Made with roasted garlic, heavy whipping cream, butter, Parmesan cheese and spices, this creamy sauce is amazing on pasta, as a dip for bread, and more!

1 head roasted garlic (*see note #1)
6 Tbsp unsalted butter
1 3/4 cup heavy whipping cream
1 1/4 cup Parmesan cheese (freshly grated is best)
1/2 tsp black pepper, more or less, depending on your tastes
1 Tbsp heavy whipping cream
2 tsp cornstarch

Steps:

  • Remove cloves of roasted garlic from the head and mash with a fork until smooth and pasty. This can also be done in a food processor if you'd like.
  • In a medium saucepan over MED-LOW heat, add butter and melt.
  • Pour in heavy whipping cream and roasted garlic paste. Stir and heat to a simmer.
  • Stir in Parmesan cheese and whisk until smooth.
  • In a small bowl, combine 1 Tbsp heavy whipping cream and 2 tsp cornstarch (or flour), and whisk until smooth.
  • Add the cornstarch and heavy cream mixture (it will be a thick paste-like consistency), whisking as you add it to remove any lumps and fully incorporate it into the sauce.
  • Continue to whisk and simmer until sauce has thickened to a classic cream sauce consistency. This may take a few minutes, or it could happen quicker, it all depends on your stovetop and saucepan.

This is a lovely roasted garlic and parmesan Alfredo sauce. Great served over pasta ! I love the flavor of the roasted garlic in this sauce. Add some pasta and/or meat and a salad and you have a meal ! I add *8 oz. of pasta to this sauce for Pasta Alfredo. (it makes 4 servings of that) Ummm um, it's sooo good !! *pre cooked...

1 c parmesan cheese, grated
1/2 c pecorino romano cheese, grated
1/3 c onion, fine diced
1 Tbsp roasted garlic
2 Tbsp butter
2 Tbsp olive oil
1/4 c flour
1/4 c pasta water (or increase milk by 1/4 cup)
1 1/2 c milk or cream

Steps:

  • 1. Grate cheeses and fine dice the onion and set aside. If you're roasting your own garlic then mince it. I used the roasted garlic in a jar.
  • 2. Add olive oil to hot pan. Add onion a sauté for a minute or two, just till they are translucent.
  • 3. Add garlic and cook about another minute. Now add in the butter.
  • 4. Once the butter is melted add in the flour and cook for two minutes.
  • 5. Now add in the milk or cream , stirring while you do so.
  • 6. When hot, add in the cheeses and pasta water. Reduce the heat and cook till cheese is melted. You can taste and see if you want to add in salt and pepper, but I did not use them as the cheeses are pretty salty as it is. Serve over pasta.

I will never buy alfredo sauce in a jar again. This is amazing and very easy to make. I use it in the Chicken Alfredo Roll-ups and Chicken Alfredo Pizza.

1/2 cup butter
2 ounces cream cheese
2 cups heavy cream
2 teaspoons garlic powder
1/2 teaspoon garlic, fresh minced
salt
pepper
1/2 teaspoon dried oregano
2/3 cup parmesan cheese

Steps:

  • In a medium to large saucepan melt the butter over medium heat.
  • Add fresh minced garlic and cook for 1 minute.
  • Add the cream cheese and whisk until smooth and melted.
  • Whisk in the heavy cream. ( I have substituted half & half.)
  • Season with the garlic powder, oregano, salt and pepper.
  • Bring to a simmer and whisk frequently until sauce thicken, around 15-20 minutes.
  • Stir in the parmesan cheese.
  • Remove from heat when cheese is melted.

1 -2 teaspoon garlic powder (start with 1 and taste)

  • In a medium to large saucepan melt the butter over medium heat.

1 head garlic
1 teaspoon olive oil
1 pound dried fettuccine pasta
1/2 cup butter, 1 stick
1 cup heavy cream
2 cups freshly grated Parmesan cheese
1/2 teaspoon fresh cracked black pepper
1/4 cup chopped fresh parsley

Steps:

  • Preheat oven to 425 degrees. Cut the top 1/4 inch off the garlic. Place garlic on a piece of aluminum foil. Drizzle oil over the top. Wrap in the foil and roast for 40 - 45 minutes or until browned and soft. Remove from oven. Allow to cool. Use a fork to remove cloves. Mash together in a bowl. Bring a large pot of water to boil and cook pasta according to package directions. Drain, reserve 1/2 cup pasta water. While the pasta is cooking, melt butter in a skillet over medium heat. Add in roasted garlic and cook until garlic is fragrant, about 1 minute. Stir in 1/2 of the cheese and cook just until it starts to melt. Stir in 1/2 of the cream and whisk until the cheese melts. Add in remaining cheese and cream. Continue whisking until smooth. Add pepper and parsley. If sauce appears to thick, thin with a little of the reserved pasta water. Add hot pasta and toss to coat. Add salt if needed. Serve immediately. Enjoy!

2 tablespoons all-purpose flour
3 cups half-and-half

  • In large saucepan, melt butter over medium-high heat.

I served this oh-so-garlicky and wonderful sauce over portabello ravioli with a salad, garlic bread and a lovely Pinot Gris. What a treat! Turned frozen prepared pasta into a simple, yet gourmet meal. Next time, I think I will add steamed broccoli to the pasta bowls before adding the sauce.

2 tablespoons garlic, roasted and pureed
salt and pepper

Steps:

  • Slice top off garlic head and wrap in foil. Bake at 350F for 30-45 minutes. Cool and squeeze garlic paste from cloves. Note: I always pour olive oil over the garlic head before baking/roasting.
  • Heat cream in a skillet or saucepan.
  • Whisk in parmesan cheese and garlic, until thick and smooth.
