4 medium beets (peeled)
1 Tbsp. olive oil
4 scallions (sliced thin)
¼ cup Fig Balsamic Vinaigrette (or your own favorite balsamic vinaigrette)
½ cup feta cheese (crumbled)

Steps:

  • Peel 4 medium beets and cut into ½ inch pieces.
  • Toss with 1 tablespoon olive oil and spread on a baking sheet.
  • Roast at 450° F, until tender, or approximately 35 minutes.
  • Transfer beets to a bowl and toss with Balsamic Vinaigrette and chopped scallions. Top with crumbled feta.

1/2 cup raspberry vinegar
3 tablespoons honey
1 medium shallot, minced
kosher salt
coarsely cracked black pepper
1/4 cup grapeseed oil
8 small beets, washed and trimmed (about 2 1/2 pounds)
1 tablespoon unsalted butter, cut into small bits
4 ounces feta cheese, thinly sliced (see Note)
handful of spicy baby greens, such as mizuna, for garnish

Steps:

  • Preheat the oven to 350°. In a medium bowl, whisk together 1/4 cup of the raspberry vinegar, 1 1/2 tablespoons of the honey, the shallot, 1/2 teaspoon of salt and 1/2 teaspoon of pepper.
  • Whisk in the grapeseed oil until emulsified.
  • Arrange the beets so they fit snugly in a single layer in a deep baking dish. Add enough water to barely cover the beets, then add the remaining 1/4 cup of vinegar and 1 1/2 tablespoons of honey and the butter.
  • Season with salt and pepper. Cover with foil and bake for 50 to 60 minutes, or until the beets are tender when pierced with a knife.
  • Let cool slightly.
  • Drain and peel the beets and slice them 1/4 inch thick. Add them to the honey dressing and let cool for up to 4 hours.
  • To serve, arrange half of the beet slices on 8 small plates and cover with the feta. Top with the remaining beet slices and drizzle each serving with about 1 tablespoon of the dressing.
  • Garnish with the greens and serve.

3 large beets
4 garlic cloves
1 lemon, juice and zest of
1 tablespoon olive oil
salt and pepper
1 tablespoon fresh thyme
1/4 cup feta cheese

Steps:

  • Preheat oven to 400 degrees.
  • Peel beets, cut in half, and slice into 1/4" thick slices.
  • Place in large baking dish with garlic, lemon zest, lemon juice, olive oil, and season with salt and pepper.
  • Tightly cover dish with foil, place into oven, and bake for 35-40 minutes, until beets are fork tender.
  • Remove from oven, place on serving platter, and top with fresh thyme and feta. Serve and enjoy!

This is an amazing recipe for fresh beets, if you don't have any fresh beets you can substitute two 15-ounce cans drained small whole beets, halved or if they are large then quarter them, but I have to say that fresh beets are better! --- for the fresh beets you can boil them or I prefer to roast them in the oven in foil in a 400°F oven for about 30 minutes or until just fork-tender --- this is just as delicious cold as it is served hot! --- prep time does not include roasting the beets and cooking the onions.

2 tablespoons cider vinegar
2 teaspoons coarse Dijon mustard
1 teaspoon salt (or to taste)
black pepper (lots of black pepper!)
3 tablespoons olive oil
1 lb yellow sweet onion (quartered lengthwise then cut into about 1-inch pieces)
1 teaspoon sugar
15 whole fresh small beets, peeled (roasted or boiled, or use as many beets as you wish)
4 ounces crumbled feta cheese (or to taste)
toasted walnuts (optional)

Steps:

  • Quarter the beets if they are large, if they are small then just cut in half.
  • In a large bowl whisk together cider vinegar, Dijon mustard, black pepper and salt.
  • In a slow steady stream whisk in 3 tablespoons olive oil whisking continuously until well combined.
  • In a large skillet cook the sweet onions in about 3-4 tablespoons olive oil with 1-2 teaspoons sugar until golden brown (about 15-18 minutes) season with salt and pepper to taste.
  • Add the cooked beets, browned onions and feta cheese; to the dressing in the bowl; stir gently to combine.
  • Sprinkle with toasted walnuts if desired.
  • Delicious!
