mushrooms give off their liquid. Add the chestnuts and cook for a few more minutes until they have some nice color on them. Remove about 1 cup of the mixture to save as a garnish for the soup.
  • Pour the stock into the pot and bring to a boil. Reduce the heat to medium-low and simmer, uncovered, for 15 minutes, stirring now and then. Remove from the heat and puree the soup until completely smooth, using a handheld or regular blender. Stir in the cream to make the soup even richer, and simmer gently for 5 minutes. Taste for salt and pepper.
  • To serve: Ladle the soup into soup bowls; garnish each serving with a bit of the reserved mushrooms and chestnuts, a roasted fennel half, and a sprinkle of chopped chives.

  • Preheat oven to 325 degrees F. Place tomatoes in a large baking dish and drizzle with 2 tablespoons of the olive oil and sprinkle with the garlic, season with salt and pepper. Roast for 25 to 30 minutes, or until the tomatoes are soft.
  • Heat the remaining olive oil in a medium stock pot over medium heat. Add the onions and carrots and cook until the onions are soft, about 5 minutes. Add the roasted tomatoes, garlic, and the juices that have accumulated. Add the stock and fresh thyme and cook for 20 minutes. Place the cream in a small saucepan over medium high heat and cook until reduced by half. Transfer the mixture to a blender and blend until smooth, strain into a clean saucepan over low heat, add the reduced cream, and cook for 5 minutes.
  • For the Grilled Fontina-Mushroom Sandwich: Heat olive oil in a large saute pan, add the mushrooms, and cook until golden brown. Season with salt and pepper, and stir in the sage. Brush the bread on 1 side with the butter. Turn 4 of the slices over on a work surface. Divide the cheese among the slices then divide the mushrooms on top of the cheese. Cover with the remaining 4 slices of bread, butter-side up.
  • Heat a frying pan over medium heat. Add the sandwiches and cook, turning once, until golden, about 2 minutes per side.

  • Preheat oven to 400°F. Line 2 large baking sheets with foil. Divide mushrooms between prepared baking sheets. Drizzle mushrooms on each sheet with 3 tablespoons oil. Sprinkle generously with salt and pepper; toss to coat. Cover with foil. Bake mushrooms 30 minutes. Uncover and continue baking until mushrooms are tender and still moist, about 15 minutes longer. 2 onions, divided
3 tablespoons olive oil, divided
salt & freshly ground black pepper
1 carrot, peeled and chopped
1 celery rib, peeled and chopped
1 tablespoon garlic, minced
1 teaspoon shallot, minced
1 lb cremini mushroom, washed and trimmed of any dry ends
1 cup white wine, preferably Chardonnay
1 tablespoon fresh thyme, chopped
1 quart vegetable stock
3/4 cup heavy cream
parmigiano-reggiano cheese (to garnish)
2 teaspoons minced chives

Steps:

  • Heat the oven to 400 degrees.
  • Peel one of the onions but leave it whole.
  • Rub 1 tablespoon of the oil and a pinch each of the salt and pepper over the onion, then wrap it in foil. Roast the onion until it is softened and lightly caramelized, about 1 hour. Remove and cool.
  • Meanwhile, peel and chop the remaining onion.
  • Heat a medium, heavy-bottom saucepan over medium heat. Add the remaining olive oil and a pinch each of salt and pepper. Stir in the chopped onion, carrot and celery and cook until softened, about 8 to 10 minutes.
  • Stir in the garlic, shallots and mushrooms and cook for 5 minutes, stirring frequently. Reserve one mushroom to garnish the finished soup.
  • Stir in the wine, making sure to scrape the browned bits from the bottom of the pan. Stir in the fresh thyme and bring the contents to a gentle simmer. Cook until the mushrooms soften, about 5 to 6 minutes.
  • Stir in the vegetable stock and continue to simmer until the liquid is reduced by half, about 10 minutes.
  • Remove from the heat and purée the soup with an immersion blender, or in batches in a blender. Return the soup to low heat and stir in the cream. Season with a generous teaspoon of salt and a pinch of pepper, or to taste. This makes about 8 cups of soup.
  • Chop the roasted onion into pieces no larger than one-quarter inch. Stir the chopped onion into the soup. Check and adjust the seasoning if desired.
  • Slice the reserved mushroom into 8 very thin, lengthwise slices. Ladle the soup into warmed bowls. Garnish each portion with a thin shaving of the Parmigiano-Reggiano, one-fourth teaspoon of the chives and a thin slice of mushroom.
  • Serve immediately.

