1 head cauliflower (about 2 pounds), cut into bite-size florets (about 8 cups)
1/4 cup extra-virgin olive oil
5 cloves garlic, roughly chopped
1/4 teaspoon crushed red pepper
2 teaspoons kosher salt
2 teaspoons roughly chopped fresh thyme leaves

Steps:

  • Preheat the oven to 450 degrees F.
  • Toss the cauliflower with the olive oil, garlic, and red pepper on a baking sheet; sprinkle with the salt and thyme and toss again. Roast until golden and tender, about 20 minutes. Transfer to a serving bowl and serve.

1 head cauliflower
1/4 c olive oil
1 1/2 Tbsp ras el hanout
1 tsp salt
1/2 c slivered almonds
1/2 c tahini paste
1/4 c water
3 Tbsp lemon juice
1 clove garlic
1/2 tsp salt
1/4 tsp freshly ground black pepper

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Wash and trim caulifower head, leaving core intact. Slice the caulifower lengthwise into 4-6, 3/4' inch slices depending on size of cauliflower. Brush both sides of slices generously with the olive oil and sprinkle with the Ras el Hanout and salt. Roast for 30 minutes or until tender and lightly browned, turning once halfway. Add the almonds during the last ten minutes of cooking time.
  • 3. While the cauliflower is roasting, prepare the sauce; Combine the tahini, water, lemon , garlic, salt and pepper in a food processor and blend until smooth, adding more water if necessary. Cover and set aside.
  • 4. To serve, remove the slices to a platter and sprinkle with the toasted almounds. Spoon the tahini sauce generously over the cauliflower slices . Serve with lemon, and enjoy!

3 tablespoons olive oil
3 tablespoons tahini
2 -3 tablespoons ras el hanout spice mix (use Ras El Hanout - Moroccan Spice Mix from Vegetarian Times #479884 or Clean Eating Ras El Hanout Moroccan Spice Mix #374781)
8 cups cauliflower florets (2 small or 1 large head of cauliflower cut into 2-inch florets)
2 lemons, cut into wedges
2 tablespoons tahini
1 tablespoon lemon juice
2 teaspoons ras el hanout spice mix
1/2 cup water
salt and pepper, to taste (optional)
8 lemon wedges, for garnish (optional)

Steps:

  • CAULIFLOWER:.
  • Preheat oven to 400 F (204 C). Line baking sheet with parchment paper, or coat with cooking spray.
  • Whisk together oil, tahini, and Ras el Hanout in large bowl. Add cauliflower, and toss to coat cauliflower with sauce. Spread cauliflower on prepared baking sheet, and roast 20-25 minutes, or until browned and dry, stirring once or twice.
  • TAHINI SAUCE:.
  • Whisk together all ingredients with 1/2 cup water in bowl. Season with salt and pepper, if desired.
  • ASSEMBLE:.
  • Transfer cauliflower to platter, and drizzle with tahini sauce just before serving. Serve with lemon wedges.

Roasted Cauliflower With Ras el Hanout image

The Argentine chef Tomás Kalika serves this delicious whole roasted cauliflower family-style at Mishiguene, his Buenos Aires restaurant Mr. Kalika adapted the idea from the chef Eyal Shani, whom he worked for in Israel, and who helped propel the whole roasted cauliflower to international fame. Poaching the cauliflower in advance ensures that it is tender and moist all the way through. You could easily substitute water for milk, particularly if the idea of discarding the milk bothers you. But Mr. Kalika says milk helps flavor the vegetable and encourage browning. (And the cauliflower-infused milk can be reused to make a béchamel sauce, for instance.)

1 head cauliflower, washed, with leaves intact
1 teaspoon salt, more for seasoning
1/2 gallon whole milk or water
1/3 cup clarified butter (see note)
4 teaspoons ras el hanout (see note)
Salt, to taste

Steps:

  • Place the cauliflower in a large pot and add the salt and milk (or water) until it's covered. Top up with water if necessary to completely cover the cauliflower. Bring to a boil, then turn down the heat to simmer gently until the cauliflower is very tender, about 45 minutes. When the pot is cool, transfer it to the refrigerator overnight.
  • The next day, heat oven to 450 degrees. Drain the cauliflower well and dry the surface with paper towels. (If you used milk, discard or save for use in another recipe.) Place it on a large sheet of parchment paper on a sheet pan and drizzle the clarified butter all over the cauliflower, using your hands to make sure the surface is covered. Sprinkle the ras el hanout evenly over the surface and season generously with salt.
  • Wrap the parchment paper around the base of the cauliflower, leaving only the white part exposed. Roast in the paper for 30 to 40 minutes, or until the surface is a deep golden brown. Serve hot.

