ROASTED CABBAGE WEDGES
Super simple to make, this healthy side dish packs a crunchy, flavorful punch. Try serving the roasted wedged alongside our Slow-Cooker Corned Beef.

- Preheat oven to 400 degrees. Brush a rimmed baking sheet with 1 tablespoon extra-virgin olive oil. Place 1 medium head green cabbage, cut into 1-inch-thick rounds, in a single layer on sheet and brush with 2 tablespoons oil. Season with coarse salt and ground pepper and sprinkle with 1 teaspoon caraway or fennel seeds. Roast until cabbage is tender and edges are golden, 40 to 45 minutes.

ROASTED CABBAGE WEDGES

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Cut the head of cabbage in half vertically through the core. Cut each half into 4 wedges. Place the wedges on the baking sheet.
- Combine butter, caraway seeds, and vinegar in small bowl. Brush 1/2 of the mixture over the wedges. Season with salt and pepper.
- Roast in the preheated oven for 15 minutes. Gently flip the wedges, brush with remaining butter mixture, and season with more salt and pepper. Return to the oven and roast until wedges are soft and edges are lightly charred, 8 to 10 minutes more.

SWEET AND SPICY ROASTED CABBAGE WEDGES

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Cut cabbage vertically through the core into 4 wedges. Whisk Thai sweet chili sauce and Sriracha together in a bowl.
- Place cabbage wedges on the prepared baking sheet and brush 1/2 of the chili-Sriracha sauce over the top of each wedge.
- Bake in the preheated oven for 10 minutes. Heat the oven's broiler to high. Brush remaining sauce over the cabbage wedges. Broil for 5 minutes.

ROASTED CABBAGE WEDGES

- 1. Preheat the oven (or the grill) to 425 degrees.
- 2. Mix the olive oil, bacon bits, lemon juice, worcestershire sauce, salt and pepper to make the marinade.
- 3. Prepare the cabbage. Rinse it under water and remove any yucky loose leaves.
- 4. Cut the head in half on the core.. Then cut the halves in half again...to make quarters.
- 5. Lay each wedge on a sheet of aluminum foil large enough to wrap it up in. Spoon about 2 tbsp of the marinade on top making sure to get it in all the nooks and crannies.
- 6. Wrap each wedge and bake or Grill for 20-30 minutes. I say 20-30 becuase they will continue to cook once you pull them out and I like mine still crunchy. So I let them sit for a little while pull them out around the 20 minute mark. However, some in the comments have cooked them up to an hour for softer cabbage.
- 7. The wedges reheat wonderfully in the oven or the microwave!
ROASTED GREEN CABBAGE WEDGES WITH OLIVE OIL AND LEMON
An easy way to prepare cabbage as a side dish is also one of the tastiest, healthiest, and most novel: roasting. Brushed with olive oil and seasoned with salt and pepper, the cabbage wedges turn crisp and black in spots on the outside and meltingly moist at the core.

- Preheat oven to 450 degrees. Arrange cabbage on a rimmed baking sheet. Brush both sides of wedges with oil. Season with salt and pepper. Roast, flipping halfway through, until edges are brown and crisp, 25 to 30 minutes. Squeeze lemons over cabbage.

My friend posted this on Facebook, and I wanted to save it here. This recipe should lend itself to multiple variations in seasoning, such as a more Asian flavor or Italian flavor.

- Preheat the oven to 425 degrees. (You can also grill or microwave.).
- Cut the cabbage into at least 4 to 6 wedges, cutting pole to pole.
- Combine all the ingredients except the cabbage in a small bowl.
- Place each wedge on a piece of foil that is large enough to wrap the wedge. Drizzle about 2 tbsp of the marinade on each wedge. Wrap each wedge in the foil.
- Bake for 20 to 30 minutes, or up to an hour, depending on how soft you like your cabbage.