  • Heat oil in large auscepan over medium low heat. Add onions and cook, covered for 8 minutes or until the onion is soft and translucent. Add the mushrooms and cook, covered for another 7 minutes or until they soften. Remove 1 1/2 cups of the mushroom mixture and set aside. Add the stock, water, quinoa, roasted garlic, thyme, salt and pepper to the saucepan. Bring to a boil, reduce to a simmer, cover and cook for 15 minutes or until the quinoa is tender. 6 tablespoons butter
1/2 cup all-purpose flour
4 tablespoons dry onion flakes (or 1 small fresh onion, chopped finely)
4 tablespoons granulated garlic (or 1 clove garlic, minced)
1 tablespoon dried parsley
1/2 teaspoon white pepper
2 teaspoons dried thyme
8 cremini mushrooms (medium sized)
9 white mushrooms (medium sized)
1 1/2 cups chicken broth
8 ounces half-and-half or 8 ounces whole milk

Steps:

  • Prep:.
  • Chop 4 Crimini mushrooms and 4 White mushrooms finely and set aside.
  • Slice remaining White and Crimini mushrooms and reserve in separate bowl.
  • Directions:.
  • In a 5-quart pot, melt butter on med-high heat until slightly browned, 1-2 minutes - this will happen fairly quickly so be careful to watch it; turn heat down to medium.
  • Gradually whisk in all-purpose flour - mixture will be bubbly.
  • Stir in dried onion, granulated garlic, parsley and white pepper to rue and stir constantly for 2 minutes until onion and garlic are fragrant and slightly browned; mixture will seem on the dry side.
  • Slightly lower your heat to Medium-Low and add contents of chopped mushrooms and mix thoroughly for 1 minute.
  • Add your chicken stock to the mushroom mixture and bring heat up to Medium, stirring occasionally so your mixture doesn't stick to the bottom.
  • Cook for 5 minutes to thicken.
  • Add in the dried Thyme and mix thoroughly.
  • Add your whipping cream, half-and-half or whole milk and whisk together. This will thin out your mixture a bit and make for a smooth consistency.
  • Heat your mixture for 2 minutes.
  • Add your sliced mushrooms and stir, until bubbly.
  • Turn heat to Medium-Low and simmer for an additional 5 minutes, stirring occasionally.
  • Remove from heat. You soup will thicken as it stands.

1 lb nopales cactus pieces, paddles
olive oil
1/2 lb fresh tomatillo, husked and washed (about 5 medium)
1/2 lb ripe tomatoes (about 2 medium)
8 cloves garlic, peeled and finely minced
1/3 cup sliced jalapeno pepper
1 onion, cut into 1/2 inch-thick slices
1/4 teaspoon ground aniseed
6 cups vegetable stock
9 sprigs cilantro
1/2 lb fresh shiitake mushroom, stems removed and thinly sliced
salt and pepper, to taste

Steps:

  • Preheat broiler.
  • If nopales have thorns, carefully trim them from cactus paddles with scissors, then rub paddles with clean plastic scouring pad to get rid of the very small ones.
  • Rinse with water and brush each side with a little olive oil.
  • Set on a cookie sheet and broil, turning occasionally, until limp, (10 to 15 minutes).
  • Set the cooked cactus paddles aside to cool.
  • When cool, cut in half lengthwise, then cut each half into 1/4-inch-wide slices.
  • Place the tomatillos and tomatoes whole on baking sheet and broil until soft and blackened in spots, about 4 minutes.
  • Turn and broil on other side.
  • Set aside to cool; peel tomatoes when cool.
  • While the cactus is being cooked, combine the garlic, jalapenos, onion, anise seed and olive oil in large stockpot.
  • Saute until onions are tender (not browned) and garlic is fragrant, about 6 minutes.
  • Combine roasted vegetables in food processor with 2 cups of the vegetable stock and the cilantro.
  • Puree until chunky smooth.
  • Add the puree to the garlic and onion mixture with remaining stock and simmer over medium flame.
  • Add mushrooms, reduce heat to low, cover and simmer approximately 20 minutes.
  • Add cactus pieces to soup and simmer 5 more minutes.
  • Serve hot.

