3 lb butternut squash
6 cups nonfat chicken broth
1 medium onion, chopped
1 tablespoon unsalted butter
1 1/2 cups Arborio rice (9 oz)
1 teaspoon minced garlic
1/2 teaspoon ground cumin
5 tablespoons finely grated Parmigiano-Reggiano (1/2 oz)
1 teaspoon salt
1 1/2 teaspoons chopped fresh sage
4 oz arugula or baby spinach (6 cups), stems discarded and leaves very coarsely chopped

Steps:

  • Roast squash:
  • Preheat oven to 450°F.
  • Halve squash lengthwise and seed, then cut crosswise into 1 1/2-inch-wide slices and season with salt. Roast slices, skin side down, in a shallow baking pan in middle of oven until tender and golden, about 50 minutes.
  • Set aside 6 crescent-shaped squash slices for serving and keep warm. Cut flesh from remaining slices into 1/2-inch pieces, discarding skin.
  • Start risotto after squash has been roasting 40 minutes:
  • Bring broth to a simmer and keep at a bare simmer, covered.
  • Meanwhile, cook onion in butter in a 4-quart heavy pot over moderate heat, stirring, until softened, about 6 minutes. Add rice, garlic, and cumin and cook, stirring, 3 minutes.
  • Stir in 1/2 cup simmering broth and cook at a strong simmer, stirring frequently, until broth is absorbed. Continue simmering and adding broth 1/2 cup at a time, stirring constantly and letting each addition be absorbed before adding the next, until rice is creamy-looking but still al dente (it should be the consistency of thick soup), about 18 minutes total. (There will be leftover broth.)
  • Stir in squash pieces, then stir in cheese, salt, sage, and arugula and simmer, stirring, 1 minute. (If necessary, thin risotto with some leftover broth.)
  • Serve risotto immediately, spooned over reserved squash slices.

1 1/2 pounds butternut squash, peeled & cut into 1/2-inch cubes (1 medium squash)
6 tablespoons olive oil
Kosher salt and freshly ground black pepper
8 cups vegetable stock
2 shallots, finely chopped
3 cloves garlic, minced
1 1/2 cups Arborio rice
1/4 cup dry white wine
1/4 cup freshly grated Parmesan, optional

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • In a medium bowl, toss the squash with 2 tablespoons of the olive oil and sprinkle with salt and pepper. Spread in a single layer on the prepared baking sheet and roast until golden and caramelized at the edges, stirring at least once, 40 to 55 minutes. Let cool.
  • Bring the vegetable stock to a boil in a small saucepan. Reduce the heat and maintain at a bare simmer.
  • Heat the remaining 4 tablespoons oil in a large, high-sided, heavy-bottomed skillet over medium heat. Add the shallots and cook until soft, 3 to 4 minutes. Add the garlic; cook just until it releases its fragrance, about 30 seconds, then add the rice and stir to coat. Sprinkle with salt and pepper. Stir in the wine and cook until almost completely evaporated. Reduce the heat to medium-low and add a ladleful of stock; cook, stirring constantly, until almost completely absorbed. Add another ladleful; again, cook, stirring, until almost fully absorbed. Continue in this manner until the rice is creamy and al dente (tender but still firm to the bite), about 40 minutes--you may or may not use all the stock.
  • Remove the risotto from the heat and stir in the Parmesan if using and the squash, reserving some cubes for garnish. Add salt and pepper to taste. Serve immediately, garnished with the reserved squash cubes.

1 tablespoon olive oil
4 tablespoons butter
2 tablespoons unsalted butter
1 tablespoon brown sugar
2 cups butternut squash, peeled and cut into ½ inch cubes
2 teaspoons garlic, finely minced
4 ounces shiitake mushrooms, de-stem, clean, cut in ½ and slice thinly (can substitute baby bella)
6 ounces crimini mushrooms, clean, cut in ½ and slice thinly
4 ounces pancetta, finely chopped
3/4 cup onion, finely chopped (or shallots)
1 ½ cups Arborio rice (my favorite is Vialone Nano)
½ cup chardonnay wine
4 cups of hot chicken stock, low salt
2 cups of hot beef stock
2 tablespoons fresh lemon thyme, finely chopped
¼ cup Parmesan Reggiano, finely grated
salt and pepper
Chopped fresh parsley (if avail)
Sage finely chopped

