These crispy squash chips are savory, snackable delights that are also eco-conscious, making use of vegetable waste. Make them after or before you roast your squash flesh, when the oven is already hot. Serve with cool and creamy dips like buttermilk ranch dip.

2 small acorn squash, or more to taste
1 tablespoon olive oil
½ teaspoon Sea Salt, gray
1 pinch ground cumin
1 pinch ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Use a vegetable peeler to peel squash skin as thinly as possible. Chop peels into 1-inch square pieces; you should have about 1 cup squash peels. Reserve squash flesh for another use.
  • Mix olive oil, 1/2 teaspoon sea salt, cumin, and cinnamon together in a bowl. Add squash peels and stir until evenly coated. Spread peels onto 2 baking sheets.
  • Roast in the preheated oven until crispy and golden brown, 13 to 15 minutes; watch closely as thinner chips can burn quickly.
  • Season roasted chips with salt as needed.

1 butternut squash - peeled, seeded, and cut into 1-inch cubes
2 tablespoons olive oil
2 cloves garlic, minced
salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Toss butternut squash with olive oil and garlic in a large bowl. Season with salt and black pepper. Arrange coated squash on a baking sheet.
  • Roast in the preheated oven until squash is tender and lightly browned, 25 to 30 minutes.

Roast pumpkin with plenty of garlic then blitz into a Moroccan-style dip with spicy harissa and sesame paste

½ butternut squash (about 400g), peeled and cut into 2cm pieces
3 garlic cloves , unpeeled
2 tbsp olive oil
3 tbsp tahini paste
1 tbsp harissa , plus a little extra for drizzling
400g can chickpeas , drained and rinsed

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the butternut squash and garlic cloves in a roasting tin, season well and add 100ml water. Cover the tin with foil and bake for 45 mins, until the squash is really tender. Leave to cool.
  • Tip the squash into a food processor with any juices from the tin. Add the garlic cloves, squeezed out of their skins. Add the remaining ingredients, season with salt and blend to a paste.
  • Scrape the hummus into a bowl. Drizzle with extra harissa before serving.

Roasted Chile Guacamole with Baked Tortilla Chips image

Cooking spray
3 sun-dried tomato basil tortilla wraps
3 garden spinach herb tortilla wraps
Olive oil
Salt and pepper
1/2 cup frozen chopped onion, thawed
2 cups frozen no-salt added petite peas, thawed
1/3 cup water
2 tablespoons lemon juice
1 (1-ounce) packet guacamole seasoning mix
1 teaspoon chopped garlic
1/2 cup diced tomatoes with no-salt added
1 cup chopped avocado
1 (7-ounce) can fire roasted diced green chiles

Steps:

  • Preheat oven to 350 degrees F. Spray a baking sheet with cooking spray; set aside.
  • On a cutting board, stack 3 tortillas and using a sharp knife, cut into 8 wedges (like a pie). Repeat with remaining tortillas. Separate any that may stick together. Place on baking sheet, evenly spaced. Drizzle with olive oil and season with salt and pepper. Bake for 8 to 10 minutes or until golden. Remove and let cool.
  • In a medium saucepan combine onions, peas, water, lemon juice, guacamole seasoning, and garlic. Cook for 10 minutes until ingredients are soft.
  • Remove from heat and let cool.
  • Pour cooled pea mixture into a large bowl. Add avocado and mash with a fork or potato masher. Strain tomatoes and add to bowl with green chiles. Mix until blended.
  • Serve with baked chips.