2 onions, divided
3 tablespoons olive oil, divided
Salt Freshly ground black pepper
1 carrot, peeled and chopped
1 rib of celery, peeled and chopped
1 tablespoon minced garlic
1 teaspoon minced shallot
1 pound cremini mushrooms, washed and trimmed of any dry ends
1 cup white wine, preferably Chardonnay
1 tablespoon chopped fresh thyme
1 quart vegetable stock
3/4 cup heavy cream
Parmigiano-Reggiano cheese for garnish
2 teaspoons minced chives

Steps:

  • 1. Heat the oven to 400 degrees. Peel one of the onions but leave it whole. Rub 1 tablespoon of the oil and a pinch each of the salt and pepper over the onion, then wrap it in foil. Roast the onion until it is softened and lightly caramelized, about 1 hour. Remove and cool. 2. Meanwhile, peel and chop the remaining onion. 3. Heat a medium, heavy-bottom saucepan over medium heat. Add the remaining olive oil and a pinch each of salt and pepper. Stir in the chopped onion, carrot and celery and cook until softened, about 8 to 10 minutes. Stir in the garlic, shallots and mushrooms and cook for 5 minutes, stirring frequently. Reserve one mushroom to garnish the finished soup. 4. Stir in the wine, making sure to scrape the browned bits from the bottom of the pan. Stir in the fresh thyme and bring the contents to a gentle simmer. Cook until the mushrooms soften, about 5 to 6 minutes. Stir in the vegetable stock and continue to simmer until the liquid is reduced by half, about 10 minutes. 5. Remove from the heat and purée the soup with an immersion blender, or in batches in a blender. Return the soup to low heat and stir in the cream. Season with a generous teaspoon of salt and a pinch of pepper, or to taste. This makes about 8 cups of soup. 6. Chop the roasted onion into pieces no larger than one-quarter inch. Stir the chopped onion into the soup. Check and adjust the seasoning if desired. 7. Slice the reserved mushroom into 8 very thin, lengthwise slices. Ladle the soup into warmed bowls. Garnish each portion with a thin shaving of the Parmigiano-Reggiano, one-fourth teaspoon of the chives and a thin slice of mushroom. Serve immediately.

3/4-1 lb sirloin steak, sliced into 1/2" cubes (i used 3/4 pound new york steak)
1 lb crimini mushrooms, stems trimmed
2 shallots, coarsely chopped
1-2 clove garlic, peeled and cut in half
2 Tbsp extra virgin olive oil
salt, to taste
cracked black pepper, to taste
4 c beef broth or chicken broth
1/2 c barley (read *note below)
1 fresh bay leaf
GARNISH:
1/2 Tbsp worcestershire sauce, to taste
chopped fresh italian parsley

Steps:

  • 1. *Note: In place of quick-cooking barley, I substituted unhulled barley (also known as whole wheat barley). However, unhulled barley takes much longer to cook-closer to an hour and its texture is chewier rather than softer like quick-cooking/pearl barley. You can choose several options: quick-cooking barely as indicated in the original recipe, try unhulled barley taking into consideration the cooking time involved, or cook the unhulled barley separately and add it to the soup the final 5-10 minutes of cooking.
  • 2. ORIGINAL RECIPE: Preheat oven to 425 degrees. In a roasting pan or rimmed baking sheet, toss together steak, mushrooms, shallots, garlic and olive oil; season with salt and pepper. Arrange in a single layer and roast until beef and mushrooms are browned, about 30 minutes. Transfer to a medium pot and add broth, barley and fresh bay leaf. Bring mixture to a gentle boil over medium-high, then reduce heat and simmer until barley is soft, about 12 minutes. HERE'S WHAT I DID: Prepped the same manner as above but I slow roasted the meat and vegetables at 225 degrees for 1 1/2 hours.
  • 3. To serve, season to taste with salt, pepper and/or more Worcestershire sauce and top with fresh parsley.

ROASTED MUSHROOM SHEET PAN SOUP

24 ounces cremini mushrooms, stems removed
1 large shallot, quartered
2 tablespoons olive oil
1/2 teaspoon dried thyme
1/4 teaspoon kosher salt, plus additional as needed
16 ounces chicken broth
One 8-ounce container sour cream
Ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed sheet pan with parchment paper.
  • Place the mushrooms, shallots, oil, thyme and salt in a bowl. Toss to coat the vegetables evenly. Spread the mixture evenly on the lined sheet pan.
  • Bake until the shallots are lightly browned, about 35 minutes. Allow to cool slightly. Place half the cooked mushroom mixture in a blender using tongs and add half the chicken broth and sour cream. Blitz until smooth and transfer to a large soup pot. Repeat with the remaining mushroom mixture, broth and sour cream.
  • To serve immediately, warm the soup through and season with salt and pepper to taste.
  • To freeze, divide the soup evenly among four 16-ounce mason jars. Leave at least 1 inch of space at the top of each jar to prevent cracking. Screw on lids and freeze. To serve, place jars in a saucepan filled with cold water over medium heat until warm. Or, place a frozen jar in your lunchbox and reheat in the microwave for an on-the-go lunch.
