ROASTED BANANAS
The sweet smell of Oven Roasted Bananas is simply intoxicating. If you have recipes for overripe bananas, you have to try this!

Steps:
- Preheat your oven to 300°F
- Rinse and dry your bananas.
- Line a baking sheet with parchment paper or aluminum foil.
- Place the unpeeled bananas on the lined baking sheet.
- With the tines of a fork, poke a few holes in the banana skin.
- Bake the bananas for 15-30 minutes*. When the peel becomes shiny and black, remove them from the oven.
- When cool enough to handle, split open the skin in order to scoop out the roasted banana.
- The roasted bananas can be used immediately or frozen.

BANANAS IN CARAMEL SAUCE
A delicious, fast dessert. Impressive served when the sauce is still bubbling! Serve with coconut ice cream, if desired.

Steps:
- Melt butter in a large, heavy skillet over medium heat. Stir in sugar and cook, stirring, until sugar is melted and light brown. Slowly stir in the cream (mixture will bubble up).
- Let mixture boil 1 minute, then reduce heat to low. Place the bananas in the pan and cook until heated through, about 2 minutes. Serve hot.

MACADAMIA NUT SAUCE
This decadent sauce is served over banana pancakes at Hawaii's famous Kimo and Boots Restaurant. I will try it over ice cream!

Steps:
- Grind macadamia nuts in a food processor until fine. Place nuts into a medium saucepan and fry over medium high heat for 5 min or until fragrant. Remove from pan, and set aside.
- . Lower heat to medium and add the butter, stirring until melted. Stir in flour and cook 1 minute Slowly pour in milk and cream, constantly whisking the whole time.
- Add sugar, salt, vanilla to the pan. Cook 5 min or until thickened, stirring constantly. Stir in lemon juice.
- Pour sauce into a serving dish. Serve warm and sprinkle the Macadamia nuts on top of each serving, if desired.
ROASTED BANANAS WITH MACADAMIA NUTS AND CARAMEL SAUCE
Steps:
- Position the oven racks so that they are evenly spaced with one rack in the center. Preheat the oven to convection roast at 475°F.
- For the caramel sauce, bring the sugar and cream to a boil in a heavy saucepan. Boil for 5 minutes, stirring constantly, until the sauce thickens slightly. Remove from the heat and stir in the rum.
- Arrange the bananas in a buttered, shallow baking dish. Pour the caramel sauce over them and turn to coat. Roast in the center of the oven for 6 to 10 minutes, until heated through. Sprinkle with the nuts. Spoon the caramel sauce over each serving.
WARM CARAMEL BANANAS
We'll take a banana split, but hold the ice cream. That's right, the bananas get to shine in this warm caramel delight.

- Melt butter in large skillet on medium heat. Add sugar; cook until melted, stirring occasionally. Gradually mix in sour cream; cook on low heat 1 min.
- Cut bananas lengthwise, then crosswise in half. Add, cut sides down, to skillet; cook 1 min., basting occasionally with sauce from bottom of skillet. Stir in nuts.
- Spoon bananas evenly into 4 dessert dishes; top with remaining sauce in skillet. Drizzle with chocolate; top with COOL WHIP.
