2 pounds brussel sprouts (trimmed and halved)
1/4 cup melted butter
2 tablespoons olive oil
4 cloves whole garlic
1/2 teaspoon black pepper
1/4 teaspoon salt
1/4 cup freshly grated Parmesan cheese

Steps:

  • Preheat oven to 475 degrees.
  • Trim and halve brussel sprouts and transfer to a large mixing bowl. Roughly cut the garlic cloves into 4 to 5 pieces each and add to mixing bowl.
  • Drizzle with melted butter and olive oil. Season with salt and pepper and toss to combine.
  • Spread the brussel sprouts out in a single layer on a 4-sided baking sheet.
  • Roast in the preheated oven until sprouts are tender, about 20-25 minutes until brussel sprouts are tender.
  • During the last 5 minutes of roasting, sprinkle on Parmesan cheese. Serve hot.

1 1/2 pounds Brussels sprouts (trimmed and halved)
4 cloves garlic (very roughly chopped (leave the pieces a bit chunky; add more if you live in a house of garlic lovers))
1 ½ tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 tablespoons freshly ground or grated parmesan
Any of the optional additions from the blog post above: lemon, balsamic vinegar, herbs, red pepper flakes, etc.

Steps:

  • Place a rack in the upper third of your oven and preheat the oven to 400 degrees Place the Brussels sprouts and garlic in the center of a large rimmed baking sheet. Drizzle with the olive oil and sprinkle with salt, pepper, and any other desired spice additions. Gently mix until the Brussels sprouts are evenly coated, then spread them into a single layer on the baking sheet. For even better crisping, flip the Brussels sprouts so that they are all cut sides down.
  • Bake for 10 minutes, then remove from the oven and stir in the parmesan cheese. Continue baking 10 to 20 additional minutes, until the Brussels sprouts are lightly charred and crisp on the outside and tender in the center. The outer leaves will be very dark too. Watch carefully towards the end of the baking time, as the cooking time will vary based on the size of your sprouts. Remove from the oven. Season with additional salt and/or pepper to taste. Enjoy immediately or at room temperature.

  • Heat 2 tablespoons olive oil in a small skillet over medium heat; add 2 chopped garlic cloves and 1/2 teaspoon each cumin seeds and kosher salt and cook 2 minutes. Stir in 1 tablespoon brown sugar, the juice of 1/2 lemon and a pinch of red pepper flakes. Toss with 1 1/4 pounds halved Brussels sprouts on a baking sheet. 1 small red onion
1 pkg fresh brussel sprouts
1 bunch baby carrots with stems (for presentation) or w/o
1 c cherub or cherry tomatoes cut in 1/2
1/2 bunch asparagus, fresh - stalks cut in 1/2
1 c butternut squash

Steps:

  • 1. This recipe you can use any of your favorite fresh veggies. I have listed a few of our favorites. Wash all Veggies and pat dry w. paper towels. Cut Brussel sprouts in 1/2 length wise~ Slice up red onion~2 Garlic cloves smashed & sliced, Slice carrots length wise in 1/2 or 1/4's depending on size. (I like the baby carrots w/stems) Cut or slice asparagus~Cut butternut squash in chunks
  • 2. Toss & coat all veggies in a bowl add olive oil (4 TBSP may be needed depending on how many veggies adjust accordingly) Spread veggies on baking sheet or casserole dish; sprinkle w/ salt, pepper (garlic powder if you are a garlic lover as I am)
  • 3. Preheat oven 375-400 degrees ~ Add pan to middle rack roast 20-25 minutes flip & turn Veggies and roast another 20-25 minutes until desired tenderness :) Enjoy

6 tablespoons olive oil
1 pound Brussels sprouts, trimmed and halved lengthwise
6 cloves garlic, minced
salt and ground black pepper to taste
1 tablespoon balsamic vinegar

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat oil in a cast iron skillet until shimmering. Place Brussels sprouts carefully in the hot oil, cut-side down. Sprinkle in garlic, salt, and pepper. Cook until Brussels sprouts begin to brown, 3 to 5 minutes.
  • Transfer skillet to the preheated oven and cook until Brussels sprouts are very browned and tender, 10 to 20 minutes. Shake skillet every 5 minutes to ensure even cooking.

4 to 6 tablespoons extra virgin olive oil, to coat bottom of pan
5 cloves garlic, peeled
Salt and pepper to taste
1 tablespoon balsamic vinegar

Steps:

  • Heat oven to 400 degrees. Trim bottom of brussels sprouts, and slice each in half top to bottom. Heat oil in cast-iron pan over medium-high heat until it shimmers; put sprouts cut side down in one layer in pan. Put in garlic, and sprinkle with salt and pepper.
  • Cook, undisturbed, until sprouts begin to brown on bottom, and transfer to oven. Roast, shaking pan every 5 minutes, until sprouts are quite brown and tender, about 10 to 20 minutes.

Olive oil, for drizzling
2 cloves garlic, sliced
1/2 red onion, sliced
Juice of 1/2 lemon
Splash dry vermouth
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Chopped fresh flat-leaf parsley, for garnish

Steps:

  • Preheat an oven to 350 degrees F, or a grill to high (if you are outside, prepare a campfire).
  • Cut a large sheet of foil and drizzle with some oil. Arrange the Brussels sprouts in a flat, single layer over half the sheet of foil. Drizzle the Brussels sprouts with more oil and top with the garlic, onion, lemon juice and a splash of vermouth. Sprinkle with salt and pepper. Fold the foil in half over the Brussels sprouts and fold the edges to seal and form a pouch. If the sprouts are crowded, make two pouches.
  • Cook the pouch in the oven or on a grill or campfire until cooked through but not mushy, about 20 minutes. To serve, cut open the foil pouch tableside and finish with a sprinkle of parsley.

600g Brussels sprouts, halved
50g butter, melted
2 garlic cloves, crushed
50g panko breadcrumbs
25g parmesan or vegetarian alternative, finely grated

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Tip the sprouts into a bowl, drizzle over the melted butter, add the garlic and season. Toss the sprouts until they're well coated in the butter, then add the breadcrumbs and parmesan, and toss again.
  • Tip the sprouts onto a baking tray, making sure they're well-spaced apart in a single layer. (If they're packed too closely they will steam instead of roasting.) Place as many as possible cut-side down for maximum crispiness. Press any excess crumbs onto the sprouts to help them stick.