Steps:

  • Pre-heat an oven to 400 degrees. Heat 2 tablespoon unsalted butter in a 10" oven proof skillet on med-high heat and add the squash. Sauté the squash, shaking the pan, until it starts to brown, approximately 5 minutes. Remove the pan from the stove and place it in the pre-heated oven for 8 to10 minutes, until the squash is tender but not too soft. Take the pan from the oven and immediately add the 2 teaspoons of garlic. Gently stir the garlic into the squash. Set aside. Heat 2 tablespoons of butter in a 12" skillet on medium high heat. When the foam subsides add all the mushrooms, a sprinkle of salt and a little pepper and sauté stirring often until the mushrooms lose their liquid and begin to brown. Cook 1 minute more, remove from the heat and set aside Sauté the pancetta in a heavy 4 quart pan (non-stick is best), on medium heat, in 1 tablespoon of olive oil until brown. Add the onion and sauté a few minutes until the onion is soft. Add the rice, stirring constantly, and cook for 2 minutes, until the grains are somewhat opaque. Pour in the wine and simmer, stirring, until the wine is almost completely absorbed. Then add about 1 cup of hot stock to the rice and cook, stirring often, until the stock is absorbed. DO NOT let the rice stick to the bottom or sides of the pan. Add more stock as soon as the previous addition is absorbed. After 20 minutes most of the stock will be used and the rice will be tender with just a little bite. At this point, gently stir in the sage, the roasted butternut squash and the mushrooms. Add another ½ cup of stock, the parmesan cheese and 2 tablespoons of butter and stir gently to blend. Taste for salt and pepper. The rice should be creamy and tender. Divide the rice among heated shallow bowls and serve.

5 cups peeled medium-diced butternut squash (about 1 1/2 pounds)
1/4 cup extra-virgin olive oil
Kosher salt and finely ground black pepper
4 cups low-sodium vegetable or chicken broth
1 small bunch sage
2 medium shallots, finely diced (about 1 cup)
3 cloves garlic, minced
1 cup steel-cut oats
1/2 cup white wine
1 1/2 ounces Pecorino Romano, finely grated (1 cup lightly packed)
3 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss the squash with 2 tablespoons of the oil, 3/4 teaspoon salt and 1/4 teaspoon pepper. Spread on a baking sheet and roast until tender and golden brown in spots, about 40 minutes, rotating the baking sheet halfway through.
  • Meanwhile, combine the broth and 2 cups water in a saucepan and heat until just barely simmering. Tie together the sage with kitchen twine and add to the stock. Reserve for a later use.
  • Heat the remaining 2 tablespoons oil in a low-sided stockpot set over medium heat. Add the shallots and cook, stirring frequently with a wooden spoon, until translucent and soft, 6 to 8 minutes. Add the garlic and cook until softened, about 3 minutes. Add the oats, 1/2 teaspoon salt and 1/4 teaspoon pepper, and stir until coated. Add the wine and simmer, stirring constantly, until absorbed, about 1 minute. Add 3 cups of the warm broth to the oats, then simmer, stirring constantly, until most of the liquid is absorbed, 8 to 10 minutes. Add 2 more cups of the broth and simmer, stirring constantly, until the oats are tender but still have a slight bite, 10 to 12 minutes. (There will be a fair amount of liquid in the pot at this time, similar to the texture of a thin gravy. It will thicken once the cheese is added.) Remove from the heat and stir in half of the cheese and half of the parsley. Adjust the consistency of the risotto by adding more stock as needed. Divide the hot risotto among four warm serving bowls, and top each with some butternut squash. Sprinkle with the remaining cheese and parsley to serve.