This recipe was originally one of Martha Stewart's but I've adjusted it to make it more to my taste. This has become my DH's favorite vegetable recipe. In fact, we love it so much that the two of us usually pig out on the whole recipe.

2 lbs cauliflower
2 tablespoons extra virgin olive oil
1 teaspoon garlic salt
1/2 teaspoon pepper
1/2 teaspoon chili powder (I use Ancho Chile Powder)
1 tablespoon balsamic vinegar

Steps:

  • Preheat oven to 450 degrees.
  • Trim head of cauliflower and cut into bite-sized florets.
  • Dry cauliflower well.
  • Drizzle with olive oil (you may need more than 2 T) then sprinkle with garlic salt, pepper, and chile powder.
  • You can adjust seasonings according to your personal preferences.
  • Toss cauliflower until seasonings are well distributed.
  • Pour into a greased baking pan and bake for 20- 25 minutes, stirring once or twice.
  • Cauliflower should be a dark, golden brown when baking is completed.
  • Remove from oven and pour into a serving dish.
  • Top with balsamic vinegar and toss well.

Roasting cauliflower kicks the flavour up a notch, with sweet pomegranate seeds and earthy tahini, served in warmed pitta bread

1 tsp ras el hanout
¼ tsp cinnamon
½ tsp smoked paprika
1 garlic clove , crushed
1 tsp olive oil
170g pot Greek yogurt
1 small cauliflower
2 tbsp tahini
juice 2 lemons
400g can chickpeas , drained
2 wholemeal pitta breads (or gluten-free alternative)
110g pack pomegranate seeds (or seeds from 1 small pomegranate)
2 tbsp sunflower seeds , toasted
small handful flat-leaf parsley , leaves only, chopped
small handful mint , leaves only, chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4. In a small bowl, mix together the ras el hanout, cinnamon, paprika, garlic, oil and yogurt. Take the cauliflower and remove the outer leaves and the base of the stalk so that it sits flat in a large roasting tin. Rub the spiced yogurt mixture all over it then pour 100ml water into the roasting tin around the base of the cauliflower. Cover with foil and bake in the oven for 45 mins.
  • Meanwhile, put the tahini in a bowl and slowly add the lemon juice, stirring constantly, to make a smooth sauce - it should be the consistency of single cream. Chill until needed.
  • When the cauliflower has roasted, remove the foil and return to the oven for a further 10-15 mins. Put the chickpeas in a saucepan with 50ml water and cook over a medium heat until piping hot. Season, then crush with a potato masher - you want some to be smooth and others to be just a little broken. Stir in 1 tsp of the tahini sauce.
  • Take the cauliflower out of the oven and put the pitta bread in to warm for 2-3 mins while you cut the cauliflower into 8 wedges.
  • To serve, place a warmed pitta bread on each plate, top with the crushed chickpeas followed by the cauliflower wedges. Drizzle with the remaining tahini sauce and sprinkle over the pomegranate seeds, sunflower seeds and herbs. Serve warm or cold.

This Middle Eastern sauce goes wonderfully with foods other than roasted cauliflower. It's traditionally served with falafel and keftes, fish, salads, deep-fried vegetables - or just with pita bread.

1 large cauliflower, broken into florets
Salt to taste
Freshly ground pepper to taste
2 tablespoons extra virgin olive oil
2 to 3 garlic cloves, to taste, cut in half, green shoots removed
1 cup sesame tahini
1/4 to 3/4 cup fresh lemon juice, to taste
1 cup finely chopped flat-leaf parsley (2 bunches)

Steps:

  • Preheat the oven to 400 degrees. Meanwhile, bring a large pot of water to a boil, and fill a bowl with ice water. When the water comes to a boil, salt generously and add the cauliflower. Blanch for two minutes, and transfer to the ice water. Drain and blot dry. Transfer to a baking dish.
  • Season the cauliflower with salt and pepper, and toss with the olive oil. Place in the oven, and roast for 30 to 40 minutes, stirring from time to time, until tender and lightly browned.
  • Puree the garlic cloves with 1/4 teaspoon salt in a mortar and pestle. Transfer to a bowl, and whisk in the sesame tahini. Whisk in the lemon juice, beginning with the smaller amount. The mixture will stiffen up. Gradually whisk in up to 1/2 cup water, until the sauce has the consistency of thick cream (or runny yogurt). Stir in the parsley. Taste, and adjust salt and lemon juice. Serve with the cauliflower. You will have some sauce left over.