1/2 butternut squash (or whole small one)
1 TBS + 1/2 tsp olive oil, divided
1/2 tsp herbes de Provence
Salt & pepper
1/2 cup finely chopped shallots
2 cloves garlic, minced
1 tsp chopped fresh thyme
2 tsp finely chopped fresh sage
1 cup farro
4 cups low sodium chicken or vegetable broth, simmering
1 tsp white-truffle-infused olive oil, to garnish
Sea salt and freshly ground black pepper, to taste

Steps:

  • 1. Preheat oven to 400F. Scoop seeds and pulp from squash. Rub flesh and skin of squash w/ 1/2 tsp olive oil. Sprinkle flesh w/ herbes de Provence and season w/ salt & pepper. Place cut side down on a baking sheet or dish and cook in oven until tender when pierced w/ knife, about 45 min. Set aside to cool. 2. Simmer the broth on stovetop. In a separate large skillet, heat 1 TBS olive oil over medium heat. Add shallots, garlic, thyme & sage, and cook for ~3 min. until soft & fragrant. Stir in farro, season w/ salt & pepper, and allow to cook for 2 min. 3. Reduce heat to med-low, stir in 1/2 cup simmering broth and allow to cook until almost completely absorbed. Continue stirring in 1/2 cup broth at a time, allowing liquid to absorb before adding more until farro is tender, but still slightly chewy, 30-35 min. 4. Scrape cooled squash into a bowl and mash. Stir in risotto. Taste and make any final adjustments to seasoning w/ salt and pepper. Spoon risotto into shallow bowls and top w/ truffle oil.

How to Make a Delicious Risotto with Roasted Butternut Squash image

A classic Northern Italian dish, served as a hearty first course, so perfect for the cold months!

For the Roasted Butternut Squash:
1 small Butternut squash (about 1.5 lbs.)
3 TBSP. extra virgin olive oil
½ tsp. sea salt
-- -- fresh ground pepper
For the risotto:
2 TBSP. olive oil
6 leaves fresh sage
2 TBSP. butter
1 med. leek, chopped
1 shallot, chopped
1 cup Arborio or Carnaroli rice
½ cup white wine
3 sprigs fresh thyme
4-5 cups vegetable stock (or, low-sodium chicken stock)
⅓ cup Parmesan cheese, grated
1 TBSP. butter
--- ---- salt and pepper, to taste
¼ cup toasted pine nuts

Steps:

  • Preheat the oven to 425º F.
  • Peel the squash, then dice it into ½ -inch cubes. This should yield about 4 cups of diced squash. Add the squash to a baking dish. Season it with the salt and pepper and drizzle it with the olive oil. Spread the cubes evenly and roast the squash for about 25 minutes or until the edges have started to caramelize, stirring occasionally. Remove from the oven and set aside. Because it shrinks during roasting, you should have about 2 cups roasted squash.
  • While the squash is in the oven, prepare the other vegetables. Trim the leek, discarding most of the green part, but saving about two inches. Cut the leek lengthwise, wash it very well, then slice it into ¼-inch pieces. Cut the shallots from top to bottom, chop it into ribbons, and then into small ¼-inch pieces. Set them both aside.
  • In a medium saucepan, bring the vegetable stock to a simmer, cover, and keep warm.
  • While the vegetable stock is simmering, heat the olive oil over medium heat in a heavy-bottomed, wide, and shallow pan or skillet. Add the sage leaves and fry them for a minute or two, until crispy. Remove them with a slotted spoon and place them on a paper-lined dish.
  • To the same skillet or pot, add the butter over medium heat and, once it is melted, add the leeks and the shallots, season with ½ tsp. of salt and freshly ground pepper. Cook for 5-6 minutes. Stir in the rice. Toast the rice stirring well for about 2 minutes, or, until the grains begin to become translucent around the edges.
  • Next, add the wine and the thyme, and cook slowly until the wine is nearly all absorbed; about 2 minutes.
  • Add one ladle of the hot stock to the skillet and cook, stirring occasionally, until the liquid is absorbed. Add another ladle of stock and stir frequently until the liquid is absorbed again. Repeat this process until almost all the stock has been used and the rice is cooked, but still al dente. Remove the thyme leaves and discard. This process should take about 20 minutes.
  • Once the rice is the desired texture, stir in the Parmesan cheese and the last tablespoon of butter. Fold in the roasted butternut squash. Taste the risotto to adjust for seasoning (this will depend on how salty your stock is). If the risotto is too thick, add a bit more hot stock, or, hot water. The consistency of a perfectly cooked risotto should not be thick and heavy, nor should it be "soupy". It should be "saucy", like a pudding, and it should slowly spread on the plate when you serve it in.
  • To serve, spoon the risotto onto warmed plates, top with the toasted pine nuts, and serve immediately with extra Parmesan cheese on the side.
